Sunday, July 19, 2015 - Dim Sum Club at Ding Dong (Ding Dong, Ann Siang Hill, Singapore): Very nice. Rich and moreish, the nose wafted out of the glass with layers of treacle and molasses, dried figs and sweet Christmas spice. Really attractive. On the off-dry palate, a nicely rounded mouthful of red berries and dried cherries was seasoned with more of those complex spice and savoury brown sugar notes picked up on the nose. Fresh acidity kept the wine nicely balanced all the way into a richly layered finish of raisins, dried figs and Christmas cake infused with woody spice. With time, a nice hazelnut to tone started coming out as well. Very nice. This went well with both slightly spicy dishes as well as dessert.
