Appreciable pressure under the cork, plentiful bead in the glass. Deep gold colour. Pungent, mature nose: broad and buttery; pear tatin. Vibrant palate, with good acidity and plentiful caramel. Rich and balanced, and still very much alive. [Cork + cage; 12% abv; Nickolls & Perks, £100].

My Birthday Dinner (Crown Wine Cellars, Hong Kong): Medium gold Sauternes-like colour. Generous but transient mousse. Tiny langorous bubbles. Lovely nose of hazelnuts and honeycomb. Sharp, precise plush palate with lovely sharp long length and a velvety, biscuitty finish. Gorgeous fully mature Champagne.

Copenhagen Tasting Group welcomes Tom in DC; 9/5/2004-9/10/2004 (Copenhagen): Medium yellow colour. The bouquet revealed notes of rust, wet iron, and vitamin pills. Delightfully sweet and gentle in its soft sweep. Seems to lack a bit of width, but it is a Champagne made in a quite commercial and forward style which I am sure would be favoured by many people. I enjoyed the wine quite a lot, even though it could have been a bit more complex and long on the aftertaste.

Fresch! Saline, oysters, grille lemons. Small bubbels and an aftertaste that just keep lingering... A truly great bottle!
