Tuesday, September 10, 2013 - I must start with the beautiful gold nectar robe on this treasure. In the mouth the Bornard is round and full bodied, yet refreshingly brisk like a sea breeze, full of a salty essence I haven't found in other white wines, not even in the '05 edition of this wine. The '07 Bornard savagnin is reminiscent of a fino Sherry with a fleeting glimpse of ripe melon and tertiary flavors that remind me of hikes in the mountains of Big Sur. Herbal, ripe, salty, a dead ringer for salt water taffy without being at all candied. Adult wine. Would be amazing with an oyster or three, or perhaps a bit of Comte. This is big, rich, and acidic so look to enjoy this as late as summer, 2017.
