2007 Honig Cabernet Sauvignon

Community Tasting Note

89 Points

Tuesday, May 3, 2011 - from a 375ml after about an hour open. Dark ruby, about 90% saturated and medium-slow legs. A bit of oaky bramble, tobacco, cassis, and a polyurethane edge to the alcohol aroma. Typical NW intensity to the bouquet. Palate leads with some raspberry and quickly develops cocoa and blackberry flavors with quite the grip on tannins. Ripe but also full of acidity to salivate over. There is a dose of heat and the balance isn't perfect, but the finish is very round and has good endurance. I would guess that bigger bottles will really need some more sleep as this half bottle still seems a little brawny and adolescent. 5+10+16+8 = 89
