A very interesting wine - the oldest non-SS Caymus we have had, the 1st of 11 just acquired bottles as part of a much larger cellar contents purchase. Definitely recommend with the caveat that it is time to drink these up - definitely DRINK not hold - and with the barnyard funk it has developed it benefits from a short 30-60 minute decant. Readonable 2nd day with refrigeration overnight but better 1st day. Tonged cork absolutely pristine which speaks to the high provenance of these wines. Definitely "over the hill" in terms of what it once was and what the wine making team originally intended it to be but it's evolved into a very different interesting much more Bdx like older cab. Reddish purple, peripheral bricking, soft and with a lovely lightly sedimented mouth feel and oak and tannins completely integrated. Some fruit still present but smoky secondary flavors dominate. Nose with more barnyard funk then I have probably ever encountered in a CA cab but this blew off quickly (this is where the short decant id helpful) and initially muted but once it opened notes of cedar rather then oak, a whiff of sandalwood and coffee dominated with a surprising more floral rose petal finish. Flavor profile very dry with cedar, coffee, blueberry with a more bloody and grilled meat finish.

Side by side with the 04. Clearly old. Nice tertiary flavors like sandalwood, forest floor, hints of blood orange and dried rose. After a couple hours it perked up and softened. Time to drink up. Enjoy.

The nose of cedar and iron is so enticing but the tannins in this bottle are still very sturdy and only smoothed out after 24 hours open. Very complex, with red fruit intermingled with iron and tobacco the wine got better as it breathed. I can't decide if it will get better but it certainly is interesting. This is not a wine for simple fruit lovers. You have to dig under the cedar, minerals and acidity to get to what is both tart raspberry and strawberry delicate fruit . But beware that fruit will not emerge on its own, you will have to work for it.

Super fun from the depths of the cellar - crumbled cork, musty, old world nose - still had some fruit present on this, but definitely on its last legs. Proof that the Napa cabs can age, much better than the 2002 Mouton-Rothschild, but I am biased on my affection for Napa; nose much more predominant and bigger than the wine under the surface. Definitely open if you have one. Not much time left!

Cork started to crumble so used an ah-so to get it out in one piece. Some light bricking is present. It had an initial nose of cedar and forest floor which after awhile added some vanilla notes. Tannins are fine and fully resolved. On the mid palate finish of briary red fruit and red currants is only 5-10 seconds but very refined. Even on day two there is still plenty of red fruit and the wine is delicious paired with some chocolate covered almonds. Glad I kept this wine and will consume my last bottle in next few months as the wine is tasty but seems fully mature.

Wonderful - and what a relief. My wife sampled the first glass. Her first reaction ..."it's kind of orange".
Thankfully - just a bit of bricking to add color and character. The wine remains in excellent shape. All tannins dissolved - bouquet of dried fruits with a strong afterpalate of flint and mineral.

I enjoy Caymus, particularly the older vintages ... before the wine became "Parkerized." I had hoped this would be as others have described the 1994, but alas, no. Great feel in the mouth of beautiful (I think) red fruit. Sadly it was overpowered by bell pepper, which I find unpleasant - more suited for a salad than a wine. Clearly, this is a bottle rather than a vintage issue. The back label of the older vintages list the vineyards from which the fruit was sourced. This '94 listed 10 different vineyards.

Still drinking great. Its an older Cab and probably a different style that the current Caymus Cabs. But none of that cotton candy flavors on the 2012 version. A treat to drink this. Sadly my last bottle.

I agree with the words of Telacey & Wine_LVR. This is drinking beautifully right now. Upon opening it appeared to have shed a significant amount of fruit but it did gain more weight as it aired for about an hour. According to cellar Tracker there is a significant inventory of unopened bottles. I would encourage you to open one and assess its development for yourself.

The wine was a beautiful garnet color. The nose was full of cherry and died fruit. The wine was ready and open upon opening and was soft and elegant. I would say drink all you have now before it begins to fade.

Vindredi (Barcode (Bellevue, WA)): Tasted blind. A bit of aged balsamic and chocolate on the nose. Light sweet red fruit, though mostly showing more secondary (aged) fruit flavors. Nicely weighted, it is still quite lively with great depth. Finishes with fine tannins and lots of acid.

