Jason's birthday: Guessed as a BdB from a warmer vintage like 2009 or 2012. Stylistically similar to Diebolt-Vallois with citrus and white orchard fruit, had superb acidity and drive. Realised I had the 2013 before which was still painfully young but this was in a good spot.

(Disgorged in beginning of 2016, 100% Chardonnay from Les Valnons in Aÿ, dosage 5 gr/l) Light yellow colour with a greenish hue and a wild stream of fine bubbles. Youthful and fruitful nose showing mint, minerals, butter and lovely flower notes. Palate is filled with citrus acidity and a long butter filled and lime peel finish. This is a very good showing, and the intensity on the palate is just wonderful. But this in need of some more cellar time to soften up and reveal more expressive notes still hidden underneath the citrus and buttery notes. Showing even more intensity and lounger finish on the second day and with the same freshness. This is a keeper for years to come and should reward cellaring more than many other 2008’s. Wow! 🍾Best 2023-2043 🏅91p

The room filled with nougat and chocolate when I opened the bottle. Fantastic on the nose! Still young in the taste with green apples and lots of acidity. With 30-60min of air it really opens up and the tropical fruit and body showing the potential this have.

Nose: The nose is expressive and distinctive with an oxidative touch along with biscuits, almonds, lemon peels, apples, pears, mineral notes, leesy tones, and some yellow florals. There is excellent complexity and depth with a quixotic attractiveness at the same time.
Taste: Medium/full bodied with high acidity. The acidity has some serious punch to it, but it is also well integrated along with biscuits, roasted nuts, lemon peels, apples, mineral notes, and some leesy tones as well.
Overall: This is young, yet it's also rather alluring in its own way. The nose and palate present a few angles and sharp turns and while you do have to somewhat work for this, it yields rewards. This isn't a champagne for everyone, but, for those that are into a more oxidative style and have an affinity for angles, this brings that in spades.

Consumed over 2 days, on initial day this acidity and bubbles were very prominent - very fresh with light oxidative/yeasty notes. On day 2, when served at cellar temp ( no additional chilling) this was even better, more expressive nose and body to the champagne. I would recommend not icing this, as it drinks better at a warmer temp.

On the nose this is much more bready and yeasty than the '07. The palate is also richer and more mouth filling, with apple and yeasty notes. Fabrice feels that this will have tremendous aging potential. Delicious!

This drank quite well. Well balanced with good complexity. Vibrant on the palate with good layers of complexity. An honest expression of the vintage and vineyard.

Had a bottle @ Petit Crenn when we sat at the chef's counter and it paired nicely with everything we ordered (up to the dessert). Nice acids, soft lemon backbone, a little yeast, tight bubbles. Had over 5 courses paid 125~130 in the restaurant so not exorbitant and thoroughly the experience. Recommend on the bubbles for $70 or less, STRONG recommendation on Petit Crenn no matter what the price.

J's Birthday Dinner (Taste Paradise Ion): Pnp. Red apple, lemon, lime, brown sugar, still fresh, lots of tension, creamy and nutty with a long finish.

This is probably at peak to my taste...lots of tertiary mushroomy funk and oxidative character coupled with creamy lemon fruit. Fantastic champagne.

Excellent. Real concentration and depth. No doubt this will keep, and probably improve further, but lovely right now.

Powerful nose of chalky minerals, lemon, green apple, toast, hints of cream, energizing mousse with lots of acidity and a really nice finish

R. Pouillon et Fils Champagne tasting with Fabrice Pouillon and Kevin Pike (Manhattan Wine Company NY, NY): From the Les Valnons Froid Cul parcel on a very cold parcel in Ay. This stands out as a Blanc de Blancs from a grand cru famous for pinot noir. This was fermented 80% in aged neutral oak and 20% in enamel. Dosage is 4.5 grams. 2008 was a cooler year, higher acidity.
On the nose this is much more bready and yeasty than the '07. The palate is also richer and more mouth filling, with apple and yeasty notes. Fabrice feels that this will have tremendous aging potential. Delicious!
