Monday, May 11, 2015 - Very complexed note when 1st popped. Worchester, soy, potting soil, fresh sage brush, pepper, figs, cured meats just on and one. The palate was high toned and complexed too with a great acid framework with rustic notes throughout. Was a wonderful pairing with steak. On day two it was much more primal with meat, earth and a good does of fennel/anise. Really still drinking young.