Tasted blind: Mature red. Nose is very classical almost Bordeaux-like, tobacco, leather and ripe berry notes. Highly elegant and long. Chocolate, red berries and licorice. One would wish the bottle is bigger. Now fully mature in normal bottles. In my opinion better than the Caymus Special Selection out of the same year. Drink now – 2018.

Fully mature, this great style of Napa wine delivers soft, sweet, plums, black cherry, earth and smoky notes. On the palate, the wine is medium bodied with a feeling of finesse in the fruit and on the palate.

This 19 y/o Cab still maintains lots of fruit. Decanted for over an hour. Silky smooth after a while with a long finish. Was concerned about its age, but it had lots of life left. It was very much enjoyed.

This exceeded my expectations. I took this to a restaurant and drank withouut decanting. It was dark in color, there was a bit of sediment in the bottle, and the cork was a bit soft. The wine opened up and was delicious with ric, mature fruit and balanced tannins. If one wants to age it longer, i think it will last for some time but I am concerned about the cork issue. Given is it now 19 years old I think drinking is better than holding.

We drank the 1994 Caymus Napa and the 1994 BV Latour side by side with the Kelley's over a nice BBQ dinner. Both wines showed good color, the Caymus was a little cloudy and both had lost some body. The Caymus was a little thin and had a green bell pepper flavor after it was first opened, this flavor faded as the wine opened up. Nothing great - the wine was well past its prime but for being 18 years old it held up. The BV showed a little better, medium body, dried fruit, rutherford dust and a light finish. No oak was left in either bottle.

Incredible complexity after 17 years. Slight bricking but no signs of degradation whatsoever. Strong nose of mineral, camphor, and talc to complement fruity undertones. Very long finish. Still has life!

Unfair to assign a score. This wine is spent. If you have any left, open it now and immediately give everybody in the room a glass to enjoy. The first hour this wine was open, it was very good. After an hour, however, it completely fell apart. The air killed it making it very sour and brought out a vinegar component.

I thought this was firing on all cylinders. Ruby/purple in color. The nose was not as good as the 90, but the palate much better. The nose had some sweaty sock notes with just a hint of fruit (pomegranate). The palate was full and vibrant. Certainly at peak, IMO. Cassis, some spice and some sour cherries. Nicely balance. Good finish.

I had the opportunity to share this tonight due to my friend Tom, who was kind enough to share it folloiwing my 99 Caymus. I have to say that there is a remarkable difference in these two wines. The 94 a more restrained wine , while the 99 more a showing a fruit forward nature. I prefer the 94, but it fell slightly short of what I was hoping for. I think in a few more years it will equal my experience with the Mondavi Reserve 94 , which has been one of the best cab's I have had in the last two years. This wine can be that wine, but not for another 3 to 5 years. I enjoyed it very much and still prefer it over the 99.

This wine is amazing! Super condensed nose, cherries, great great nose, not too much oak, but most of all: this wine is balanced. If you don't believe in bottle aging, drink this and you'll change your mind. Clearly a new world wine but fantastic! Think of the scene from "Something's gotta give" and the quote from Jack Nicholson about women in their late twenties: "The time where everything just falls into the right place" That's what I feel like when drinking this wine! We had a lot of 94's in this tasting and all 12 tasters voted for this as the clear winner!

This was the one and only bottle of 1994 Caymus in my cellar. I purchased the bottle over a decade ago and have cellared it ever since. As a result, the wine was in excellent condition. I was delighted by the well developed tannins of the wine and the lingering aftertaste. I drank this bottle with a bleu cheese covered steak drizzled with a 25 year old (extravecchio) balsamic that was personally brought from the producer in Modena. Great combination. I agree with the rest of the forum that this wine is past its peak. However, I do believe that properly cared for bottle can last through the end of this year. Overall, it was fantastic. I'm looking forward to my next Caymus experience.

No where near as good as previous bottle. Pretty dark red color with some bricking around the rim. Nose was an oak monster out of the bottle. Decanted. After serious glass time and swirling, threw off a lot of the oak. Very muted nose and pallet. This bottle either closed down again, or has seen better days. Try last bottle over the summer or in the fall.

last of a case bought in 1996- still great with loud dark fruit, tannins and a touch of oak - all still a bit separate in their component parts but very tasty- the bottle says 12.5% alcohol- you don't see that much nowadays. certainly at its peak (certainly no where near over the hill) but still benefits from alot of air- decanting helped alot- as usual, last glass better than the first. with bryan's wagyu strip steak.

