Quite lovely nose with lemon notes, herbs, minerals, and orange zest. Good acidity with lemon juice and zest, and crushed rocks on the palate. Nice finish that lingers for a while. A lovely wine with nice complexity, but wasn't the big step up next to the 1er Crus that I was expecting.

2023 Athens Wine Event; 12/8/2023-12/9/2023 (Athens, Greece): Tasted Blind. This is now impressively young and almost buttoned down and shy. Needs a lot of decanting at this stage and it took it a bit of time to get going and even 2 hours later this was still not there. We are not sure if it’s down to our bottle or generic for the wine ( we had the 2018 vintage of this 5 months ago and was magical for example, Papies 96) . The nose was shy and co use have been a lot of different Chardonnays. Nicol said this could even be assertive in the focus and energy. A wine of quality for sure but just shy. 91-92 and please decant.

Smells like honeysuckle and lemon. The taste is definitely lemon - very acidic. Despite the acid bite, it is pleasing on the palate. Really good citrusy Chablis.

The one with Raveneau (Sonder): On the opening, pronounced lemon oil, salt water, limestone, almonds. Iodine, oyster shell, hay(straw), sudachi and unripe meyer lemon ensued on the palate with good minerality and depth but showing slightly green. Crispy acidity with grand cru length but not mind-blowing start to the evening.

Montreal 2022; 9/23/2022-9/25/2022 (Montreal): This pours medium straw in the glass with flecks of green and ivory. The nose is extremely aromatic and complex and very clasically Chablis. Aromas blast cold cream, mineral, oyster shell, lemon, mint, shrubby herbs, intense white flowers, dry hay, and light whisps of honey. The palate is equally as amazing as the nose entering on the rich custardy lactic notes but quickly turning lightly waxy fruit then intense minerality, closing on puckering oyster shell. The balance here is immaculate and the texture silky and perfect. Still early in it's development considering it's 10+ years on but it's absolutely wide open and thoroughly enjoyable. Absolutely reference point stuff and an amazing Raveneau experience, finally.

This is a little more expressive than a few years ago with an impactful, vibrant, classically-Raveneau Meyer lemon and oyster nose with a creamy palate cut by perfect acid.
4 bottles of this were opened 24 hours, 8 hours, 3 hours, and just before tasting. Each bottle was poured half into decanter and the other half left in the bottle. Among the bottom 5 wines were both decanted and undecanted pop-and-pour and 24 hour samples, suggeseting a sweet-spot for a few hours of air for top youngish Chablis.
In descending order, the group preference was for 3 hour bottle, 8 hour bottle, 8 hour decanter, pop-and-pour decanter, 24 hour bottle, 3 hour decanter, pop and pour bottle, 24 hour decanter.

Expressive nose displaying rich concentrated yellow fruit with a hint of white, granny smith, lemon curd, honey, saline, light caramel, anise, beeswax, sweet spices and limestone. There is a hint of the 11 green which is not too bothersome. Excellent concentration, layers upon layers of succulent sweet yellow fruit, rich, dense and deeply toned but also good balance and precision, bright acidity, medium mineral, and a long succulent sweet yellow fruit driven finish with honey at the end. There is a hint of pyrazine note. This is drinking nicely.

Annual gathering with Chicago winos in Chicago (Smyth and The Loyalist - Chicago IL): Classic Chablis nose with a hint of delicious Raveneauness, delicate cool white fruit, lemon, granny smith, honeysuckle, sea breeze, a hint of pyrazine which is not bothersome, cool mountain stream and wet stone. Excellent concentration, very finely layers generous cool white fruit, excellent focus and precision, perfect amount of acidity and mineral, and a seamless long cool white fruit driven finish with smoke and honeysuckle at the end. This is drinking beautifully.

DC/Chicago Wine Dinner Extravaganza (Smyth and The Loyalist - Chicago IL): In 13/11/09/06 vertical. Lean style with classic Chablis brightness and minerally textures. Green apple everywhere with even concentration to stand side-by-side with the wine's big structure. OK, on the lean side with some faint bitterness, but that works well here. My favorite of the vertical.

So different from the Burgundy of the Côte d’Or. Much leaner, lots of seashell minerals. The Valmur from Raveneau is exceptionally rich for the type, though, almost thick on the palate. Quite impressive and not really austere. A bit of salty grapefruit let’s you know this is definitely not Meursault. Save it for your oysters or shellfish.

