Wednesday, October 6, 2010 - Initial taste impression dominated by strong acidity and minerality - not typical for Pinot Gris in my experience. The salmon color was wonderful - not quite a rose, but definitely carrying a peachy tint. After 20 minutes or so the varietal profile came through on the palate, much fruitier, but not losing the acidic structure to keep it very food friendly. This is NOT a typical Pinot Gris, and it's a very interesting wine - memorable and fun to drink and share.
