Jim and Michelene for their 40th wedding anniversary w/ chef Don Saunders. Nita's & my btl. I opened this 2hrs before dinner just to check it and found it amazing. Light gold, stunning orange zest & mineral. I put the cork back in after 10 minutes and felt great about this '07 Clos as always. 5hrs later at Jim & Michelene's I removed the cork once again, took a pour & passed. Sadly, this was still very nice but it had picked up some butterscotch and lost a bit of its vibrant freshness. Completely drinkable but not the 98-100pt test sip earlier in the day. This had slipped to a 92/93 wiine and I couldn't adjust to the loss of its best self just 5hrs earlier. The previous btl on Aug 2021 was a near perfect 99pt wine. No more 07s left and none to worry about going fwd. Purchased on release and stored in my temp-controlled cellar since.

In such an amazing place. A perfect bottle. There is youthful power and verve and an incredible depth and seamlessness of vibrant fruit layered with minerality, pastry cream, roasted hazelnuts and an ocean spray-like salinity. It’s texturally captivating, wrapping around the palate with killer density without weight. Racy acids balance its richness and secondary nuttiness and it finishes forever. White burg at its finest.

Thankfully a sound bottles after the recent disappointment with the 2011 Forest (premoxed). Beautiful nose with rich flavors of lemon, minerals, apple, cream, and hay. Good acidity with more lemon notes, ripe fruit, apple, tart peach, and more minerals on the palate. Long finish. Really great Chablis! When these wines are on, they are really on...

Pop and pour. Drunk over several hours. maturing golden color. Chalk, marzipan, and orchard more than citrus fruit on the nose. The most mature of my bottles to date. It's toothsome and intense yet only mid plus weighted with plenty of dry extract delivered with a clarity and focus like drinking mineral water. Intensity and depth without heaviness on the palate with more of the same fruit, chalk, and a sense nuttiness on the back end. Finishes mouthwateringly clean and fresh. Complicated and contemplative. Very long. This is drinking very well, but I hope it is a bit more advanced than my remaining bottles. I will try another one soon and see.

Dauvissat's 2007 Clos needed some air to come around, initially a bit backward with a hint of funk, but with time was an excellent Chablis sporting a beautiful nose of lemon curd, beeswax, and actual oyster. The palate is bright and savory with plenty of saline minerality and both depth and breadth to the persistent flavors of citrus and stone. This is elegant and even understated but absolutely delicious. Should continue to drink well for awhile.

A steely, soil driven nose with chalk, oyster shell, lemon pith and curd, nuts, and subtle white florals. On the palate, this has terrific density and dry extract, yet comes across without any heaviness. Iron fist in a velvet glove Chablis style. Chalky and deep, with mouthwatering freshness on the palate, with more of the same citrus notes, and nuttiness that adds complexity. Archetypal Chablis drinking at peak with plenty of time in hand. Chiseled, yet it still has a waxiness to the texture that adds breadth and complexity. Power and grace. Like drinking mineral water. Hedonists run away. For me, this is wonderful

I really love Dauvissat’s 07’s. Les Clos is totally in the zone showing incredible power and striking intensity flaunting its signature crushed oyster shell minerality and sea spray salinity with yellow fruit and intriguing flavors of beeswax and lavender honey. The palate shows superb integration and excellent weight and midpalate depth, with such a regal texture and mouthfeel. Its focused finish just goes on and on. A stunning Les Clos that has a long life ahead ✨

Decanted for an hour before pouring. Medium yellow. Aromatically, early on all lemon, and then an explosion of ocean broth, iodine, and even anise. Bracing at first, but then rounder, middle weight, complex, savory flavors with tremendous focus, intensity, and driving chalk/limestone finish. Chablis the way it was meant to be. After so many recent disappointments with Dauvissat, this one almost made me cry when I realized once again how great they can be when they are in good form. A bottle like this could be profound on its 20th birthday.

A touch of must on the nose but in a good way. A very savoury wine with huge latent power. It seemed more minerally than fruity and with some oily viscosity. I appreciate that it is a real treat to try an aged GC Chablis from a top producer, however if I am honest, this is more a wine that I respected that enjoyed. In my estimation this needs another 5 years ++ to develop additional complexity.

"Good bottles" (67 Pall Mall): This was absolutely gorgeous! Hard to describe, as great wines often are, it was served slightly too cool but quickly got into its stride. The nose was like a compelling green-yellow cloud, smelling entirely of itself, then on the palate nicely mature, with yellow apple, honey, lemon cream, mouthwatering but smooth acidity and an oily, sensual quality. I'd been sitting on this for a while, waiting for the right occasion, and delighted it showed so well.

Small gathering - 08 and 88 Cristal Roses and 00 Bordeauxs (Capital Grille Tysons, DC): Perfectly mature yet youthful nose displaying ripe but pure yellow fruit, lemon curd, candied lemon peel, honeysuckle, honey, beeswax, crème caramel, sweet spices, oyster and mineral. Beautifully integrated palate, finely layered rich but pure yellow fruit, rich and oily but also good precision and freshness, perfect amount of acidity and mineral, and a seamless long sweet yellow fruit driven finish with honeysuckle and limestone at the end. This is the freshest example I have had. Although the fruit is rich, this is a classic Dauvissat. Excellent showing.

