Looked at my note from 2014 and am smiling. It has in fact evolved nicely in 4 - 5 years. Nice mineral/stone notes form the base of the wine and there is a core hint of flowers and light citrus. Delicious.

Grand Vin. Tasted vis à vis the Dauvissat, this is very much leaner, more strict, much more on the lemon and minerals. Spice and smoke here at the end, very balanced and still very young, yet approachable. Keep this. #PB

Compared to the Chablis from Dauvissat this is, perhaps surprisingly, leaner and lighter. On day 2 it is also slightly more advanced compared to day 1. The nose is floral and shows marks of apple, citrus and ocean. Creamy texture, good cut and a piercing minerality on the palate. This is young and I think it will gain weight with time in the cellar. Niels brought this bottle. Impromptu night at home with Niels.

This bottle may have been flawed. It had an odd dry Riesling character that was drinkable, it certainly was Chablis-like. There were a lot of white solids in my glass that I don't recall from the first bottle.

How this can be an 8 year old white wine and taste so fresh is beyond me. Classic Chablis citrus. Great complexity and this producer hits a home run every year.

Medium dull yellow. Redolent of brothy sea elements and some wood in the very forward nose. This starts out very dense and then becomes more airy as it unwinds. Mix of yellow apple and lime. At this point, the acidity seems adequate, and the mouth feel is almost more reminiscent of grapes grown on a rich clay soil rather than limestone. Very good and enjoyable to be sure, but in the end, I think the oak takes a significant amount away from the Chablis typicity.
By day 2, more grapefruit zest and kick, less wood. It really slimmed down in a very reassuring way. May have underestimated it last night.

Mid- yellow; Penetrating aromas of wet chalk, orchard fruits, lemon and also lime, alongside a briny-mineral character. The palate is super dry with hints of spicy oak. There is damp chalk, earthy notes along with white peach that gives a sliver of fat and richness to give breadth yet the overriding saline and mineral belt in the mid-palate helps give definition and more linearity and make for a stunning wine. Some savoury notes complex this dynamic wine on its long farewell.

this wine was drinking at peak in my view, nice fruit (with citrus acid and a hint of sweetness) but with good mineral infusion on the palate, just a hint of age as well but not the dreaded smoke / caramel... simply a touch of roundness... I would drink the rest within 1 - 3 years if you have them, this was my sixth of six

Light to mid yellow with aromas of mineral, chalk dust, lemon zest, white plum, green apple and hint of peach blossom. Searing acidity on entry, this a vibrantly fresh Chablis, pinpoint precision with delicate flavours of crumbled chalk, orchard apples, tarragon and a smidgeon of lemon, all with an underlying richness. A slender wine that is showing lovely complexity at eight years old. It is an utterly delicious fresh, apple acid-led 2008 with buoyancy and vitality that makes it enjoyable. It perhaps isn't the most complex nor concentrated and perhaps is a little waif-like but for me it is mouthwatering!

San Diego WineSpectator.com Offline, 11/7/2015 (Grande Colonial Hotel (Nine Ten Restaurant), La Jolla, California): 12.5% alcohol. Clear straw yellow. Bouquet of quince paste, grapefruit, chamomile. Rich and minerally on the tongue with lots of citrus and perfumed flower. Somehow it is delicate and strong at the same time. It coats the glass and demonstrates a nice finesse on the mid-palette while leaving lingering and lasting flavors for a 30 - 40 second finish.

Light yellow/greenish. Evolving, quite complex Chablis aromatics-iodine, seashell, citrus, even a touch of tropical fruit. In the mouth, it starts with the glossy fatness (in Chablis terms) of Bougros, but as with my last bottle, this is buffered by outstanding acidity and complex, musky floral notes. Excellent core of citrus fruit that is not overripe or obviously botrytized. The longer it opens, the more the veneer of wood recedes and the leaner it becomes. I really enjoyed this bottle.

Opened beautifully but seemed to clench up as the night went on. However, in the open window, we all loved the honeyed, buttery lime scents, bracing acidity, and chalky, powdery minerality that just seemed to leave my mouth tingling for a long while after each sip. Paired with shrimp and lobster. First time to have this wine and it was delicious. Citrus and minerality were integrated just right. Have 3 more and will be sourcing some more.

