Friday Group Brown Bag Tasting (Eagle Brook CC): 2009 base, disgorged September 2013 at 5g/L, 60% pinor noir and 40% chardonnay. Lovely mature golden color with a medium mousse. Red apple, marshmallow and wet dough notes. Short bead, with apple and vanilla pastry cream flavors. Showing very well at this stage.

Retail $45. 60% Pinot Noir, 40% Chardonnay. I bought four bottles of this wine from Cinderella.com, Wine Library's (of Gary Vaynerchuck fame) flash site way back in early 2014. Amazingly, perhaps, this is only the third bottle consumed in those nearly nine years. I have to say that I am glad I waited as this has developed into that "older champagne" kind of vibe that I love so much. Straw, almost yellow in the glass with wonderful citrus, golden delicious apple, and a whole bunch of yeasty yumminess on the nose. Whoa. The palate is initially fruity, but that autolytic aspect takes over almost immediately and it is wonderful. Yeasty, tart, fruity, all elements are there in spades and the finish is lengthy and spectacular.
Retail $45. 60% Pinot Noir, 40% Chardonnay. While this is not my favorite producer in Champagne with the name "Paillard" attached to it, it is a Grand Cru from my favorite town in the region, Bouzy. It has been an amazing four years since I last opened a bottle of this wine, but it is doing quite well, thank you very much. Bright green apple with some white peach as well, buoyed by some fresh biscuity notes on the nose. The palate is balanced with that fruit, the yeasty goodness, and an intense tartness. Really close to a Whoa. Really close.
Tasted multiple times over the course of about two hours. Gorgeous stuff. Rich, textured, yet also balanced and full of minerally goodness. Lots of citrus zest along with crunchy red fruit. Crazy good QPR.

Very sharp and shrill when first opened. Placed a stopper on it and popped it back in the fridge. Two days later - much better. It was more harmonious - rich fruit paired with good acidity. Last 750ml from a 3 pack purchased in mid -2013. Probably the 2009/2010 base?
Though this was good, previous bottles showed much better.

60% Pinot Noir, 40% Chardonnay. I tried to stop by this winery when I was in Bouzy this week, but alas, they would not see me without an appointment. Next time I will have to think ahead as this was a fabulous bottle from my favorite town in Champagne. Brioche, roasted almonds, and a touch of citrus. Wow. Excellent. Driven by apple and citrus and less by autolysis than many NV champagnes. The result is fresh and vibrant. I like biscuity champagnes too, but I find they tend to taste alike.

On nose: medium+ intensity, citrus: lemon, stone fruit: apple, biscuits with a hint of bread. Very pleasant, elegant but not very complex. The wine is still developing.
On palate, dry, medium+ flavour intensity, high acidity, medium+ alcohol, bubbles are fine on palate, medium body. All aroma could be found on palate with bitterness flavour. Medium finishing. Just like a man, standing firm on stage, not very charm but you will respect him because of his dignity.
This is a good wine as a Grand cru champagne in this price range($290 HKD). Keep one in your cellar whenever you got a party with leasure. This wine can be drunk now and not too much improvement for aging.

Great nonvintage Brut for the price (about $40). Aromas of saline, chalk, seashell, with apples and lemons. Crisp and clean and tart and lively with salty almonds and chalk on top of green melon and limes. Pretty elements of nuts and honey. Brisk style but nice depth.

May 2015 disgorgement - based on 2010 and 2011. Beautiful champagne color with very fine bubbles. Inviting nose of white flowers and brioche. Assertive and energetic on the palate yet very elegant with sour green apple and bitter almond notes. Long and refreshing. Excellent NV.

Third time tasted. This time not coming across quite as rich, though it was cold (direct from ice bucket), pop and pour and may have been a slightly newer disgorgement. Somewhere in the middle of the road stylistically between rich and lean. The nose features lots of green apple, mineral, lime, lemon, flint and a touch of coffee bean. Palate has well measured dosage, feeling like 8-9 g/l and high biting malic acid. A bit young, this NV could easily be one to age and I'm holding some for this reason.