A lost Friday afternoon gathering – how to semi cheat in a blind tasting (Black Salt, Washington DC): The color is decisively darker than the 07 Raveneaus. Beautifully mature mineral nose displaying succulent ripe yellow fruit, candied lemon peel, lemon curd, light honey, beeswax, saline, oyster shell, oyster jus and crushed rocks. Fully integrated palate, nicely layered succulent yellow fruit, bright acidity, strong crush rock mineral, and a long ripe yellow fruit driven finish with honey and oyster shell at the end. The overall expression is at least five to ten years more advanced than the 07 Raveneaus. It is drinking really well, though slight more advanced than expected. Better to drink up!

Unfortunately time has not been very kind to this bottle ( albeit sourced from the impeccable cellar of La Tour d’Argent in Paris) and when tasted blind we thought it was an old rhone white.. shame and pointless to rate
PnP in Riedel (red) Burg glasses tonight at venue. Instantly, a head turning wow wine! Mid gold color & not the tiniest hint of pre-mox 14yrs out. A bold mix of tide pool & citrus aromas. Flavors explode with mouth coating layers of gun flint infused minerality, lemon, apple, pear, honey and other harmonics in symphonic precision & expression. The substantial power & intensity never overwhelm the elegance & finesse. This is a civil classy wine that never leaves any doubt you're sipping Grand Cru Chablis from a master producer. I really think using the Riedel (red) Burg glasses had a very positive impact on the aromatics & flavors both. Just killer! And, I have one more that could be left alone till its 20th. This is great chardonnay by any measure. 13% alc. Thrilled to own it!
This is just great IMHO. Medium gold color. The nose is oyster shells, yellow plums and crushed rocks. What purity. Deep but piercing. The palate is perfect - again piercing but with all the depth and flavor generosity you could want. A subtle, perfect performance. Not flashy, just perfect. Like playing a great Raynor. (98)

A stunning and powerful wine. Atypically so even for Les Clos, although interestingly this is the second 2007 Les Clos I've had that was this big. Golden yellow with a honeyed note and glycerin feel on the palette. We were tasting many wines and I confess I don't have much more on the order of notes except to say it was terrific.

Decanted for 2 hours before pouring. Just a transient whiff of honey which quickly receded to show bouillon. Full yellow without any residual green tint. All herb, lemon, and limestone on the palate with a fantastic acid backbone. Medium weight but explosive and probing. Not the ultimate in Grand Cru complexity (that would be Dauvissat's Preuses), but my goodness, the intensity and power here were unreal. This has enough energy and snap to go on for another decade.

Stunning white burgundy. Light golden/yellow color. Stunning nose of chalk, hay and minerals mixes nicely with yellow grape skin. Full feel yet light as a feather with perfect balance and finishing with a counterbalance of zip that makes my head spin in wonder. Litterally great - it’s complexity sneaks up on you and just won’t let go. I miss the days of buying cases of this cuvée at the local wine store. Memorable. (97)

Third of three blind whites. Either my glass was still still feeling the effect of the Bornard (ugh) or this bottle wasn't proper, but this was the strangest Dauvissat le Clos I've ever had. (It's also possible my call was completely off.) The nose was fairly muted, and it had a touch of oxidation on the finish, a bit of chalk and not too much acidity. The lack of weight caused several of us to call this a village(!!). Jason commented that on opening this was showing all the tell tale signs of a typical Dauvissat, but I got none of them. It's possible I just haven't had enough Dauvissat to identify it properly. Again, I should not have poured it into the glass that previously had the Bornard.

Medium yellow. Flowers, herbs, and lemon on the nose. Medium weight-again, not a dense or weighty Clos but appealing glycerine. A flash of ripe apple before it turns toward a swirl of vegetal brothiness, bitter citrus peel, acidity, and a combination of crushed gravel and limestone. A true essence of Chablis that bears virtually no resemblance to Chardonnay produced anywhere else. Many years to go.

Chris' Birthday Dinner (Summer Palace, Regent Hotel): This was smashing. We had a lack of white wines tonight, but the quality of the bottles we had very much made up for the lack of quantity. Tight and unyielding when first poured, it opened up into a very classic Chablis nose of flinty mineral, dried earth and subtle white fruit and citrus zest. Quiet, but compelling. The palate was really, really solid. An archetypal Les Clos, this was deep and powerful, yet wonderfully cut and defined at the same time, with an inexorable beam on mineral lasering through absolutely transparent flavours of white fruit and citrus notes. There was that beautiful 2007 crystalline purity to it, yet the depth and breadth of the wine, with its clear Grand Cru weight and fleshiness kept it from ever being lean or mean. There was a lovely sense of acidity woven into the body of the wine, yet this was so well integrated that one barely notice it. Fantastic finish too, deep, long and powerful, with a lovely chalky minerality that coated every corner of the backpalate. Absolutely superb. I liked it even now, but it will continue to get better over the next few years. Strangely for a top-drawer 2007 though, I do not think this will be one for the absolute longest term.

6th of 12, opened 30 minutes, perfect cork and level, maybe a tad better than December bottle, clean and with good typicity on the nose, but spoiled on the palate by intrusive woody/nutty flavours uncharacteristic of Chablis coupled with touch of flabbiness at expense of flinty minerality, not a bad drink just not what it should be. Cork was a bit soft but perfect fill. Color is medium gold; a bit darker than I like to see in Chablis. Nose is classic seashell and limestone with citrus (lemon/lime) notes. Initially this was quite tight on the palate but with an hour or so of air, it developed a lovely silky mouthfeel. Good long finish. Not a great Clos, but for the vintage and at age 12, quite lovely. I would say drink up if you still have any.

