Another beautifully balanced, great expression of a Napa Valley Cabernet Sauvignon. It has an awesome finish, great fruit, and tannins are now nice and soft and provide a nice backbone to the wine. If you have one of these and have not opened it in a while, do so. I don't see it getting much better, but I don't see it turning the corner downhill either. I wish we had more...

This is not a bad wine, just far over the hill with very heavy flavors of baked prunes, dark molasses and a mouthful of spices. It reminds me of the food I bought from Turkish vendors in the gold souk bazaar of Istanbul where any meal with below average ingredients could be "improved" by adding soaked cherries, local spices, and oak & smoke flavors. One positive: the wine is unfined & unfiltered.

This was ok but very disappointed I how this 2007 held up. Great vintage but this was kind of flabby. Have 3 mor and wish I would have opened sooner. Maybe the bottle? Will try another soon. A wine at this price point in a good vintage should much better!

Pop and pour. This was my last bottle of six I bought on release back when aged Napa Cabs were my focus. This showed well with nice mature tannins and plenty of red and black fruit. Lovely for what it is.
Four years after first bottle and this is still an outstanding wine. The color is ruby red with some bricking. The fruits have integrated into several secondary flavors of cedar and tobacco. This is balanced and has a long lingering after taste. Probably still has years left at this level. Paired with a slow cooked pot roast.

Dark purple color, little fading or sedimentation. Starts out far to the savory side of the scale-lots of cedar, tobacco and leather. Savory side slips into better balance after 45 minutes, thereafter, currant notes emerge.

initial tropical smell from bottle upon immediate opening, a trait I noticed from similarly aged bottles. Decanted 1 hour. Light-medium color, rust tinged with rich red body. First sip was divine! All the flavors playing nicely together. Mellow, dark fruits, some chocolate. Tannins have melded so results in completely balanced and harmonious experience. So worth the wait to age!

All tertiary notes at this point. Fruit is still there but it’s mellowed out big time. Prune, fig, raisin, plum. It’s all dried fruit here. Dark blackberry. Tannins are super mellow/barely there.

This bottle showed spectacularly on pop and pour. Polished tobacco on the nose. On the palate, huge Cabernet goodness with milk chocolate, blackcurrant, malt, and café au lait. My fifth of six bottles and the wine gods reward my patience.

Some mouth puckering tannins on the initial taste immediately after opening. This quickly gave way (30 minutes) to dark fruit flavors and tamed tannins. On the nose there is leather and tobacco. Dark garnet color with the beginnings of red brick edges. Very viscous legs. Went great with our filet and grass-fed market steak.

Decanted for 4 hours and then drank over another 3-4 hours. It was ready and wide-open from the start, lots of smoke and blackberries. Medium+ body, medium finish, very well integrated and balanced. Lovely wine with low acidity and soft tannins and probably at its peak!!

Holy Delicious!! This mature Cab is singing right now. After decanting for 30 minutes, this wine had a nice nose and very complex flavor profile. Dark fruit, tobacco, leather... very long finish. Truly delicious... perfect pairing with NY Strip at Capital Grill for my birthday.

It's "Open That Bottle Night", folks. So I opened this ten year old beauty. Stellar. In a perfect window right now. Very aromatic, with notes of dark fruits & violets. Silky, velvety, with lush mouthfeel. Good fruits, primarily black cherry, currants, & some dark fruits. Tannins are medium & there is mild oakiness. Believe this is a perfect time for this wine, if you have some in your cellar.

Big, Beautiful wine. Decanted about an hour before serving with Christmas bone-in Ribeye. Paired perfectly with steak. Dusty tannins, complex, long smooth finish. Drinking really well right now and would guess it has many years left based on good structure.

Aromatic, with berry and herbal notes. Faint but present Blackberry flavors. Some spices on the finish with a dry mouth-feel which disappeared after 1 hour. It then changes with up-front flavors of bright cherries and long cigar box finish. A damn good wine better as the night went on.
Tasted against Revana Cabernet 2011 and a Schrader CCS 2012.

This is quite a wine. Just borderline on ripeness (on the high side) but age has looked favorably upon it. Massive nose of integrated fruit and oak. Sweet on the palate and again integrated and balanced despite its size. I would drink now but for those that like more mature wines, hold for 5 years.

Lovely Darioush style. Great fruit/oak balance. Lots of finesse. Clearly will age and improve further. Excellent dark fruit but not an over ripe fruit bomb. Will be great with food, but enjoyed just sipping it through the evening with cheese. Two of us tried our best to allow it to breathe in the bottle, but 2 1/2 hours later, it was gone!

This is open for business. Impressed. A wonderful cabernet that gave us a ton of finesse. Very pure fruit. Not a candied bruiser, which we expected. Silky smooth with a plush mouthfeel. Texture wise this is a 99, overall, 94/95 feels correct. This was really in our wheelhouse and a pleasant surprise for our first taste. This paired perfectly with a rich lasagna. Will purchase again.

Wonderful spice, licorice, black cherries. Great integration of tannins which are still present but not overpowering. Big extraction of flavors and this wine could go a lot longer. Will it be better than now? Hard to say. Very enjoyable & complex and what you would expect from a wine of this price.

This is a bold, luscious, full bodied, concentrated wine (did I use enough adjectives?) with great balance and structure. Tannins just a little grippy with a nice long, lingering finish. Just a dash of oak mid palate showing more as vanilla. So enjoyed this, and compared to other "cult cabs" out there, a relative value. My last bottle. I will source more.

