Ripe and baked apple with toasted walnuts, baguette, and faint butterscotch, this is rich and dense, while still vibrant enough. Much better vs my previous bottle from a year ago, but not as good as it was a decade ago.

This wine had a gold center and medium effervescence. The medium intensity nose put forth hazelnuts, lemon, vanilla, and minerals.
In the mouth, this wine was flavorful and bold with great richness, firm acidity, and great length.
I wouldn't say this was oxidative but this bottle certainly tasted fully mature. It was drinking nicely but did not have the class, freshness and complexity of the 1996. Drink up

Tasted blind, this wine had a deep yellow/light gold center and a medium intensity mousse. The medium intensity nose put forth dried apricot, toasted vanilla, citrus and mineral notes.
In the mouth (and in the nose), there was some oxidation at first but oddly, this appeared to dissipate with air. It was relatively light bodied at first but picked up intensity and length with time in the glass.
This bottle started out in the 91-92 range but was pushing 95 after a couple hours of air. Drink up but don't rush the pace when you do!

Two wines from Martin: Clean but deep lemon gold colour. Minimal bubbles. Complex, lifted bouquet. Perfumes of cinnamon and other baking spices, pears poached in vanilla and caster sugar, almond croissants, preserved citrus rind, butterscotch, dry autumn leaves and small white flowers. Also warm earth and traces of wet limestone. On palate, poised and beautifully balanced. Multi-layered and complex. A touch of caramel, hints of dried leaves and preserved citrus fruits hints at the 25 years of age. Baked apple pie with cinnamon. Toasty autolytic and mineral notes. Seamless acidity. Some savoury and almost earthy elements. I have - perhaps against the majority view? - always preferred the 1995 Winston to the excellent 1996 and this bottle reminded me why. Superb. Seemingly only recently on its optimal drinking plateau. I would drink over the next 10 years or so. Thanks Martin!

The 1995 Pol Roger Winston Churchill is showing very well, nicely matured and nuanced with good level of freshness left. Arguably better than 1995 Krug? Tasted blind – A pungent array of nutty and rich lemon and raspberries. Quite muscular and ripe with generous autolytic and chalky notes. Someone gave away it was a 1995, but I would have guessed 10 years older due to its mature profile. Pinot Noir driven Grand Marque? Excellent. (90/100)

Tasted blind – Very gentle effervescent and deep amber colour. The nose offers a complex flavour of ripe yellow fruits, red berries, honied apricot and caramelised popcorn. Close to fully mature if not already. Bold character of Pinot fruits with ample toasty flavours and ripe fruits. Champagne, 1988, Blend of Chardonnay and Pinot Noir but mostly Pinot Noir? Most 1995 Champagne lack acidity and are either close or fully mature. I would drink up most 1995 Champagnes sooner than later. (92-93/100)

Satan vad gott! Vilket vin! Vilken Champagne!!!

'95/'96 Champagne Celebration (Casa Gill): Very good, but drank more like an 85 than a 95. The bubbles were extremely soft. However, absolutely stunning nose with a touch of sweet tangerine, coconut, caramel and nice toast. Great acidity, and everything on the nose comes through on the palate..richly textured and just wonderful.

Entering its first phase of real maturity. Reminds me a bit of a great Meursault with age, with the beeswax, honey and nutty, roasted notes I get on the nose, along with sweet tropical fruit mix, some bruised apples and apple pie too. On the palate just as good. First wave of maturity showing, again honey and sweet tropical fruits, white fruits, fresh bread, lemons and nuts. Lovely roasted overall tones, with good acidity, length and balance. Creamy fruits and minerals as I finish the last glass from this fine bottle. Really good, and will be great with 10 more years, as there is allot still going on (95 – 96+)

Not the best bottle of this -- some abnormal funk on the nose. Darker and seemingly more advanced. On the palate more oxidation than there really should be. Toast, carmel, butterscotch. Nice flavors but the oxidation is dominating. Heat damage?

Champagne Showdown: 1995 v. 1996 (Atera): Savoury and bready nose, buttered popcorn. Baked buns. Oxidizing much faster than the ‘96 in the next glass. Palate is still delicious and has nicely developed apple and orchard fruit. Better on palate than nose, but a mildly off bottle. In better condition I would guess 93+ as the 1996 in the next glass is kicking ass.

Wines from the HDH Auction (Tru, Chicago IL): Nose: The nose is well balanced and layered with baked apples, brioche, baked pears, biscuits, honey, and loads of warm breads. There is excellent depth with a roundness to the tones.
Taste: Medium bodied with medium+ acidity. There is a maturity to the feel with baked apples, brioche, baked pears, honey, and a lot of warm bread.
Overall: This is drinking perfectly right now. It shows off its maturity while still having good quality to the fruit.

