Saturday, March 31, 2012 - The Dominus started slowly. She didn't want to give up her charms behind her 'ruby' slippers. It took hours (I popped it at 5:45; we finished after 11PM.) She was slowly revealing her silky, sweet black fruits, vanilla, dill, cassis, pepperonchini pepper, and anise. That was just her bouquet. The palate was revealed just as slowly, starting with red fruits on a rather thin mouthfeel and gripping tannins. As the evening marched on, the mouthfeel became more viscous and started to coat the mouth. She started revealing green pepper, and layers and layers of deep, black fruit, vanilla, hints of smoke. This is just a baby. I have one more left that I won't touch for at least 5 years. Wish I had a few more.
