Evidently this wine is Russian roulette re premox. I got lucky. Glorious colour, way beyond primrose and into yellow daises. So fresh. Subtle nose with barest iodine hint to remind you it’s Chablis. Subtle suave palate. Pears, nutmeg, lovely mouth feel of velvety fruit. Glorious, and 18.5

Deep orange-gold, heavy oxidation. John, who brought it, had tested it before leaving home and the oxidation wasn't showing then so it changed very fast (I was about to discover the same phenomenon with my Rapet).

Cork crumbled very badly (my durand-inspired device was not at hand), so I had to run it through an ultra fine sieve which thankfully did the job well. No decanter at hand, but luckily we had an ikea jug that worked just as well. We caught this at peak - medium gold in colour, white flowers, lemon curd with the slightest hint of honey. Good salinity and minerality, lovely acid and persistent finish. This was glorious. This had a creaminess that coated the mouth - a none-wino friend said that the mouthfeel reminded him of the mouthfeel that one gets when eating durian - and I totally got what he meant. there was this lingering mouthfeel that was absolutely seductive - this bottle turned him onto white wines. No hint of pre-mox - what a wine!

Burgundy lunch: Rounded texture and ripe, honeyed yellow fruit that led me to Meursault. Sensible oak use that gave weight and the pedigree of fruit was able to stand up to it. Some age on the wine but not as advanced as the 04 I had previously. Drinking very well now.

Afternoon quickie at Joo Chiat. Drank in Zalto Burgundy glass. Appearance is clear, medium+ intensity, with aromas of reductive funk, briny tidal pool, green apples, P says nettle, some emerging honeyed citrus fruit. Developing. On the palate, dry, high acidity, medium alcohol (13%), medium+ body. Pronounced flavour intensity, with flavours of nice tart green apples, citrus lemon-limes, tidal pool brine minerality, wet stony minerality, touch of honey emerging. Long sticky lingering finish. Very good quality. Well-aged and still feels like it could develop a bit more - once it gets the full on honey nutty notes this will be fully at peak. Could be a risk, but maybe 2 years more.

Medium yellow. Broth and citrus, mineral, medium body. Classic, in fine shape, and truly excellent, but not close to being the best example of Clos. It suffered in comparison to a much more intense, impactful Pichler Riesling.

Compared to the Louis Michel ‘07 Clos the other day, this is far more youthful, energetic and classic. Just medium straw colored, laser-like acid structure, very citric and saline minerality. Showing beautifully right now. Sad to see so much bottle variability but this one is a 93-94.

Served a bit too cold so grippy hands around the glass...Nose shows, initially, butter, toasted almonds, peach and muted lemons, sea shells and a touch of mandarin oil. It has mouth watering acidity, a little honey and butter with some sweet spice and a slight mid palate burr. fruit is similar to nose - peach and slight lemon. This is more forward than the last bottle I'd suggest but no prem ox (huzzah!) Superb

Christian Moreau / Groffier Burgundy Dinner with Friends (RPM Steak - Chicago IL): Served alongside the 2007 Clos des Hospices. Powerful throughout with very bright and fresh green and yellow apple aromas and flavors. Very good weight, very good length. At a great place now. Both bottles purchased upon release and well stored since.

Showing the weakness of the vintage. Not a whole lot of chablis character. Tons of lemon yes, but that's about it. Not much salt or acid. Seemed tired, fat, yellow, and old, like many wine aficionados I see at events. Not horrible mind you, just not what you expect from les clos.

Tank wine. Deep yellow colour and a rich nose suggesting a fully developed wine. Palate similar. It's a bit underwhelming initially offering up bold Chardonnay flavours. It's not till the aftertaste that the complexity and minerality show through. There is some lovely Indian spice. Getting a bit fat though so not sure that cellaring further will provide improvement.