Goodby old friend. Last of a case bought 8 years ago. Still plenty of fruit, tannins integrated and microfine, vanilla spicebox. Decant for 30 minutes. Comparing this to the more recent Caymus vintages (such as 2005) is like comparing silky jazz to punk rock. Hope the newbies age this well.

Blind tasting 3 1994's, Chateau St. Jean Cinq Cepages, Caymus Napa and BV Georges de Latour. Overall all wines held up well interms of color and body. The Caymus had more fruit flavors and more finish than the other two. The color of the caymus was slightly brown. They all drank well.

This wine continues to amaze me. The color is still all there, this really great deep purple showing barely any age around the edges at all. The nose is huge, dominated by all of the rich cabernet juice this wine is made up of. In the mouth this stuff is just really explosive, with blackberries, cherries, dark chocolate, and coffee dominating, with a tad bit of tar thrown in just to round things out. There's plenty of fruit left here for AT LEAST another 4 years, and the rich, chewy tannins might have the strength to carry it well past 2015.

I was skeptical. I have read a lot of press that says this wine is an early maturer, or that is is past its peak. I am here to say that that is crazy talk. From a perfectly stored bottle... Instant light coconut wood vanilla nose. Beautiful ruby with deep dark pigeon blood hues. Is there a little hint of deep dark purple as well? Before I taste, Julie says,"YUM THAT'S GOOD!" My first taste, and I am shocked by the backbone and tannic structure. Very good acid and balance. Tart and mature, with a deep rich cherry and vanilla wood. After 30 minutes the wine has become sweet and more balanced with candy cherry sugar on the tip of the tongue. A little cedar like (Lafitish) and cigar box. Quite a surprise.
This wine was such a nice surprise, what with al of the "Over the hill" press it has received, I am quite taken with it. Oh, I chose not to decant this wine. Instead, a short slow Audouzing with little adgitation did wonders for this wine.

This is a beautiful Californian girl who thinks that she is a handsome French woman. The color is a beautiful deep dark garnet. The nose discovers a complex assortment of pencil shavings, green pepper and cedar. The tongue tastes mature fruit (every so slightly raisiny). The finnish is long and interesting. Better drink up now, because this is not going to get any better.

Incredibly dark, deep purple color. Highly concentrated, classic Cabernet nose that could be smelled a mile away. Huge in the mouth, with firmly integrated tannins. Black cherries, berries, cassis, rounded out with a hint of chocolate. I've been disappointed with this wine in the past, but it seems to have finely come alive. I think it has the structure and backbone to last another 5 - 10 years, but with it drinking this wonderfully right now, why wait?

tasted with the 90,91,92,93 bottle opened for 2hrs then poured. This took some extra time to open up and still has plenty of life to go. when first pored a little somthing on the nose which then blew off and the fruit started really comming thru red fruit with some mocha and a little spice however the fruit was the dominating taste, will definitly look forward to the next one.

A surprising wine. I opened it up and thought that it was past it’s prime, nice, but just tired. Slowly over three hours is began to integrate and come alive. It was interesting how it kept changing but still built on itself. Some red fruit on the nose, but it never really built up to a high level. Some red current, some cassis. Spice and pepper came in at hour two. Soft but firm tannins with a short to medium finish with hazelnuts at the very end.. If you give it time, this is a very good bottle of Caymus, I do fear that it’s best years are behind and now would be a good time to drink up.

Slightly bricked on the edge, but a nice core of garnet. Beautiful nose immediately - salty earth, nam pla, fruit leathers. Soft on the palate, but with great persistence and clarity. Very pretty floral acids. Dried fruits, mushrooms, a touch of spice and cigar box elements. Light, penetrating and very attenuated. Nice finish, medium length with good intermingling of the previous with growing fruit precense. Opened quickly to be even more expressive and with a beautiful sophistication. Very California and very classy. Held for a couple of hours and perfect with very well-marbled NY strips, hollandaise, steak fries, creamed-spinach, asparagus - a great way to greet newly-arrived Spring and the weather to grill.

