Tuesday, April 14, 2009 - Boy this is a lovely champagne. We opened it as an afterthought so it was a little warmer than ideal and our cooler jacket is not big enough to get round the enormous girth of the bottle.
The nose was clean and everything you'd expect of a non-vintage champagne. But it was the taste that beguiled. The two of us sharing it immediately loved its soft mousse, its refreshing but not too acidic taste of apples and pastry coming through with a nice long finish. This has rested in my cellar since 2005. It was always good but it's grown up now and is at its zenith.