After just two years since my first bottle, which I rated 93, this wine seems to have slipped in a big way. Rich gold color and with a nice Chardonnay nose, but there is a malty tone on the palate and it seems a little flabby. Probably at the early stages of premox. Sigh.

Crisp, clear, great mineralogy and balance. Moreau is making great well priced Chablis and passed my test test to buy more of his range. The 07s are drinking really pure and beautifully if somewhat primary. Better in Chablis at this time that montrachets

Wonderful, pristine, elegant wine, this one. The epitome of minerality with great stoniness/slateiness. Lemons, limes, green apples, a hint of white peach and that chablis oyster shell too. Good fruit intensity and pleasing length. All very integrated and ready to drink now but will certainly develop more if the cork holds.

Half bottle. Still light yellow. Fragrant flowers, oyster shell, and ripe lemon. Medium weight-not the densest Clos ever but an alluring feel that suggests some wood without having it interfere with the taste. Now that is a feat! Pure citrus, solid acidity, stone and a smidgeon of quinine bitterness on the finish. Avoids the slight softness of some '07 Chablis and is the epitome of the potential charm of this vintage. The last of 4 tenths which have all been splendid, but none better than this. On to the full bottles with great anticipation.

Half bottle. Yellow. This smells like a musky tidepool with seaweed and iodine. Medium weight with lovely orange peel fruit, just a dash of wood showing. More stone than acidity in this bottle. One could crave just a tad more tension, but this is precise, quite finely etched, and perfectly mature out of this format.

Esoteric Wine Dinner (Absinthe, Boat Quay): This was very good indeed. It had a very spare, reserved nose that was pure Chablis - tons of chalky notes, lime and green apple scents, and a nice ring of slatey minerality. When the wine warmed up in the glass, some creamy notes drift out as well. The palate was what really impressed me. It had a bright, citrus attack, with lime and lemon flavours sprinkled with some fruit zest, and a nice long line of mineral at the midpalate - all very fresh, very focused, yet with a lovely, rather un-2007 depth that slowly unfolded into an effortlessly long finish of a chalk and spice. There was a certain richness and power to this that that belied the vintage, but this was wed to a nice purity of expression. Still very young, but very nice indeed. This should be excellent in another 4-5 years.

Tasted more like sauvignon blanc than chardonnay. Overly tart in my opinion but had good mineral notes. Paired very well with hamachi in light pesto dressing. Would keep the last bottle for few more years to see if it softens up a bit.

Light but glossy feel, precisely etched due to great acidity, excellent minerality and penetration with white flowers apparent late on the palate. No hint of wood. PopnPour, tasted over 3 hrs -translucent light gold with green -lime, sea breeze, tiny reduction -med+ acidity, loaded with mid-palate sap gives it power without much weight, great minerality, moderate complexity and intensity, moderately long finish with a little of the '07 lean bitterness -a fine example of '07 Les Clos, characteristic of the vintage and cru, not a trace of pre-mox, still youthful, WIN!

Quite intense nose of stone, citrus and green fruit. Medium body, edgy acidity and very nice intensity of flavors. Evolved nicely as we went through the bottle. Complex finish with a sea salt shellfish notes on a background of live citrus. I had the Moreau Clos '06 a few weeks ago and the '07 is definitely more concentrated, generous and intense on both nose and palate. This will improve in 2-3 years, but is very nice right now.

Beautiful, expressive Clos with a gorgeous perfume of iodine, dried flowers and mint. A sheath of glycerol protects the gums from the razor sharp geological matter and it has real volume and presence. Length of flavour is admirable.

Expressive, seemingly thick ( but not heavy) nose of white flowers, peaches, salty minerals and lemon fruits that introduce similar flavors on the notably rich yet nervy structure. Multilayered in a way that is very detailed and delineated, showing a terrific depth of fruit. This is long and persistent and really shows great potential for further development.