Wonderful perfume upon opening and for the next 90 mins that it was decanted. By the end of dinner (filet mignon with a gorgonzola cream sauce - Barefoot Contessa recipe) the fruit was thinning. I think this is a result of the age. Will be drinking my remaining 3 bottles sooner rather than later.

Drank with dinner after decanting for 1 1/2 hours. Dinner were lamp chops and asparagus. The wine was smooth to the nose and smooth on the tongue however, I was disappointed by the finish. It was rather bland which maybe indicative of the age of the wine. At least I have 6 more bottles and can see how they compare.

Last bottle from original case purchased upon release. Initially, a lot of cedar on the nose. With time, the cedar went a little into the background, while notes of plums, berries and licorice emerged. On the palate, the fruit is not nearly as prominent as it once was, but the wine in its current state is still very enjoyable. The cedar is still very present, but the mature fruit is very nice now. Palate notes similar to the nose - cedar, berries, chocolate - all in a very elegant package at this point. Still a solid finish, with very smooth tannins and a medium length. It was fun to track this wine over the life cycle to date - I loved it when first released for all its primary fruit, and still got a lot of enjoyment out of it with the last bottle, which is now an elegent, integrated, balanced wine. Interestingly, I know I would NOT have enjoyed the wine in its current state when I first purchased it in "the early years."

Napa Cabernet crossed my mind, but I was leaning towards a '94 Bordeaux (at least I had the year right). Good show by this wine, which is ageing quite gracefully.

Robbie and Louis had a fantastic dinner party last Friday. We started with an 89 Veueve Cliquot Grand Dame--corked! Ouch. Well the lineup for the reds was impressive: the caymus 94, simi 2001, Plumpjack 1996, Stags Leap Fay 1994, BV Latour 1995 and Hess 1994. All wines were served single blind.
The caymus was the wine of the night: blueberry and cassis, rich, succulent and tasty read my notes. A solid 94.

Jeff & Lisa’s: Wow! Dark and creamy, ripe blackberry, blueberry, and a predominant (maybe a bit much) nose of cedar/light vanilla still! Probably par for the course in ’94. Held up very well and was still youthful, but the bordeaux maybe better w/food.

Dinner at home of grilled filet mignon. Splash decanted 30 minutes. Medium ruby color. Palate of plums, cherries and mushrooms, with a prominent earthy undercurrent. Moderate concentration, soft, mature mouthfeel, moderate length finish. By my estimation, this is on a downhill slide and should be consumed soon. Enjoyable, but not what it once was...

Decanted an hour prior to dinner. Initially a less than exhuberant wine; rather dull on the nose. So I waited and prepped dinner: homemade gnocchi with fresh sage and thyme, salad from the garden and rib eye steaks! Delicious and the wine was equal to the food! A fresh full flavor that lasted. Dad and I finished the bottle and wanted more! Glad I have three left.

Not decanted. Color is dark ruby. Nose reminds me of the recent 94 Mondavi Reserve. Aromas of black currant, tea leaves and graphite are touched by a hint of cedar. This has excellent balance and body, fairly decent finish, silky tannins. Everything seems to be in place as the fruit jumps from the glass. This tasting is in contrast to the last 2 bottles I have had, which in retrospect were probably closed. I say drink up!

Dark, rich color reveals no bricking. Muted nose of black cherries and oak. In the mouth, the cassis, currant, and cherry mouthful that I remembered from my last tasting a couple of years ago has faded. The fruit, while still there, now takes a back seat to smokey oak, cedar, and cherry tobacco. Still a nice wine but drink up. Has faded to 92 points.

CT Group does 1995 Bordeaux w/ Blind Wine Mania @ Mike J: Dark, bright red in color. Thick, rich, creamy, milky, red fruit jam on a toasted oak cracker. Very user friendly, easy to understand wine. Maybe not very complex, but very "hedonistic".

7 Cabernet Sauvignons 1994 Vintage (Walnut Creek, Ca.): Very rich fruit with cedar and tobacco on the nose, tastes, sweet fruit with black cherries, good acid, medium amount of soft tannins on the finish. My #2 of 7 and Group #4 of 7.

