Saturday, March 28, 2015 - Another proof of why one should age wine.
kept this bottle in the cellar about 5 – 6 years, and this has really turned in to something else.
A rather “simple and straight” NV Champagne can really be fabulous and ooh so complex with ageing.
Such was the case with this bottle.
Deep yellow color, clear signs of age.
Tiny bubbles, nose with pears and minerals, developed complexity and signs of age showing, with winter apples and nuts along with hints of coffee and fudge.
Palate is buttery and creamy, sweet, yet balanced, long and fine, with yellow fruit, sweet apples, pears and tutti frutti.
Some wet & warm stones showing.
Low acidity, mature, with soft creamy buttery very good Chardonnay fruit.
A very fine Champagne, and age has really lifted this to another level.
Will keep cellaring good NV Champagnes from good producers, as I am always very satisfied with the result in the end.

    3/31/2015 8:16:00 AM - Totally agree - I always keep my NV Champagne (or anything made traditional method with Chard and/or Pinot Noir) for at least 2 years subsequent to release. Smooths them out and makes them far more interesting.
