Friday, December 28, 2012 - First one of a 12 year personal project. I'm going to taste 12 bottles throughout 12 years, always around christmas and notice the difference to try to understand better how wine develops. Im going to taste all bottles under the same conditions, no decanting.
Sight: Dark garnett core with a dark magenta rim
Nose: Ripe blackberry, cassis, plum as well. Some discreet green notes: green pepper, eucalyptus. Light notes of dark chocolate as well as graphite. The alcohol seems a bit high on the nose with that nail polisher aroma coming through.
Palate: High acidity, medium + tannins. Flavors of blackberry, cassis, dark chocolate,green and black pepper. The mid palate is very acidic but it finishes long and spicy, The alcohol is very well integrated and does not spike at all. The wine is tasting great right now. I'm curious to see how the acidity will develop, surprised that the tannins are at a considerable lower level than than the acidity at this point.
