Saturday, January 22, 2011 - PAWS Chef's Table Dinner (Rittenhouse): Nebbiolo never ceases to amaze me -- this wine is a baby, and yet already showing some slight browning and secondary notes. And yet, I have no doubt that it would be drinking wonderfully in a decade. dark fruit, smoke, tobacco, and a little floral note that, while not quite barolo, makes one reminisce about a barolo. medium tannins and a medium (-) finish that shows more of the secondary notes. paired with fennel and rocket salad with testun al barolo.
