Sunday, July 5, 2015 - Disgorged October, 2010. Full yellow. Lively beads to start. Wonderful nose and palate of freshly sliced green apple and ginger with yeasty undertone. At a really terrific equipoise between vibrant fruit and early oxidative notes. I like the Initiale at this particular age.

    7/6/2015 6:36:00 PM - Thanks for your comment and rating. We thought your use of equipoise was perfect! We tend to agree the Initiale at the moment is sipping very nicely, but may just get a bit more yeast and toast over the next year or two...which we really like ;-) What do you think?

    7/6/2015 7:52:00 PM - Buzz-Of course, you're correct. The wine will almost certainly develop more nutty tones over the next few years. Whether that is a good or bad thing is purely a matter of personal taste. I have noticed that people vary markedly in their affinity for "old" Champagne aromas and flavors. It sounds as though you have British leanings in this regard, so by all means, hold onto your bottles! Not being a huge fan of oxidative flavors myself, I default to drinking the Initiale at this stage, when it shows a bit of complexity due to age along with beautifully preserved fruit. This generalization does not account for the vagaries of different disgorgement dates reflecting different component vintages which may bend the aging curves.

    7/6/2015 10:02:00 PM - Thanks. Ah, well, we have a lot of different components in our nationalities having lived in Europe, USA and Asia...living life confused has advantages ;-). We think it depends on the champagne. Selosse, of course, is a rock-star even at the basic Initiale level. We tend to enjoy sipping older champagnes when a great producer, i.e. Salon, Selosse and a few other notables. Even 1999 Dom is sipping nicely now. We equally enjoy have a "barely legal" champagne now and again, i.e. this Sunday brunch with free-flowing 2005 Dom, should be interesting. Last night, we tried a fairly good, particularly shocking given the price NV Jose Michel & Fils Champagne Extra Brut. Neve-ever a dull moment!!!