EWG: Young Chablis & Old Cabs (Noir Food & Wine, Pasadena, CA): Spicy nose showing some sulfur and wet rocks in time. The fruit shows a bit round in the midpalate with the finish coming on a bit hard and steely at the moment. There is a nice wine here in search of some time. The concentration and structure are here to go for a while. Nice but tight like the other two on the night.

This was quite good. It opened with elegance, and lots of breadth with stone fruit, flowers and sea shells. After 20 minutes, the wine tightened up a bit and showed more lemon/lime and spicey wood flavors but it was still very pleasing. This should even get better and merit a few more points after a few years in the bottle, as it becomes more open and the wood achieves better integration.

Wonderfuly fresh and lively, not as big as i was expecting. Racy acid and easy going fruit gave this a very "drinking well now" feel. I think the 07s will be an earlier drinking vintage than the 06s and 05s. Still, lots of minerality and medium length. This was big and bold compaired to Moreau's Vallons and Valmur. The Le Clos de Hospice steals the show with big complexity, cream and fruit.

Tank wine. Deep yellow colour and a rich nose suggesting a fully developed wine. Palate similar. It's a bit underwhelming initially offering up bold Chardonnay flavours. It's not till the aftertaste that the complexity and minerality show through. There is some lovely Indian spice. Getting a bit fat though so not sure that cellaring further will provide improvement.

After just two years since my first bottle, which I rated 93, this wine seems to have slipped in a big way. Rich gold color and with a nice Chardonnay nose, but there is a malty tone on the palate and it seems a little flabby. Probably at the early stages of premox. Sigh.

Light hay yellow; light nose; deep intense petrol with fine aftertaste; on the light side with some good deep features; very likeable but also somewhat neutral; to go with light food, will "disappear" with more heavy food

Wonderful, pristine, elegant wine, this one. The epitome of minerality with great stoniness/slateiness. Lemons, limes, green apples, a hint of white peach and that chablis oyster shell too. Good fruit intensity and pleasing length. All very integrated and ready to drink now but will certainly develop more if the cork holds.

Esoteric Wine Dinner (Absinthe, Boat Quay): This was very good indeed. It had a very spare, reserved nose that was pure Chablis - tons of chalky notes, lime and green apple scents, and a nice ring of slatey minerality. When the wine warmed up in the glass, some creamy notes drift out as well. The palate was what really impressed me. It had a bright, citrus attack, with lime and lemon flavours sprinkled with some fruit zest, and a nice long line of mineral at the midpalate - all very fresh, very focused, yet with a lovely, rather un-2007 depth that slowly unfolded into an effortlessly long finish of a chalk and spice. There was a certain richness and power to this that that belied the vintage, but this was wed to a nice purity of expression. Still very young, but very nice indeed. This should be excellent in another 4-5 years.

Tasted more like sauvignon blanc than chardonnay. Overly tart in my opinion but had good mineral notes. Paired very well with hamachi in light pesto dressing. Would keep the last bottle for few more years to see if it softens up a bit.

Quite intense nose of stone, citrus and green fruit. Medium body, edgy acidity and very nice intensity of flavors. Evolved nicely as we went through the bottle. Complex finish with a sea salt shellfish notes on a background of live citrus. I had the Moreau Clos '06 a few weeks ago and the '07 is definitely more concentrated, generous and intense on both nose and palate. This will improve in 2-3 years, but is very nice right now.

This was quite good. It opened with elegance, and lots of breadth with stone fruit, flowers and sea shells. After 20 minutes, the wine tightened up a bit and showed more lemon/lime and spicey wood flavors but it was still very pleasing. This should even get better and merit a few more points after a few years in the bottle, as it becomes more open and the wood achieves better integration.

Wonderfuly fresh and lively, not as big as i was expecting. Racy acid and easy going fruit gave this a very "drinking well now" feel. I think the 07s will be an earlier drinking vintage than the 06s and 05s. Still, lots of minerality and medium length. This was big and bold compaired to Moreau's Vallons and Valmur. The Le Clos de Hospice steals the show with big complexity, cream and fruit.