A very interesting wine - the oldest non-SS Caymus we have had, the 1st of 11 just acquired bottles as part of a much larger cellar contents purchase. Definitely recommend with the caveat that it is time to drink these up - definitely DRINK not hold - and with the barnyard funk it has developed it benefits from a short 30-60 minute decant. Readonable 2nd day with refrigeration overnight but better 1st day. Tonged cork absolutely pristine which speaks to the high provenance of these wines. Definitely "over the hill" in terms of what it once was and what the wine making team originally intended it to be but it's evolved into a very different interesting much more Bdx like older cab. Reddish purple, peripheral bricking, soft and with a lovely lightly sedimented mouth feel and oak and tannins completely integrated. Some fruit still present but smoky secondary flavors dominate. Nose with more barnyard funk then I have probably ever encountered in a CA cab but this blew off quickly (this is where the short decant id helpful) and initially muted but once it opened notes of cedar rather then oak, a whiff of sandalwood and coffee dominated with a surprising more floral rose petal finish. Flavor profile very dry with cedar, coffee, blueberry with a more bloody and grilled meat finish.

Side by side with the 04. Clearly old. Nice tertiary flavors like sandalwood, forest floor, hints of blood orange and dried rose. After a couple hours it perked up and softened. Time to drink up. Enjoy.

Tasted in 2021 (27 years). Fragrance >> flavor. Very dark color, viscous, strong tart raspberry, light leather, mushrooms and almond fragrance. Dry, powerful frontal grips still, light/medium body. Cherry refreshing light finish.

The nose of cedar and iron is so enticing but the tannins in this bottle are still very sturdy and only smoothed out after 24 hours open. Very complex, with red fruit intermingled with iron and tobacco the wine got better as it breathed. I can't decide if it will get better but it certainly is interesting. This is not a wine for simple fruit lovers. You have to dig under the cedar, minerals and acidity to get to what is both tart raspberry and strawberry delicate fruit . But beware that fruit will not emerge on its own, you will have to work for it.

Super fun from the depths of the cellar - crumbled cork, musty, old world nose - still had some fruit present on this, but definitely on its last legs. Proof that the Napa cabs can age, much better than the 2002 Mouton-Rothschild, but I am biased on my affection for Napa; nose much more predominant and bigger than the wine under the surface. Definitely open if you have one. Not much time left!

Cork started to crumble so used an ah-so to get it out in one piece. Some light bricking is present. It had an initial nose of cedar and forest floor which after awhile added some vanilla notes. Tannins are fine and fully resolved. On the mid palate finish of briary red fruit and red currants is only 5-10 seconds but very refined. Even on day two there is still plenty of red fruit and the wine is delicious paired with some chocolate covered almonds. Glad I kept this wine and will consume my last bottle in next few months as the wine is tasty but seems fully mature.

Thankfully - just a bit of bricking to add color and character. The wine remains in excellent shape. All tannins dissolved - bouquet of dried fruits with a strong afterpalate of flint and mineral.

I enjoy Caymus, particularly the older vintages ... before the wine became "Parkerized." I had hoped this would be as others have described the 1994, but alas, no. Great feel in the mouth of beautiful (I think) red fruit. Sadly it was overpowered by bell pepper, which I find unpleasant - more suited for a salad than a wine. Clearly, this is a bottle rather than a vintage issue.
The back label of the older vintages list the vineyards from which the fruit was sourced. This '94 listed 10 different vineyards.

I agree with the words of Telacey & Wine_LVR. This is drinking beautifully
right now. Upon opening it appeared to have shed a significant amount of fruit but it did gain more weight as it aired for about an hour. According to cellar Tracker there is a significant inventory of unopened bottles. I would encourage you to open one and assess its development for yourself.

The wine was a beautiful garnet color. The nose was full of cherry and died fruit. The wine was ready and open upon opening and was soft and elegant. I would say drink all you have now before it begins to fade.

4th of July BBQ with Friends and good wine; 7/4/2015-7/5/2015 (Zurich, Switzerland): A wine I am quite familiar with, and the last ones were always quite mature. This specific bottle was perfect though. Red berries, cherries, and sweet chocolate. Wonderful balance and long. Now fully mature but just amazing to drink. Great stuff

Vindredi (Barcode (Bellevue, WA)): Tasted blind. A bit of aged balsamic and chocolate on the nose. Light sweet red fruit, though mostly showing more secondary (aged) fruit flavors. Nicely weighted, it is still quite lively with great depth. Finishes with fine tannins and lots of acid.

