Tuesday, June 23, 2015 - First Pavie experience and I was underwhelmed. I understand it's early to drink this bottle, however I don't see the elements that will make this any better in the future. I'll chalk it up to being in a closed or awkward phase. With that said, the wine changed quite a bit over the three hours it was consumed (double decanted 7 hours prior to the tasting) and these are my impressions:

First small pour had a nose of ripe red fruit. On the palate, acid is overwhelming and the fruit shows a mix of red and dark fruit. Not very enjoyable on its own - better with cheese and charcuterie.

3 hrs later: Acid is out of whack with the fruit and the tannin. Overall the structural elements are there but it's currently lacking in balance. The fruit itself is not very enjoyable either - it is sour and disjointed. There does seem to be some concentration and deeper layers but they're not showing clearly and seemed to tighten up over the course of the evening. There's a lingering finish but it's not very pleasant. Likely needs more time before being enjoyable.