K&L Spring Champagne Tasting (K&L Hollywood): Very pale straw in color. Richer still than the Marguet and Launois that preceded it. Citrus on the nose and some nutty notes. Soft, fluffy mousse. Hint of tang on the finish, which is refreshing but shows a litle pepper/heat.

Clear, light straw color with little bubbles. Chalky minerality on the nose with lemon zest and yeast. Lightly floral with a hint of honey. The palate is unctous and complex with high acidity and minerality. Nutty and yeasty with lemon curd and ripe lemon. I love this wine every time I open a bottle!

Very similar notes to the last bottle. Simply put, this is an amazing buy for $35. You'd be hard-pressed to find a better Grand Cru NV for the same money, in my opinion. And you can certainly pay a LOT more for much worse NVs from some of the bigger houses. Fantastic (and crowd-pleasing) Champagne.

Another solid showing. Nose is rich leaning with notes of ginger, candied lemon peel, cantaloupe and brown sugar. The palate balances high, tart, seemingly malic acid against excellently measured dosage (feels like 9 g/l). Finish is medium in length. Solid wine. Could still age out a little longer yet to bring this wine into a little more balance and bring out the oxidative richness.

Nose: The nose evokes the thought of a morning bakery along with red and green apples, mineral tones, warm breads, white florals, and baking spices.
Taste: Medium/full bodied with medium+ acidity. There is a real freshness and distinctiveness to the feel with red and green apples, warm dough, baked breads, minerals, and baking spices.
Overall: This is a lovely champagne. It's very well balanced with a tasty early morning bakery quality that is very attractive.

Nose: The nose is distinctive, balanced, and succulent with green and red apples, pears, berries, and orchard fruits against the backdrop of an early morning bakery. The nose shows a great dichotomy between a yeasty style and a more fresh fruit style.
Taste: Medium/full bodied with medium+ acidity. The acidity is very refreshing, but still quite there with green and red apples, lots of baking spices and yeasty tones, berries, and some pears.
Overall: This is from a 1/14 disgorgement. One has to love that they give all the information that one would want. This is a lovely NV Champagne that has a ripeness to it while also showing a very yeasty/bakery quality too.

For the $35 I paid per bottle, this is a very good, crowd-pleasing grower Champagne from Pierre Paillard's grand cru holdings in the 27 ha the domaine has in Bouzy. Everything seemed to be in balance. Lots of lovely fruit notes, and not too much bready-yeasty-ness (although it's definitely present and quite lovely), with a very fresh and precise finish that nicely washes away some of the broader flavors you get in the middle. Though it has 5 g/l dosage (btw, I love that they give you grape %, disgorgement date and abv right on the back label), I wouldn't have been surprised if you told me it is 7-9 … perhaps pointing to the ripe fruit that was harvested (?). Anyway, a great buy and recommended for the price point to please a range of tastes/experience with Champagne. Everyone really enjoyed it today.

(PR011309 - have not been able to discern what that means) Nose is fairly rich yet quite young. Shows abundant pastry dough, grated ginger, brown sugar, orchard fruit, pastry, lemon and butter. Palate has perfect balance for me. Feels like 7 - 9 g/l of RS balanced against loads of fresh seemingly malic acid. Finish is medium plus built on brown sugar, pastry and tart green apple skins. While pleasurable and on the young side today I expect this should improve for at least 3 - 5 years. Don't know the blend from this disgorgement, but the latest is '09 - '08 which wouldn't surprise me. 91+ today. Could pick up another point or two in time. Good value.

First reaction was that it was much too yeasty, but that settled down. It's still a yeasty style, but it's appealing. I had two mediocre (at best) grower champagnes in the week before, both provided by people ITB, so you would figure... but this was better, really came around with a kind of creamy mouthfeel from the leesiness. I didn't detect a lot of sweetness, but this is not crisp and minerally, a little more round. You could drink in a chablis glass, easily. Good for what it is, and it pleased our crowd, so I would buy it again, but I might prefer something a bit drier in feel.