Tasted blind: Mature red. Nose is very classical almost Bordeaux-like, tobacco, leather and ripe berry notes. Highly elegant and long. Chocolate, red berries and licorice. One would wish the bottle is bigger. Now fully mature in normal bottles. In my opinion better than the Caymus Special Selection out of the same year. Drink now – 2018.

This 19 y/o Cab still maintains lots of fruit. Decanted for over an hour. Silky smooth after a while with a long finish. Was concerned about its age, but it had lots of life left. It was very much enjoyed.

Brown Bag Wine Dinner at Two Chefs; 3/19/2013-3/20/2013 (TWO CHEFS, MIAMI, FL): The wine looks Purple colored. The legs are Slow. We drank the 1994 Caymus Napa and the 1994 BV Latour side by side with the Kelley's over a nice BBQ dinner. Both wines showed good color, the Caymus was a little cloudy and both had lost some body. The Caymus was a little thin and had a green bell pepper flavor after it was first opened, this flavor faded as the wine opened up. Nothing great - the wine was well past its prime but for being 18 years old it held up. The BV showed a little better, medium body, dried fruit, rutherford dust and a light finish. No oak was left in either bottle.

This wine is amazing! Super condensed nose, cherries, great great nose, not too much oak, but most of all: this wine is balanced. If you don't believe in bottle aging, drink this and you'll change your mind. Clearly a new world wine but fantastic! Think of the scene from "Something's gotta give" and the quote from Jack Nicholson about women in their late twenties: "The time where everything just falls into the right place" That's what I feel like when drinking this wine! We had a lot of 94's in this tasting and all 12 tasters voted for this as the clear winner!

This was the one and only bottle of 1994 Caymus in my cellar. I purchased the bottle over a decade ago and have cellared it ever since. As a result, the wine was in excellent condition. I was delighted by the well developed tannins of the wine and the lingering aftertaste. I drank this bottle with a bleu cheese covered steak drizzled with a 25 year old (extravecchio) balsamic that was personally brought from the producer in Modena. Great combination. I agree with the rest of the forum that this wine is past its peak. However, I do believe that properly cared for bottle can last through the end of this year. Overall, it was fantastic. I'm looking forward to my next Caymus experience.

No where near as good as previous bottle. Pretty dark red color with some bricking around the rim. Nose was an oak monster out of the bottle. Decanted. After serious glass time and swirling, threw off a lot of the oak. Very muted nose and pallet. This bottle either closed down again, or has seen better days. Try last bottle over the summer or in the fall.

Blind tasting 3 1994's, Chateau St. Jean Cinq Cepages, Caymus Napa and BV Georges de Latour. Overall all wines held up well interms of color and body. The Caymus had more fruit flavors and more finish than the other two. The color of the caymus was slightly brown. They all drank well.

This wine continues to amaze me. The color is still all there, this really great deep purple showing barely any age around the edges at all. The nose is huge, dominated by all of the rich cabernet juice this wine is made up of. In the mouth this stuff is just really explosive, with blackberries, cherries, dark chocolate, and coffee dominating, with a tad bit of tar thrown in just to round things out. There's plenty of fruit left here for AT LEAST another 4 years, and the rich, chewy tannins might have the strength to carry it well past 2015.

I was skeptical. I have read a lot of press that says this wine is an early maturer, or that is is past its peak. I am here to say that that is crazy talk. From a perfectly stored bottle... Instant light coconut wood vanilla nose. Beautiful ruby with deep dark pigeon blood hues. Is there a little hint of deep dark purple as well? Before I taste, Julie says,"YUM THAT'S GOOD!" My first taste, and I am shocked by the backbone and tannic structure. Very good acid and balance. Tart and mature, with a deep rich cherry and vanilla wood. After 30 minutes the wine has become sweet and more balanced with candy cherry sugar on the tip of the tongue. A little cedar like (Lafitish) and cigar box. Quite a surprise.
This wine was such a nice surprise, what with al of the "Over the hill" press it has received, I am quite taken with it. Oh, I chose not to decant this wine. Instead, a short slow Audouzing with little adgitation did wonders for this wine.