Whites at Whiskey at Kaiseki Furukawa (Kaiseki Furukawa, Mpls, MN): Light-medium gold color. Drank 1 glass over an hour. This was different tonight. It wasn't oxidized, but it wasn't other bottles either. Good, but not memorable. It just seemed rather flat and lacking energy. White fruits, lacquer, flat and fat, lemon, stone. Probably around 90pts tonight, but no official score as I don't think this is representative..

Vincent Dauvissat tasting #7: golden color, beautifully matured wine. Developed and complex nose with dried apricots, mushrooms, caramel, nougat, old butter and hints of oxidative notes in a nice way.
Dry and spicy palate, fully mature, yellow apples, hints of burnt notes.

Appearance: Bright and clear, the wine is of light gold colour, with watery rims and legs. Nose: Clean, with medium intensity aromas of citrus fruit of lime, green fruit of pear, stone fruit of peach, floral notes of jasmine, mineral notes of stony and saline, maturity notes of honey. The wine is developing. Palate: Dry with high acidity, the wine has medium alcohol, medium (-) body and medium (+) intensity flavors of citrus fruit of lemon, green fruit of green apple, mineral notes of stony, stone fruit of peach, floral notes of blossom. The wine has a medium (+) finish. Conclusion: Very good quality Chablis with good concentration and a fairly complex nose, the wine has good balance, showing nice elegance and well-structured, with lively acidity and good concentration on palate, as well as a fairly long finish. It is ready to drink now though can further develop for another 4-6 years.

Dinner at MingHin (Chicago, IL): (Wax top.) This shows a bit of ripeness in the form of peachy fruit. It's rounded, but there's good cut here. The acidity here isn't a bracing mineral line, but it's cloaked with some sweet stone fruit. It rounds out in your palate -- a really nice bottle.

PnP in Riedel Montrachet glasses. This shows an age appropriate medium light crystalline gold color. At almost age 11 not a hint of premox. This drank super fresh tonight. My cork was soaked a little over half way. As others have mentioned the nose is a smidge reluctant but I still detected a subtle mix of citrus and seashore aromas as the night progressed. The palate hits you with mouth coating layers of minerality and citrus but is never overbearing. In fact, this strikes a perfect balance between power & intensity vs. elegance & finesse. This is a very civil wine leaving zero doubt that you're sipping Grand Cru Chablis from a master producer. Complex layers and layers of mineral, lemon, lime, orange rind and light herb notes. This drank effortlessly and was a perfect pairing with Nita's lump crab cakes and a mix of; Herb Alpert, Dionne Warwick, Elton's Madman Across The Water album and Cat Stevens in our CD player tonight. 13% alc. Only sad note is that Dauvissat has priced their wines out of reach for most of us. Fortunately, I have a stash acquired at more realistic pricing in years past before the 2010 jump.

Almost non-existent nose, but rich, round creamy pure mouthfeel, full of minerality, a bag of rocks, with fulness, and slight tannins in the finish. Great wine, and was my WOTN, but for the low aromas; then went with the Preuses for drinking now. This is young and could go another 10 years not a problem. 10 years on dinner at Conrads.

Popped for my dad's 88th! It was tight so I decanted and returned it to bottle and it sang all night. For what I like in Chablis there is no real flaw. I would say that I find it hard to give it points but it is at least 95+

Decades of Decadence - x7s: Blind. Melon, herbs and licorice, floral and earthy. Really well balanced palate, the is plenty of fruit but the acidity kicks in nicely, giving it a mineral lift. Texture helps give it dimension. Great stuff.

This is reaching its peak, but no rush, this will last easily 10-12 years in great shape. This wine offer a delicate and complex nose of lime, lemon, lavender, white tea, white flower, toasted bread, crushed oyster shell, and wild flowers honey, which intensify while warming. Thought this would be a little more complex on the palate with same profile as on the nose, but this is still showing great tension and a spectacular array of mineral notes (oyster shell, saline, iodine, blue stone) and tremendous length. 94+

For Bastille Day. Pop and poured, drunk over three hours.
On the nose, chalk and oyster shell, lemon curd, white flowers, soil, and marzipan. Deep and toothsome on the palate, yet it all comes across without any sense of heaviness. It's a towering, expansive, yet simultaneously precise, bottle of chiseled soil driven chardonnay just starting to reach maturity. The contrast of power and grace is wonderful. Large scaled, extracted, yet beautifully proportioned with terrific cut and focus that give it a a sense of effortlessness and power without weight. With time it broadens out, gains breadth without losing any of its tension and some orchard fruit emerges to add to the whole. Writing this, my thoughts keep going back to "power and finesse" in one permutation or another. A multifaceted, powerful, yet graceful wine of great harmony. Its incredibly long, mouthwatering finish leaves me wanting more. Drinking at early peak, and barring p'ox I suspect it will go for decades. While I cannot imagine anyone not loving this wine, rock heads really will love this. Another fantastic '07 white burg. 97 pts

Another perfect bottle of this beauty. Plenty of minerality, sea- and oystershell, citrus, steel, ripe pear, chalk and buttery notes too as well as a touch of nuttiness. It's medium-full bodied and has still pretty high acidity. Excellent length. A superbly complex, mineral-driven Les Clos from this great producer. I consider myself very lucky that I could taste this again.

