Friday, May 22, 2015 - Late 2011 disgorgement. Yellow, mild mousse. Wonderful ginger and citrus aromatics. Medium weight but deeply flavored with tremendous acidity and fine stoniness. This held up and evolved beautifully over 3 hours and more than stood up to a wide array of dishes.