Esther's Birthday Dinner (Luke's Oyster Bar, Gemmil Road, Singapore): I thought this was a nice NV. It had a lovely nose, very gently complex, with notes of earth, yeast and buttery cream floating around a core of white fruit, white meat aromas and a touch of minerality at the sides. The palate was yummy too. Built in an elegant, polished style, this showed gently citrus notes of lemon and green apple along with fleshier white fruit on the midpalate, all this scored by a little underline of mineral and streams of fine, very persistent mousse. This bottle seemed to have some age on it - it was round, pleasing and nicely balanced, yet with a nice understated reserve to it. Yummy.

Clear yellow core with very small and persistent bubbles. The white mousse was thick and stayed for several minutes. Nose of mineral, yeast, brioche, citrus - classic lighter styled Champagne nose. Dry with still some richness - mineral, brine, brioche on the palate - complex and layered. The finish was medium with the mineral and yeast continuing. A delicious Champagne and very much worth the money. Drink now and for the next 5 years - it will just become more complex with age.

A lovely dry and mineral driven champagne. Well put together, bubbles were a little large-ish though compared to their rose which I had a couple of weeks back. Not too much complexity but not a simpleton either. Drinking very nicely with everything in balance. A very good NV champagne for a great price.

Very nice aperitif. Similar to other Gran Cru from Bouzy like Paul Bara. This bottle was made from wine from the 2005 and 2006 vintages 60% PN and 40% CH; degorged in July 2010. Golden yellow, delicate nose of wirl berries. Nice acidity and minerality in the mouth; maybe a slightly short in the middle palate

Great nonvintage Brut for the price (about $40). Aromas of saline, chalk, seashell, with apples and lemons. Crisp and clean and tart and lively with salty almonds and chalk on top of green melon and limes. Pretty elements of nuts and honey. Brisk style but nice depth.

A very solid NV, great quality price ratio.

Tasted non-blind in a curated lineup of 20 wines at a wine bar. Wine #1. Expressive nose of lemon, bread and yeast. Similar tastes. Quite acidic with the lemon coming through strong. Would recommend having this with food for sure. Medium length and clean finish.

May 2015 disgorgement - based on 2010 and 2011. Beautiful champagne color with very fine bubbles. Inviting nose of white flowers and brioche. Assertive and energetic on the palate yet very elegant with sour green apple and bitter almond notes. Long and refreshing. Excellent NV.

Third time tasted. This time not coming across quite as rich, though it was cold (direct from ice bucket), pop and pour and may have been a slightly newer disgorgement. Somewhere in the middle of the road stylistically between rich and lean. The nose features lots of green apple, mineral, lime, lemon, flint and a touch of coffee bean. Palate has well measured dosage, feeling like 8-9 g/l and high biting malic acid. A bit young, this NV could easily be one to age and I'm holding some for this reason.

Clear, light straw color with little bubbles. Chalky minerality on the nose with lemon zest and yeast. Lightly floral with a hint of honey. The palate is unctous and complex with high acidity and minerality. Nutty and yeasty with lemon curd and ripe lemon. I love this wine every time I open a bottle!

Very similar notes to the last bottle. Simply put, this is an amazing buy for $35. You'd be hard-pressed to find a better Grand Cru NV for the same money, in my opinion. And you can certainly pay a LOT more for much worse NVs from some of the bigger houses. Fantastic (and crowd-pleasing) Champagne.

Another solid showing. Nose is rich leaning with notes of ginger, candied lemon peel, cantaloupe and brown sugar. The palate balances high, tart, seemingly malic acid against excellently measured dosage (feels like 9 g/l). Finish is medium in length. Solid wine. Could still age out a little longer yet to bring this wine into a little more balance and bring out the oxidative richness.