The nose hints of fresh air (ocean side?) My first impression of the palate was a somewhat surprisingly full bodied wine for a Chablis. Lovely minerality/salinity—screaming for raw oysters. A smooth/soft mid palate with a lemon/orange lilt. Delightfully lingering finish.

Big Bordeaux & Burgundy XIII (Rocknroller's (Kevin & Vicki's Place)): Light gold color. PNP, drank 1 glass over an hour. This was a gorgeous Le Clos, with immense purity and elegance. Not an in your face wine by any means, this stands on finesse and grace. A wow nose, with shell minerality, and complex mix of citrus fruits, lemon, meyer lemon, lime, and tangerine; delicate sea air, powdery green fruits and more subtle citrus blossoms. The palate is tart, crisp, focused, and weaves back and forth between the minerality and the fruit. Medium bodied and expansive, lots of that same powdery dry extract and bright citrus; tangerine, lemon-lime, with great tension and long lime infused finish. Drank this before and then beside a '10 Raveneau MdT. The contrast is dramatic stylistically, with the Le Clos showing complexity and finesse and the Raveneau immense power and depth along with complexity and length. The Raveneau was simply on another wavelength.

Wow - this is good stuff. Amazingly youthful color for a nine-year-old bottle. Pear skin, oyster shells and chalk dominate the intense and enveloping nose. Tightly coiled yet with so much goodness awaiting to emerge. Delicious now but with a long life ahead. Seriously good stuff. (94+)

Dinner at Auberge du Pot d'Etain (L'Isle sur Serein - France): Slightly darker and more advanced than I would prefer, or compared to a great bottle opened in Chablis one year ago. Excellent concentration here, with mature lemon, lemon peel and lemon curd. Still very enjoyable.

Scott's Wine dinner at Honeysuckle, a bit of everything! (Honeysuckle, Washington DC): Most of the 07 reds and whites are drinking nicely. More mineral than fruit driven nose, only a hint of white fruits, honey, lanoline, saline and seashell. Medium concentration, very clean and cool, nice clean mineral expression, good acidity and cool clean mineral driven finish. Very consistent with the last bottle, ie not the most structured or concentrated but very harmonious, clean and enjoyable. Nice showing.

Medium gold to an extent that was a bit worrisome at open. Nose a tiny bit muted, but lime, some grapefruit, and beach pebbles. Balanced and full palate with grapefruit notes, a wonderful mouthfeel of richness. Drank well with food. A bit less sprightly than I was expecting, so perhaps a bit advanced. If this is representative of the rest in my cellar, time to drink up, but there seems variability from the rest of the notes here.

PnP. Perfect cork, wet about 1/3rd. Pale greenish yellow. Intense nose (after being open for 30 minutes or so) of seashell, lime, -classic Chablis. On the palate this is spherical - nothing sticks out, everything is in balance. With air it grows more intense and the finish keeps elongating. Doesn't have the exotic character Les Clos sometimes exhibits but is superb. One more bottle - when to drink? 5 more years I think.

Christmas-dinner with friends. Medium golden color. Explosive notes of citrus, ripe pear, chalk, seashells, wet stone and a touch of butter. It's medium-full bodied, dense and almost creamy but without any heaviness and has still pretty high acidity that cuts through the richness. Long and complex finish. Constantly changing in the glass, this is a very fascinating Chablis from this top-producer and Cru.

Wine with a Few Smaller Meals While in Burgundy; 6/22/2015-7/5/2015 (France): Legitimately rockstar wine. Apple and quince with ginger and lemongrass. This was popped and poured, so I asked for a carafe, and this kept expanding and lengthening for the next 2+ hours as it also got closer to room temp. Just entering its peak drinking window, I'd expect this will be even better in 5 years, and even better yet in 10.

Decanted and drunk over 3 hiurs, very tight at first. Chalk and seashells, lemon curd, bright acidity, and hugely density. This is hugely powerful, yet poised. Tightly coiled, mouthwatering and precise. At this point it is about potential, and save premix fears, I anticipate glory in a decade. 95+

Initially this was closed on the nose, yet it began to blossom and expand in the glass with mineral notes up front, followed by sour apple, apricot, wet slate and blanched almond. On the palate, it was soft, supple and waxy with flavors of peach skins and mineral-laden stone. A core of brisk acidity added balance and verve. Tart apple lingered on the finish, maintaining that satisfying waxy tone. It is youthful and fun with so much potential.

Developing quite slowly, but this is picking up nice weight and fullness, still showing fresh floral, mineral and iodine character, with just a bit too much heat. Lots of air will not hurt this. Drink or hold many years.

A lovely lemony gold colour. Cellared since release. Smells of seashells (mineral, saline) with a lovely buttery, citrus undertone; taut but lovely. I'm surprised how open this is; sherbet, butter, lemons, herbs, minerals it leads you into creamily into the explosive finish, as it expands in your mouth. Classic, brilliant - it will be extraordinary.