Birthday lunch for Mike and Andrew: Absolutely superb! A beautiful, complex bouquet, showing appropriate, attractive evolution. A nose of grapefruit, butterscotch, pear, peach, honey, brioche and minerals, with hints of dry autumn leaves. Very fresh and precise on palate but complex and multi-layered with flavours reflecting the bouquet and a distinct dried pineapple note. Showings its evolution with a slightly maderised edge (people were guessing that this Champagne was from the early 1990s), but with excellent acidity. This bottle could have been cellared for many more years.

A lot of fresh mushrooms on the nose, yeasty and Pinot-driven like a Bollinger RD, a high and fresh acidity and a long finish. Very different from the the more “classic” Winston Churchill 1996 but a very good Champagne.

The Winnie is always one of my favorite champagnes, and this one did not disappoint. It's aged enough so that the acids have integrated perfectly, but not so much that it's getting the apple-cider notes of really old champagne. Very fresh and refreshing. I think this is a perfect time to drink this. It was a little too cold at first, but as it warmed up a little, layers of flavor appeared, but it was delicious at all temperatures.

(At L'Escalier in Palm Beach.) Beautiful, balanced, and multifaceted Champagne. Medium-bodied in style, biscuity on the nose at first, with some lime and other citrus showing up on the palate -- all on a refreshing, even biting, rail of acidity. Small, persistent bead and smooth mousse. After a glass or two, a surprising note of raspberry appears from nowhere and persists the rest of the evening. The solid mid-length finish rounds out what will likely become a perennial favorite in our household.

A dark straw with some yellow color. The nose is simply amazing, buttery and complex. On the mouth it´s like eating a very fine toast with melted butter on top. Great structure, body. AD Blind Tasting- Not tasted blind. The first thing I got from the nose was some yeast, but I didn't get much after that frist whiff, nor on the palate. Some minerality hit me, as well. The green apples, which also dominated the palate. I mean, big green apples. Some weight on this, as well. Lots of acidity. Could probably last for a long time, and a great alternative high end champagne for those who want more fruit and weight. This didn't wow me, though. 92+

AD Co. Tasting w/Bloechl (Brown Jug-Upstairs): Light golden in color, with gorgeous mousse and perilage. Loads of ripe green apple on nose with a bit of baked bread and fresh yeast. On the palate, definitely not as "Brut" as other Champagne houses, probably bordering "Extra Dry" in style. Even more green apples, hint of minerals and crisp, refreshing acidity.

A nose that that wasn't willing to give a whole lot away, with just some simple citrus aromas and a small level of toast. The palate is round and ripe with a rather delicious creamy mouth-feel but no sign of the depth or length that I would expect of a Marque Champagne.

Spring 06 TAC Vendor Sale (Tokyo American Club): Nose is still young and tight, but already shows the Churchill punch and size. Typical apple aromas combine with a little more mineral than I am used to in this cuvee. And that’s about it for the nose. Great freshness and tiny bead texture on the palate with some nut and buttery flour that then combine with a little citrus on the finish to stay fresh. Tiny hints of yeastiness and the deep sweet light red fruit is there in wispy imaginary bits but this is still very, very young. Promises to be very good as well, but to evolve much more slowly than some of the more forward ‘95s. Very nice wine at the price. ($92 at bottle lot)

The solid mid-length finish rounds out what will likely become a perennial favorite in David's household.

Beautiful, heavy yellow colour, yeasty nose and a taste that lingers for minutes - an excellent champagne!

My first Sir Winston, but not the last. In perfect harmony. A little closed in the beginning though. But then - yeast, toasted bread, toffee, caramel, and lots of fresh green apples in the mouth. Sharp yellow in color and medium fine bubbles.

Rich orchard fruit with so much concentration and lithe, dancing textures. Great now.

Pol Roger SWCathon: Toast, mushroom and a touch of yeast. Good acid and flavour, but doesn’t measure up to the depth and structure of the 1996. Still a good wine.

prachtige champagne, mooi gerijpt en heeft daardoor wat meer inhoud en diepgang, fris met mooie zuren, strak en droog, hele kleine belletjes, zeer stijlvol

This wine is terrific. A compelling balanced, sweet earthy, ripe, small bubble wine that gets better each time I taste it.

In Celebration of Nancy & Dayton Smith's 22nd Anniversary, at Michael's Genuine Food, The Design District, Miami. I really enjoy the Pol Roger style, and bought this extravagant bottle to experience its ultimate incarnation. Good dry styled Champagne. My cup of tea(champagne)!

A dark straw with some yellow color. The nose is simply amazing, buttery and complex. On the mouth it´s like eating a very fine toast with melted butter on top. Great structure, body. Some white trouffles come to mind too. An endless finish leaves a an extraordinary impression. Best champagne of the night by a mile.