A really interesting grower Champagne which deviates from the standard non-offensive Champagne formula in a really nice way. Characterful grassy and citrus notes. Lovely length. Excellent bubbles. 60% Pinot Noir and 40% Chardonnay.

Nose: The nose is distinctive, balanced, and succulent with green and red apples, pears, berries, and orchard fruits against the backdrop of an early morning bakery. The nose shows a great dichotomy between a yeasty style and a more fresh fruit style.
Taste: Medium/full bodied with medium+ acidity. The acidity is very refreshing, but still quite there with green and red apples, lots of baking spices and yeasty tones, berries, and some pears.
Overall: This is from a 1/14 disgorgement. One has to love that they give all the information that one would want. This is a lovely NV Champagne that has a ripeness to it while also showing a very yeasty/bakery quality too.

For the $35 I paid per bottle, this is a very good, crowd-pleasing grower Champagne from Pierre Paillard's grand cru holdings in the 27 ha the domaine has in Bouzy. Everything seemed to be in balance. Lots of lovely fruit notes, and not too much bready-yeasty-ness (although it's definitely present and quite lovely), with a very fresh and precise finish that nicely washes away some of the broader flavors you get in the middle. Though it has 5 g/l dosage (btw, I love that they give you grape %, disgorgement date and abv right on the back label), I wouldn't have been surprised if you told me it is 7-9 … perhaps pointing to the ripe fruit that was harvested (?). Anyway, a great buy and recommended for the price point to please a range of tastes/experience with Champagne. Everyone really enjoyed it today.

Palate has perfect balance for me. Feels like 7 - 9 g/l of RS balanced against loads of fresh seemingly malic acid. Finish is medium plus built on brown sugar, pastry and tart green apple skins. While pleasurable and on the young side today I expect this should improve for at least 3 - 5 years. Don't know the blend from this disgorgement, but the latest is '09 - '08 which wouldn't surprise me. 91+ today. Could pick up another point or two in time. Good value.

I didn't detect a lot of sweetness, but this is not crisp and minerally, a little more round. You could drink in a chablis glass, easily. Good for what it is, and it pleased our crowd, so I would buy it again, but I might prefer something a bit drier in feel.

Intense au nez, bien concentré sur les arômes d'autolyse mais aussi d'agrumes et de zeste. Acidité élevée, sucre à peine perceptible (et pourtant environ 15g de résiduel), le corps est moyen, la structure en bouche est marquée, c'est vineux et tout à fait à la hauteur pour un repas. Esther's Birthday Dinner (Luke's Oyster Bar, Gemmil Road, Singapore): I thought this was a nice NV. It had a lovely nose, very gently complex, with notes of earth, yeast and buttery cream floating around a core of white fruit, white meat aromas and a touch of minerality at the sides. The palate was yummy too. Built in an elegant, polished style, this showed gently citrus notes of lemon and green apple along with fleshier white fruit on the midpalate, all this scored by a little underline of mineral and streams of fine, very persistent mousse. This bottle seemed to have some age on it - it was round, pleasing and nicely balanced, yet with a nice understated reserve to it. Yummy.

Clear yellow core with very small and persistent bubbles. The white mousse was thick and stayed for several minutes. Nose of mineral, yeast, brioche, citrus - classic lighter styled Champagne nose. Dry with still some richness - mineral, brine, brioche on the palate - complex and layered. The finish was medium with the mineral and yeast continuing. A delicious Champagne and very much worth the money. Drink now and for the next 5 years - it will just become more complex with age.

A lovely dry and mineral driven champagne. Well put together, bubbles were a little large-ish though compared to their rose which I had a couple of weeks back. Not too much complexity but not a simpleton either. Drinking very nicely with everything in balance. A very good NV champagne for a great price.

Very nice aperitif. Similar to other Gran Cru from Bouzy like Paul Bara. This bottle was made from wine from the 2005 and 2006 vintages 60% PN and 40% CH; degorged in July 2010.
