  • Dinner at Pizzeria Bebu (Chicago, IL): Absolutely killer showing -- this could mop the floor with many, many wines at 2-3x the price. The nose is stunning -- the clean and bright red fruit, with hints of tartness and a dusty earthiness as well. The vintage's acidity shows on the palate -- to be sure, this isn't a fleshy wine, but there's a sinewy elegance to the taut acids. Still plenty of red fruit too, though it's probably a touch on the tart side. For my palate, fully mature, as I worry that further age may cause more of the fruit character to attenuate, while the acids never truly subside.

  • Really enjoyed this. Fully resolved, with perhaps a touch of acidity poking out and keeping it from being perfectly balanced. Nonetheless, an excellent bottle at peak. Drink up!

  • PnP. Dark red in the glass. Lovely nose of Savigny dark red cherry with semi mature notes of forest floor. More mature than I had expected and drinking perfectly at this point. Very enjoyable ***1/2+

  • Aerated an hour. Somewhat pale ruby red colour. A bit closed in the beginning. Opened up in the glass. Impressive aromas with lots of mature dark fruits, blackcurrant, warm spices and forest floor. On the palate it followed on with mixed dark berries, dried tomatoes, herbs and mushrooms. Nice concentration and complexity. Perfect acidity and integrated tannins. A very delicate and elegant wine. Paired with duck.

  • Showed a little age. Good and elegant, well balanced wine. In a tasting against a younger Oregan pinot it did not do so well and was overpowered a little.

  • Wine evening in Tobe, Yokohama (Brasserie au Miel): Non-blind. Had immediately and over the evening.
Impression: Almost a very good wine.
    Pale red.
    Small Smurf-nose (raspberry cordial).
Raspberry juice, fine acids, small tannin, watery, watered, no flaws, non-interesting.
However, it went well with the boeuf bourguignon (upgraded from 75p) and in time started to display fine tertiary notes of tar (upgraded from 80p) and other fine complexities.
(Wife had no mercy with this wine, only a frown.)

  • Very tight when first opened. Needed about 1/2 -1 hr to start coming out of its shell. Other than a stinky nose, relatively shy. good earth, forest floor, some light greeness, bing cherry, some raspberry. Has some heat on the finish. Ok, but not the greatest. Might get more secondary and tertiary flavors in a couple years.

  • The first glass was quite nice, excellent even..all of the Savigny traits I enjoy, pine needly sois bois, delicacy and clarity but with nice impact on the palate, but after seeing some air, the wine retreated a bit an became much more thin and astringent. This seems to be somewhat developed, secondary characteristics on the nose and palate, but I'm going to wait a bit before trying the next bottle in the hopes that this comes out of it's shell. If this comes back around to what I saw initially, this well be very good indeed.

  • Bienvenue à Savigny (Savigny-lès-Beaune): More mature aromas, earth, forest floor, earthy, minerals, tannins not resolved, some complexity developing, nice wine.

  • The nose is mature and complex, showing intermingling tones of ripe strawberry, rose petal, forest floor, warm spice, and radish. The palate follows accordingly, opening with gorgeous fresh mixed berries complicated by mature notes of sundried tomato. The mid-palate further integrates savory elements of dried green herbs and mushroom/forest floor. The finish is long and interesting with arising tart cranberry, aged tobacco, violet flowers, and fine tannins. Though mature, the wine retains a fresh acid core, simultaneously lifting and defining flavor complexities as well as adding verve to the lengthy finish. This wine is a delight, expertly balancing authentic fruit with interesting secondary complexity. R&M 91

  • Crystal clear ruby red color. A warm and enticing nose, Lots of floral notes. Could keep on sniffing this one all night! Taste is a bot closed at first, but opens nicely up after an hour and shows concentration and spices. A real heartwarmer! (A strange hint of wet animal fur and oil and green-ness at the very end of the evening does not lower the score)

  • This was very good indeed, my WOTN for current drinking, with spicy dark fruit, cedary notes, hint of beefiness and soil. Harmonious with lovely fresh acidity and fine tannins providing a hint of grip on the attractive lingering finish.

  • Bize always seems to deliver, though this time it takes an hour or two. Beautifully earthy, pure and mineral, with a firm finish of spicy tannin. Returning to it the next day it seems to me this will benefit from more air, or another few years - a good wine that should get better vg

  • Light red colour with a transparent rim. Initial aromas of red fruit reveal more herby and vegetal notes as the glass is swirled. Rich mouth-filling texture, sweet cherry fruits which develop into earthy and gamey flavours with time in the glass. The lovely rich gamey-ness stays long into the finish and develops a little hint of thyme at its end.

  • Drinking very well right now, with a generous nose right out of the bottle, which expands considerably with aeration. Typical Pinot Noir characteristics on the nose with aromas of black cherries and blackberries alongside mineral components, this wine is rich on the palate with notes of coffee, dark fruits and stones. Medium-to-full-bodied, concentrated wine with good length. It does have a slight touch of underripe tannins which prevent a higher score, but a lot of fruit and good maturity compensate for it. Drink from now until 2011.

  • Spring 06 TAC Vendor Sale (Tokyo American Club): Time heals most things, but maybe not green tannins. I like most things about this wine. It has a great sappy depth that makes me think it has the fruit and concentration to age out well. It also has a Savigny stony earthiness that I like a lot. Good pure cherry fruit and a slight hint of beetroot round out the pleasantly deep and foursquare package. This is still very young and needs time to work out the tannins in which the whole package is wrapped. If only those tannins didn’t seem a little rough and angular and green, I’d be a lot more confident. This is one of those wines that I’d be afraid to take a big plunge on based on this style of tasting, but that might really start to sing with a good decant and an evening of air. ($34.27 at bottle lot)