Decanted two hours, consumed over next two. Great nose of lemon, wildflower. Excellent palate of citrus notes, lemon, and a touch of bitter grapefruit peel that I liked but bothered my wife. Good depth of color for a Clos, and surprisingly generous despite its lively acidity. Floral, saline, mineral, citrus, just a bit of oiliness. Considerable heat throughout, but long and generally well balanced. Like the Dauvissat-Camus, this walks the fine line between richness and austerity. Nice now with a little air and not too chilled, but worth cellaring for years.

This wine needed some time in decanter. But after 2 h it was marvelous. I will revisit this wine again once a year, because this wine will offer a pleasant journey over the next 10 - 15 years. A clean and pure example of Chablis Grand Cru at it's best. But I must admit that Raveneau Les Clos 2007 is slightly better. 94+ to 95 points, but with great potential for even higher score in a few years.

Celebrating Mister Fister's birthday (Maude's Liquor Bar, Chicago IL): Nose: While this is on the tighter side, there are very impressive and deep tones of pears, white fruits, acacia flowers, gun flint, and crushed rocks. There is a lightness to the nose, but it is far from faint.
Taste: Light bodied with very noticeable medium/high acidity. There is a refreshing quality to the acidity while it's very sharp at the same time. The structure is a bit imposing, but there are gorgeous tones of crushed rocks, gun flint, minerals, acacia flowers, and some bits of pears.
Overall: This was only starting to open up. This is a very serious Dauvissat that is nothing but impressive. It definitely could use a few more years to fully show itself, but if one was to open this now, air is definitely needed. I really hope to try this again down the road as it is a thing of beauty.

Opened at L'Arpege. Very light yellow in color, nose of fresh citrus fruit and slightly stony. Palate is surprisingly full for a 07 Chablis, with pretty ripe fruit, more apprachable than the 08 counterpart now and with loads of minerals at the end, good now but still needs a lot of time.

This bottle was far more ready to drink than the last one with some air. About 1.5 hours in, it just sang with rich honey, limestone and lemon zest. The weight picked up some heft and just became an absolute delight to drink.

Drank the 05 and 07 Dauvissat Les Clos side by side. Both are still reserved, but we let them sit as we drank our reds, and they really blossomed at room temperature over a few hours. Good chablis, and always a pleasure to drink.

Two Burgundy lovers and their weekend in Napa Valley (SF/NAPA): Pinpoint pure yellow fruit with zinging acid running along the backbone. Tons of minerality rushing all over the finish and picks up a bit of shell on the backend. Definitely needs time as the fruit lifts and that chalk balances in but an enjoyable drink now.

Decanted and poured, this wine showed outstanding depth and clarity. The aromatics show a precise, nuanced mix of oyster shell, lemon zest, sandstone, slate and floral notes that are youthful, vibrant and balanced. The color is a vibrant light yellow that is correct for the wine age. The light/medium bodied palate is well defined and provides impeccable balance and precision. Acidity balances the forward palate components on the finish. This will benefit from additional bottle age. Although youthful, the wine displays all its richness and intensity within a ethereal quality. This wine needs an "I love it" choice. (Dauvissat-Camus, Imported by Grape Expectations)

Five Days in Paris; 11/17/2009-11/21/2009: Second time I've tasted this and it was actually a bit broader and less compressed than the first time. Still, classic in every way-a salty, lean, laser of a wine. Having just tasted the '02, I don't see this turning out as relatively fat as that wine, but it should evolve more along the lines of the 2000. Great young Chablis.

OK, so it may be 20 years too young, but it was on the list and we were dying to try it. Pale and shy at first, but gradually developed some saline and lemon peel aromatics. This was surprisingly accessible for its age but clearly seemed (as one person noted) "compressed into a very small space". At this point, it does not really flash all of its Chablis credentials. Incredible intensity and explosion of flavor for a wine that is so light on its feet now, like a great red Burgundy in that sense, although I'm sure it will gain weight over time. One colleague noted an almost meaty, bouillon brothiness. Rapier-like acidity. This will surely be outstanding, but leave it for another day.

Tasting Group Dinner - Burgs (Heidi's & La Belle Vie, Minneapolis): Tight, but still explosive nose of lemon, mineral, and grapefruit. Much less closed on the palate than I expected. Marvelous tension. Bright, long, zingy, salty, and amazingly complex and pure. Pungent minerality. Waves of electric fruit. One of the best Chablis I've had, and my WOTN. Wednesday Night Burgs: One of Craig's contribution and this was extraordinary. Soaring nose dominated by citrus fruits but delivering layers of complexity. Even better in the mouth with a steely, jazzy personality. Concentrated, mouth-coating fruit balanced deftly by structure/acidity. Flavors really ping the taste buds and the finish seems to go on forever. For me this was WOTN and one I will need to seek out.

In such an amazing place. A perfect bottle. There is youthful power and verve and an incredible depth and seamlessness of vibrant fruit layered with minerality, pastry cream, roasted hazelnuts and an ocean spray-like salinity. It’s texturally captivating, wrapping around the palate with killer density without weight. Racy acids balance its richness and secondary nuttiness and it finishes forever. White burg at its finest.

It's toothsome and intense yet only mid plus weighted with plenty of dry extract delivered with a clarity and focus like drinking mineral water. Intensity and depth without heaviness on the palate with more of the same fruit, chalk, and a sense nuttiness on the back end. Finishes mouthwateringly clean and fresh. Complicated and contemplative. Very long. This is drinking very well, but I hope it is a bit more advanced than my remaining bottles. I will try another one soon and see.