This is a beautiful Californian girl who thinks that she is a handsome French woman. The color is a beautiful deep dark garnet. The nose discovers a complex assortment of pencil shavings, green pepper and cedar. The tongue tastes mature fruit (every so slightly raisiny). The finnish is long and interesting. Better drink up now, because this is not going to get any better.

Black cherries, berries, cassis, rounded out with a hint of chocolate. I've been disappointed with this wine in the past, but it seems to have finely come alive. A surprising wine. I opened it up and thought that it was past it’s prime, nice, but just tired. Slowly over three hours is began to integrate and come alive. It was interesting how it kept changing but still built on itself. Some red fruit on the nose, but it never really built up to a high level. Some red current, some cassis. Spice and pepper came in at hour two. Soft but firm tannins with a short to medium finish with hazelnuts at the very end.. If you give it time, this is a very good bottle of Caymus, I do fear that it’s best years are behind and now would be a good time to drink up.

Wonderful perfume upon opening and for the next 90 mins that it was decanted. By the end of dinner (filet mignon with a gorgonzola cream sauce - Barefoot Contessa recipe) the fruit was thinning. I think this is a result of the age. Will be drinking my remaining 3 bottles sooner rather than later.

Last bottle from original case purchased upon release. Initially, a lot of cedar on the nose. With time, the cedar went a little into the background, while notes of plums, berries and licorice emerged. On the palate, the fruit is not nearly as prominent as it once was, but the wine in its current state is still very enjoyable. The cedar is still very present, but the mature fruit is very nice now. Palate notes similar to the nose - cedar, berries, chocolate - all in a very elegant package at this point. Still a solid finish, with very smooth tannins and a medium length. It was fun to track this wine over the life cycle to date - I loved it when first released for all its primary fruit, and still got a lot of enjoyment out of it with the last bottle, which is now an elegent, integrated, balanced wine. Interestingly, I know I would NOT have enjoyed the wine in its current state when I first purchased it in "the early years."

Robbie and Louis had a fantastic dinner party last Friday. We started with an 89 Veueve Cliquot Grand Dame--corked! Ouch. Well the lineup for the reds was impressive: the caymus 94, simi 2001, Plumpjack 1996, Stags Leap Fay 1994, BV Latour 1995 and Hess 1994. All wines were served single blind.
The caymus was the wine of the night: blueberry and cassis, rich, succulent and tasty read my notes. A solid 94.

Decanted an hour prior to dinner. Initially a less than exhuberant wine; rather dull on the nose. So I waited and prepped dinner: homemade gnocchi with fresh sage and thyme, salad from the garden and rib eye steaks! Delicious and the wine was equal to the food! A fresh full flavor that lasted. Dad and I finished the bottle and wanted more! Glad I have three left.

Not decanted. Color is dark ruby. Nose reminds me of the recent 94 Mondavi Reserve. Aromas of black currant, tea leaves and graphite are touched by a hint of cedar. This has excellent balance and body, fairly decent finish, silky tannins. Everything seems to be in place as the fruit jumps from the glass. This tasting is in contrast to the last 2 bottles I have had, which in retrospect were probably closed. I say drink up!

Dark, rich color reveals no bricking. Muted nose of black cherries and oak. In the mouth, the cassis, currant, and cherry mouthful that I remembered from my last tasting a couple of years ago has faded. The fruit, while still there, now takes a back seat to smokey oak, cedar, and cherry tobacco. Still a nice wine but drink up. Has faded to 92 points.

CT Group does 1995 Bordeaux w/ Blind Wine Mania @ Mike J: Dark, bright red in color. Thick, rich, creamy, milky, red fruit jam on a toasted oak cracker. Very user friendly, easy to understand wine. Maybe not very complex, but very "hedonistic".

7 Cabernet Sauvignons 1994 Vintage (Walnut Creek, Ca.): Very rich fruit with cedar and tobacco on the nose, tastes, sweet fruit with black cherries, good acid, medium amount of soft tannins on the finish. My #2 of 7 and Group #4 of 7.
