Sunday, February 17, 2013 - Followed over three nights, with no degradation and the best showing was on the third night. This showed a marked decline in size and body since my first bottle in the winter of 2010. This has lost its baby fat and is more compact, and also seems to lack the complexities of earlier, so perhaps it has shut down since release. Showing typical quince notes but not the array of complexities and nuances as earlier. The sugar and acidity are well balanced. By the third night, the acidity just explodes and provides a great balance against the rounder, softer pear fruit that has developed on the palate. I am inclined to let this age longer in the cellar.