Dauvissat's 2007 Clos needed some air to come around, initially a bit backward with a hint of funk, but with time was an excellent Chablis sporting a beautiful nose of lemon curd, beeswax, and actual oyster. The palate is bright and savory with plenty of saline minerality and both depth and breadth to the persistent flavors of citrus and stone. This is elegant and even understated but absolutely delicious. Should continue to drink well for awhile.

On the palate, this has terrific density and dry extract, yet comes across without any heaviness. Iron fist in a velvet glove Chablis style. Chalky and deep, with mouthwatering freshness on the palate, with more of the same citrus notes, and nuttiness that adds complexity. Archetypal Chablis drinking at peak with plenty of time in hand. I really love Dauvissat’s 07’s. Les Clos is totally in the zone showing incredible power and striking intensity flaunting its signature crushed oyster shell minerality and sea spray salinity with yellow fruit and intriguing flavors of beeswax and lavender honey. The palate shows superb integration and excellent weight and midpalate depth, with such a regal texture and mouthfeel. Its focused finish just goes on and on. A stunning Les Clos that has a long life ahead ✨

A touch of must on the nose but in a good way. A very savoury wine with huge latent power. It seemed more minerally than fruity and with some oily viscosity. I appreciate that it is a real treat to try an aged GC Chablis from a top producer, however if I am honest, this is more a wine that I respected that enjoyed. In my estimation this needs another 5 years ++ to develop additional complexity.

"Good bottles" (67 Pall Mall): This was absolutely gorgeous! Hard to describe, as great wines often are, it was served slightly too cool but quickly got into its stride. The nose was like a compelling green-yellow cloud, smelling entirely of itself, then on the palate nicely mature, with yellow apple, honey, lemon cream, mouthwatering but smooth acidity and an oily, sensual quality. I'd been sitting on this for a while, waiting for the right occasion, and delighted it showed so well.

Beautifully mature mineral nose displaying succulent ripe yellow fruit, candied lemon peel, lemon curd, light honey, beeswax, saline, oyster shell, oyster jus and crushed rocks. Fully integrated palate, nicely layered succulent yellow fruit, bright acidity, strong crush rock mineral, and a long ripe yellow fruit driven finish with honey and oyster shell at the end. The overall expression is at least five to ten years more advanced than the 07 Raveneaus. It is drinking really well, though slight more advanced than expected. Better to drink up!

I really think using the Riedel (red) Burg glasses had a very positive impact on the aromatics & flavors both. Just killer! And, I have one more that could be left alone till its 20th. This is great chardonnay by any measure. 13% alc. Thrilled to own it!

Stunning young beauty, bright yellow-gold, reticent at first, then opened up showing stony-chalky minerals, peach pit, yellow apple, ripe lemon. Silky, great concentration and richness, typical GC density, with beautiful tangy and long finish. Good now but could benefit from 8-10 years. Great with the O toro sashimi. Oo Toro in Walnut.

The lack of weight caused several of us to call this a village(!!). Jason commented that on opening this was showing all the tell tale signs of a typical Dauvissat, but I got none of them. It's possible I just haven't had enough Dauvissat to identify it properly. Again, I should not have poured it into the glass that previously had the Bornard.

During a dinner with friends. In a nice spot - vibrant, balanced and nice acidity. Probably a bit of upside with 5-10 more years, this felt quite young (side by side a Ramonet Batard 95).

Chris' Birthday Dinner (Summer Palace, Regent Hotel): This was smashing. We had a lack of white wines tonight, but the quality of the bottles we had very much made up for the lack of quantity. Tight and unyielding when first poured, it opened up into a very classic Chablis nose of flinty mineral, dried earth and subtle white fruit and citrus zest. Quiet, but compelling. The palate was really, really solid. An archetypal Les Clos, this was deep and powerful, yet wonderfully cut and defined at the same time, with an inexorable beam on mineral lasering through absolutely transparent flavours of white fruit and citrus notes. There was that beautiful 2007 crystalline purity to it, yet the depth and breadth of the wine, with its clear Grand Cru weight and fleshiness kept it from ever being lean or mean. There was a lovely sense of acidity woven into the body of the wine, yet this was so well integrated that one barely notice it. Fantastic finish too, deep, long and powerful, with a lovely chalky minerality that coated every corner of the backpalate. Absolutely superb. I liked it even now, but it will continue to get better over the next few years. Strangely for a top-drawer 2007 though, I do not think this will be one for the absolute longest term.

6th of 12, opened 30 minutes, perfect cork and level, maybe a tad better than December bottle, clean and with good typicity on the nose, but spoiled on the palate by intrusive woody/nutty flavours uncharacteristic of Chablis coupled with touch of flabbiness at expense of flinty minerality, not a bad drink just not what it should be. VG+ (16.5).

Similar notes to the last one, this seems to be a little more round and voluptous. Excellent length and minerality. Superb. Opening up substantially with some more air. Fresh, mineral driven but round at the same time, with excellent tension.

Cork was a bit soft but perfect fill. Color is medium gold; a bit darker than I like to see in Chablis. Nose is classic seashell and limestone with citrus (lemon/lime) notes. Initially this was quite tight on the palate but with an hour or so of air, it developed a lovely silky mouthfeel. Good long finish. Not a great Clos, but for the vintage and at age 12, quite lovely. I would say drink up if you still have any.