Survey of 2011 Dauvissat and Raveneau Premier and Grand Crus (San Francisco): Stone and stone fruit aromatics. Round, dry, and powerful in the mouth with outstanding salinity and a back end that is full of soil. Like the Dauvissat Preuses, this also steadily improved. Very enjoyable now but bound to continue its ascendance for at least another 5 or 6 years.

Five winos excellent adventure , mostly in Burgundy; 6/7/2019-6/15/2019 (Beaune, France): Expressive nose displaying cool citrus fruit, lemon curd, a hint of the 11 green, mint, honeysuckle, sap, cool mountain stream, sea breeze and limestone. Typical of the producer, vineyard, and vintage, with lemon curd, oyster shell, and a honeyed floral quality. Citrus and peppery flavors with a firm mineral underpinning, balanced acidity, crisp texture. The 2011 Valmur is coming together but best starting 2021.

Classic Chablis nose, with lemon peel, lime blossom, and sea breeze. Restrained, cool minerality permeates a medium body. The 2011 Valumur is an elegant if understated wine that succeeded in a trying vintage. Certainly lovely now but this should unwind with time. Drink starting 2020.

Hillside - Dirty Habit - Nopa (SF): Green lemon citron with Parmesan rind on the nose. Slight oak influence. Classic dense fruit, high-toned, taut palate. High acid. Perfect symmetry. Not a hair out of place. You have to listen closely to get any complexity out of this, but it seems to be there.

Very lovely chablis, nose of fresh lemon and stone fruit, palate with good precision and loads of minerals, perhaps at least a minute long in the mouth. After 2 hours in glass, more oyster shells and hints of anchovies emerged, gained a lot in complexity, perhaps the acidity not as good as 08 or 10 but overall still a great young chablis.

HDH Auction (Tru - Chicago, IL): I like where this wine is right now. Big and powerful, it has the weight of Valmur and the wonderful salty/lemony/floral notes of great Chablis. If it doesn't prematurely oxidize, this will be a masterpiece once some of the secondary notes develop.

HDH auction tasting at Tru (Chicago, IL): Almost colourless. There's a forward white fruit note on the nose, but this doesn't seem to have the same citrus qualities I associate with Raveneau. The palate does have a lovely salinity, with clarity and precision, but this shows a quiet calm contemplative quality rather than any mineral or acid explosion. But hell, there's no debate that this is a great bottle of Chablis.

Rockstars of Burgundy: Swirling, beautiful aromatics - perfumed florals, grapefruit, graphite, orange and spice. Very clean on the palate, has great purity and a mineral core - full but the acidity is excellent. More depth than the 1er wines from the previous flight.

(Mostly) Grand Cru Chablis Dinner (GT Fish & Oyster - Chicago IL): Absolutely sensational in every way. open ~30 minutes before serving, then kept in glass for close to two hours. Lemon, lemon peel, lime and grapefruit came through at various points in its unfolding. Perhaps slightly reductive start, but this got bigger, bolder and increasingly exciting with more time in glass. Thank you, Brock!

Very lovely chablis, nose of fresh lemon and stone fruit, palate with good precision and loads of minerals, perhaps at least a minute long in the mouth. After 2 hours in glass, more oyster shells and hints of anchovies emerged, gained a lot in complexity, perhaps the acidity not as good as 08 or 10 but overall still a great young chablis.

HDH Auction (Tru - Chicago, IL): I like where this wine is right now. Big and powerful, it has the weight of Valmur and the wonderful salty/lemony/floral notes of great Chablis. If it doesn't prematurely oxidize, this will be a masterpiece once some of the secondary notes develop.

HDH auction tasting at Tru (Chicago, IL): Almost colourless. There's a forward white fruit note on the nose, but this doesn't seem to have the same citrus qualities I associate with Raveneau. The palate does have a lovely salinity, with clarity and precision, but this shows a quiet calm contemplative quality rather than any mineral or acid explosion. But hell, there's no debate that this is a great bottle of Chablis.

Rockstars of Burgundy: Swirling, beautiful aromatics - perfumed florals, grapefruit, graphite, orange and spice. Very clean on the palate, has great purity and a mineral core - full but the acidity is excellent. More depth than the 1er wines from the previous flight.

(Mostly) Grand Cru Chablis Dinner (GT Fish & Oyster - Chicago IL): Absolutely sensational in every way. open ~30 minutes before serving, then kept in glass for close to two hours. Lemon, lemon peel, lime and grapefruit came through at various points in its unfolding. Perhaps slightly reductive start, but this got bigger, bolder and increasingly exciting with more time in glass. Thank you, Brock!
