Rare Wine Dinners: Bordeaux 1921-1975 (Bentley Restaurant, private dining room): From a terrific vintage and stored in a cold Yorkshire cellar. Lovely amber colour. Floral nose floral nose, spring flowers, glazed mandarin peel, ripe peach. Such a balanced palate. So satisfying and complete. Sweetness is offset beautifully by the residual acidity. After some time, it reveals dried or candied fleshy stone fruits. So long in the palate. Wonderful.

Riesling Dinner - 50s through to the 80s: A nose with impressive complexity, the initial aromas are in the smoke and tobacco spectrum, with time citrus comes to the fore through lime and tangerine notes as well as a soaring slate and mineral element. Beautifully balanced on the palate, with stunningly focussed purity and stellar acidity giving the wine a wondrous ethereal quality. Textured and with many layers of depth, this is a wine that challenges you to give it your full attention lest you miss some of its many subtle aspects. Seriously exceptional wine that showed no signs of tiring.