PnP in Riedel Montrachet glasses. This shows an age appropriate medium light crystalline gold color. At almost age 11 not a hint of premox. This drank super fresh tonight. My cork was soaked a little over half way. As others have mentioned the nose is a smidge reluctant but I still detected a subtle mix of citrus and seashore aromas as the night progressed. The palate hits you with mouth coating layers of minerality and citrus but is never overbearing. In fact, this strikes a perfect balance between power & intensity vs. elegance & finesse. This is a very civil wine leaving zero doubt that you're sipping Grand Cru Chablis from a master producer. Complex layers and layers of mineral, lemon, lime, orange rind and light herb notes. This drank effortlessly and was a perfect pairing with Nita's lump crab cakes and a mix of; Herb Alpert, Dionne Warwick, Elton's Madman Across The Water album and Cat Stevens in our CD player tonight. 13% alc. Only sad note is that Dauvissat has priced their wines out of reach for most of us. Fortunately, I have a stash acquired at more realistic pricing in years past before the 2010 jump.

Starts off a little big and round. Not precise. But with just a little air the acidity starts to jump in. On the bigger side with a fuller mouth feel but absolutely wonderful. Very thankful this was not premoxed as it is an amazing wine.

Great wine, and was my WOTN, but for the low aromas; then went with the Preuses for drinking now. This is young and could go another 10 years not a problem. 10 years on dinner at Conrads.

Popped for my dad's 88th!
It was tight so I decanted and returned it to bottle and it sang all night. For what I like in Chablis there is no real flaw. I would say that I find it hard to give it points but it is at least 95+

This is reaching its peak, but no rush, this will last easily 10-12 years in great shape. This wine offer a delicate and complex nose of lime, lemon, lavender, white tea, white flower, toasted bread, crushed oyster shell, and wild flowers honey, which intensify while warming. Thought this would be a little more complex on the palate with same profile as on the nose, but this is still showing great tension and a spectacular array of mineral notes (oyster shell, saline, iodine, blue stone) and tremendous length. 94+

For Bastille Day. Pop and poured, drunk over three hours.
On the nose, chalk and oyster shell, lemon curd, white flowers, soil, and marzipan. Deep and toothsome on the palate, yet it all comes across without any sense of heaviness. It's a towering, expansive, yet simultaneously precise, bottle of chiseled soil driven chardonnay just starting to reach maturity. The contrast of power and grace is wonderful. Large scaled, extracted, yet beautifully proportioned with terrific cut and focus that give it a a sense of effortlessness and power without weight. With time it broadens out, gains breadth without losing any of its tension and some orchard fruit emerges to add to the whole. Writing this, my thoughts keep going back to "power and finesse" in one permutation or another. A multifaceted, powerful, yet graceful wine of great harmony. Its incredibly long, mouthwatering finish leaves me wanting more. Drinking at early peak, and barring p'ox I suspect it will go for decades. While I cannot imagine anyone not loving this wine, rock heads really will love this. Another fantastic '07 white burg. 97 pts

Another perfect bottle of this beauty. Plenty of minerality, sea- and oystershell, citrus, steel, ripe pear, chalk and buttery notes too as well as a touch of nuttiness. It's medium-full bodied and has still pretty high acidity. Excellent length. A superbly complex, mineral-driven Les Clos from this great producer. I consider myself very lucky that I could taste this again.

Not an in your face wine by any means, this stands on finesse and grace. A wow nose, with shell minerality, and complex mix of citrus fruits, lemon, meyer lemon, lime, and tangerine; delicate sea air, powdery green fruits and more subtle citrus blossoms. The palate is tart, crisp, focused, and weaves back and forth between the minerality and the fruit. Medium bodied and expansive, lots of that same powdery dry extract and bright citrus; tangerine, lemon-lime, with great tension and long lime infused finish. Drank this before and then beside a '10 Raveneau MdT. The contrast is dramatic stylistically, with the Le Clos showing complexity and finesse and the Raveneau immense power and depth along with complexity and length. The Raveneau was simply on another wavelength.

Had a few bottles of this and two have been corked. This was wonderful with a creamy mouthfeel and a minerality that was not flinty but was like melted stone wrapped in vanilla and sweet stone fruit. Top notch!

More mineral than fruit driven nose, only a hint of white fruits, honey, lanoline, saline and seashell. Medium concentration, very clean and cool, nice clean mineral expression, good acidity and cool clean mineral driven finish. Very consistent with the last bottle, ie not the most structured or concentrated but very harmonious, clean and enjoyable. Nice showing.

PnP. Perfect cork, wet about 1/3rd. Pale greenish yellow. Intense nose (after being open for 30 minutes or so) of seashell, lime, -classic Chablis. On the palate this is spherical - nothing sticks out, everything is in balance. With air it grows more intense and the finish keeps elongating. Doesn't have the exotic character Les Clos sometimes exhibits but is superb. One more bottle - when to drink? 5 more years I think.

Christmas-dinner with friends. Medium golden color. Explosive notes of citrus, ripe pear, chalk, seashells, wet stone and a touch of butter. It's medium-full bodied, dense and almost creamy but without any heaviness and has still pretty high acidity that cuts through the richness. Long and complex finish. Constantly changing in the glass, this is a very fascinating Chablis from this top-producer and Cru.

