Saturday, February 9, 2013 - This was my first "very aged" CS. Stood 750ml bottle for a couple hours, then brought to restaurant to celebrate "Finding/Surviving Nemo!" Close to top shoulder fill. Cork rather wet - remained intact. Poured into decanter and served. This bottle threw quite a bit of sediment. No comment on exact color (dimly lit room), but indeed it was 'lighter' than I expected, and also rather murky. Rather wide minuscus, this is definitely thinning/bricking out. Nice nose of cedar, cigar and cassis. This took almost 20 minutes to get going on the palate, but slowly developed into a very good place for the next 60-75 mins. The fruit showed nicely, still a little bit of classic left bank structure there - but very little acidity. After which time, it started to fade, but I attribute a fair amount of that to decanting - I think I will simply PnP the next one. Medium-plus finish. Saved a glass for tomorrow night (but apparently couldn't wait until then to post!). I think Leve's note from a couple months ago is pretty spot on. I see no reason to wait to open these....