Good but disappointing for a grand cru from a great producer. Too lemony, not enough seashell and minerality. Not premoxed, but this bottle not in the best place.

Mixed Wines at the Wedge and Wheel (Wedge & Wheel, Stillwater, MN): Pale green-gold color. Nose has an abundance of shell minerality, lemon, se air, bright, floral. The palate is energetic, bright, good acid, mineral driven, lemon, citrus, lovely finish. Really good stuff. My WOTN.

Super wine. Just another reminder as to why I don't even try any California Chardonnay anymore.

Fabulous example of White Burg. I am really beginning to appreciate how good this producer is.

Lovely. Delicious aromas of stone, lemon, lichee and the lightest of smoke coupled with a hint of oyster shell and sea salt. So light yellow in color it is almost transparent. Lots of sweetness and tangy citrus on the tongue. Good acidity. I would guess this will taste even better 4 or 5 years from now. It is great.

Worldwide Whites (Edina Country Club, MN): Another great showing for Fevre with a really vibrant nose featuring minerals, carmel, orange pee and lemon oil. Palate is balanced and long finish. This should age a few years but can be enjoyed today. Both pours very consistent.

Worldwide Whites (Edina, MN): Light gold color. PNP, drank 2 glasses over 2 hours plus. The nose is somewhat muted, earthy, subdued lemon, mineral. The palate is fuller, great body and texture, lemon oil, saline, minerals, wet stones, line, very long 45sec plus finish. If the nose had more to offer this would score a point better easily. 93+pts. Group WOTN.

Wonderful wine. Really citrusy taste. Steely. Light, but full of character. Could have several more years of life.

This is extraordinary tonight with rich and supple green fruit, some subtle floral notes, all supported by oyster shell, minerality and a mouthwatering acidic core.

Medium yellow. Ripe orange and great salinity on the nose. Absolutely fabulous, creamy texture and medium weight. Gorgeous fruit/acid balance, great persistence, and it kept getting more mineral and focused as it sat open. Tremendous and still capable of more in the future.

Delicate nose, seems a little closed at this stage. Citrus, apple, butter, great minerality. Palate is supremely well balanced with outstanding freshness and a lingering finish. A lovely wine, but still too young. Could score higher in a few years.

Brought to a dinner served with various seafood offerings. Nice lemon/lime thing going with green apple, a bit of honeysuckle, minerals, and maybe even some anise. Great tension, lovely balance.

Opened beautifully but seemed to clench up as the night went on. However, in the open window, we all loved the honeyed, buttery lime scents, bracing acidity, and chalky, powdery minerality that just seemed to leave my mouth tingling for a long while after each sip. If you're up for rolling the dice on premox, it'd be worth holding this a while longer.

Smell: Relatively mature yellow apples, steely minerality, canned mushrooms, butter and nutty.
Taste: Same with the addition of some honey.
Very good wine that has started to mature. Well balanced and good concentration.

Epic champagne and white burgundy dinner at chez carmichel's
Another great bottle from DS. One just cannot go wrong with a white burgundy as of late both value wise, and in the product itself.
Greeny-gold, wet wool, mushrooms
Dry, lots of tension, great acidity, incredible structure.
Long, long finish. Great minerality-all the characteristics of a great Chablis.

Pale in colour. Nose of tropical fruits. Lime. Hint of pineapple. Slightly chalky.
The wine is very light in the mouth texturally. Subtle fruit. Good acidity. I have no idea how long this will last and evolve but I agree that it is approachable now. Another great wine from fevre. Almost always impressive.

Houston Berserkers Offline (Sophia): Nice pale yellow color. Great nose of yellow fruits, green apples, citrus, sea air, mineral. On the palate, citrus, stone fruit, mineral. Very full on the mouth yet weightless at the same time. Long finish with lively acidity. Anyone with this in their cellar will be really happy in 10 years.

Graceful, lime peel and yellow apple on the nose. Silky texture, medium body. Very elegant, crisp wine with delicate minerality, lemon zest and hints of backed apple on the palate. Very long, rich aftertaste with sweet lemon and minerals. Young, but very accessible. And very fine indeed!