Wine with a Few Smaller Meals While in Burgundy; 6/22/2015-7/5/2015 (France): Legitimately rockstar wine. Apple and quince with ginger and lemongrass. This was popped and poured, so I asked for a carafe, and this kept expanding and lengthening for the next 2+ hours as it also got closer to room temp. Just entering its peak drinking window, I'd expect this will be even better in 5 years, and even better yet in 10.

Initially this was closed on the nose, yet it began to blossom and expand in the glass with mineral notes up front, followed by sour apple, apricot, wet slate and blanched almond. On the palate, it was soft, supple and waxy with flavors of peach skins and mineral-laden stone. A core of brisk acidity added balance and verve. Tart apple lingered on the finish, maintaining that satisfying waxy tone. It is youthful and fun with so much potential.

2013 editon of En Primeur - Kelly and Kevin’s excellent adventure; 3/26/2014-4/1/2014 (Mostly in Bordeaux and a night in Paris): Very mineral driven nose, seashell, limestone, wet rock, oyster brine, butter and honey. Medium concentration, strong mineral presence and nice clean finish. Neither most precise nor concentrated but still very well drinking Dauvissat clos.

A lovely lemony gold colour. Cellared since release. Smells of seashells (mineral, saline) with a lovely buttery, citrus undertone; taut but lovely. I'm surprised how open this is; sherbet, butter, lemons, herbs, minerals it leads you into creamily into the explosive finish, as it expands in your mouth. Classic, brilliant - it will be extraordinary.

Decanted two hours, consumed over next two. Great nose of lemon, wildflower. Excellent palate of citrus notes, lemon, and a touch of bitter grapefruit peel that I liked but bothered my wife. Clean on the finish. Great counterpart to food, interesting on its own, has many years left as long as the premox thing does not hit.

Good depth of color for a Clos, and surprisingly generous despite its lively acidity. Floral, saline, mineral, citrus, just a bit of oiliness. Considerable heat throughout, but long and generally well balanced. Like the Dauvissat-Camus, this walks the fine line between richness and austerity. Nice now with a little air and not too chilled, but worth cellaring for years.

This wine needed some time in decanter. But after 2 h it was marvelous.
I will revisit this wine again once a year, because this wine will offer a pleasant journey over the next 10 - 15 years.
A clean and pure example of Chablis Grand Cru at it's best. But I must admit that Raveneau Les Clos 2007 is slightly better.
94+ to 95 points, but with great potential for even higher score in a few years.

Pale-golden yellow, initially rather toasty (unusual) the much more mineral, yellow flower. Much more better is the tasting, round, medium-full body, well balanced acidity and long final.

Celebrating Mister Fister's birthday (Maude's Liquor Bar, Chicago IL): Nose: While this is on the tighter side, there are very impressive and deep tones of pears, white fruits, acacia flowers, gun flint, and crushed rocks. There is a lightness to the nose, but it is far from faint.
Taste: Light bodied with very noticeable medium/high acidity. There is a refreshing quality to the acidity while it's very sharp at the same time. The structure is a bit imposing, but there are gorgeous tones of crushed rocks, gun flint, minerals, acacia flowers, and some bits of pears.
Overall: This was only starting to open up. This is a very serious Dauvissat that is nothing but impressive. It definitely could use a few more years to fully show itself, but if one was to open this now, air is definitely needed. I really hope to try this again down the road as it is a thing of beauty.

Opened at L'Arpege. Very light yellow in color, nose of fresh citrus fruit and slightly stony. Palate is surprisingly full for a 07 Chablis, with pretty ripe fruit, more apprachable than the 08 counterpart now and with loads of minerals at the end, good now but still needs a lot of time.

This took a good couple of hours to get going. Good weight and and nice balanced acid, not overpowering in any way. After a couple of hours it showed some really beautiful fruit, lemon and slight saline touches. Length a standout, a super wine that just needs more time in bottle. Will be stunning in 10 years.

Decanted and poured, this wine showed outstanding depth and clarity. The aromatics show a precise, nuanced mix of oyster shell, lemon zest, sandstone, slate and floral notes that are youthful, vibrant and balanced. The color is a vibrant light yellow that is correct for the wine age. The light/medium bodied palate is well defined and provides impeccable balance and precision. Acidity balances the forward palate components on the finish. This will benefit from additional bottle age. Although youthful, the wine displays all its richness and intensity within a ethereal quality. This wine needs an "I love it" choice. (Dauvissat-Camus, Imported by Grape Expectations)

Tasting Group Dinner - Burgs (Heidi's & La Belle Vie, Minneapolis): Tight, but still explosive nose of lemon, mineral, and grapefruit. Much less closed on the palate than I expected. Marvelous tension. Bright, long, zingy, salty, and amazingly complex and pure. Pungent minerality. Waves of electric fruit. One of the best Chablis I've had, and my WOTN. Wednesday Night Burgs: One of Craig's contribution and this was extraordinary. Soaring nose dominated by citrus fruits but delivering layers of complexity. Even better in the mouth with a steely, jazzy personality. Concentrated, mouth-coating fruit balanced deftly by structure/acidity. Flavors really ping the taste buds and the finish seems to go on forever. For me this was WOTN and one I will need to seek out.