This was preferred over an 04 lynch Bages even by Francophiles at dinner. Forgiving a bite apparent only for first ten or so minutes this is a voluptuous napa cab drinking well now but likely 10+ years to improve. Tons of fruit, nicely amalgamated, firm tannins, and unique enough to stand out in the very crowded Napa playground

This is still just a baby and has a massive wall of dense tannins that prevent it from really shining at this stage. However, behind that lurks a nice backbone of blue and black fruit, spice cake, and menthol on the medium-long finish and I think a few (several?) more years in bottle will put this in a really good place. 91-92 points today, with potential upside to 94+.

This bottle of Napa Cab had a dark, inky, purple color with a ruby rim. It's nose was beautiful, with aromas of ripe fruit, violets, spice, and vanilla. The wine was very masculine and fruit forward. It tasted of dark cherries, blackberries, plums, cassis, mocha, cedar, and bay leaves. There was also a tiny bit of smokiness noted. The wine was full bodied, bold, palate gripping and complex. It's finish was long and enjoyable, with nice gripping tannins.
This cabernet is a very well made and predictable crowd pleaser.

The 2007 Darioush Cabernet is the wine that started it all for me. Maybe my rating is a little biased because this wine has so much sentimental value but I absolutely LOVE this wine! It's a very big wine with an old world style that really focuses on the terroir with earthy flavors backed by big tannins. As the wine opens up the tannins soften and the fruit starts to show itself. The 07 Darioush has everything that I look for in a wine. Great structure and balance with an initial subtle fruitiness, mid palate showing the earthiness, finished by soft tannins that leave a nice long finish. Great by itself or with food.

Major wow. A big bold cab with great fruit. Decanted for 2 hours plus. Great nose, blackberry on mid palate. Long finish with soft tannins that will allow this wine to develop the next few years. Should be perfect in 2 years but will age nicely for some time after that.

Very interesting and surprising to see how this wine evolved. Decanted and allowed to rest for an hour; at the 1-2 hour window the wine showed typically dark and rich napa fruits,blackberry, cassis, tobacco and black plums, with a faintly tannic backbone. Approaching 3 hours this has become more alcoholic with a mild burn, still very nice but more of an "in-your-face" style. Mediom+ in weight throughout the evening. My sole bottle, and an enjoyable one at that.

Saturday Dinner in Brooklyn (Williamsburg, Brooklyn): Aggressive and forward nose of cassis and dark chocolate, and a whiff of alcohol. Palate has impressive tannin structure to accompany its blackfruit-driven, oaky profile. The heat through the finish is really bothersome and unpleasant. A taxing wine and difficult to get through more than just a couple of ounces.

Purple core with some lighter red around the rim. The nose is a blast of black fruit and vanilla oak. Full bodied and massively concentrated. This drops a dr. Pepper bomb in your mouth. Vanilla and sweet cherry and currant flavors. Nearly viscuous texture. No detectable acidity, some tannin, but not the structure one wants to see from a young Cab from a good vintage.

California Night (Binny's South Loop - Chicago, IL): Quite disappointed in this wine. I wanted so much more layering and balance. It just didn't jive the way I wished. It was really nice if it were a third of the price...but at $75? No. Strong vegetable and savory qualities. Really big and heavily extracted. The nose is great but the palate is disjointed. Not as ripe as other Napa Cabs in this vintage.

I first tasted this in Feb 2011 and wasn't impressed. It was linear and boring. Perhaps it just needed a touch more time in the bottle. I tasted this again at the end of May and was blown away. Then, just to make sure I wasn't crazy, tasted again last night (6/12/2011) and it was just as delicious. From the nose to the midpalate on through to the sticky long finish, this wine oozes a cassis-like liqueur streaked with cedar. The depth of flavors continue to roll and change and repeat. Truly an amazing wine that on both occasions made me sad to empty the bottle. Highly recommended.

Very bright, almost bombastic on the nose, with a feel not dissimilar from an Argentine Malbec, this offers concentrated flavors of currant paste and black cherry on its hot, alcoholic palate.

Opened nicely with some O2. All dark blueberry, black raspberry and cassis flavors. Some Asian spice on the nose. Tannins are mellow. Great mid palate and finish. Superb, wish I had more. 2020-2030

All tertiary notes at this point. Fruit is still there but it’s mellowed out big time. Prune, fig, raisin, plum. It’s all dried fruit here. Dark blackberry. Tannins are super mellow/barely there.

This bottle showed spectacularly on pop and pour. Polished tobacco on the nose. On the palate, huge Cabernet goodness with milk chocolate, blackcurrant, malt, and café au lait. My fifth of six bottles and the wine gods reward my patience.

Some mouth puckering tannins on the initial taste immediately after opening. This quickly gave way (30 minutes) to dark fruit flavors and tamed tannins. On the nose there is leather and tobacco. Dark garnet color with the beginnings of red brick edges. Very viscous legs. Went great with our filet and grass-fed market steak.

Nearly opaque dark garnet. Nose of cedar, spices, and dark fruit. Ripe, full tongue-coating palate of blackberry, cassis, and black licorice. silky texture. Excellent length. Integrated oak and tannins. Pleasant acidity.

Decanted for 4 hours and then drank over another 3-4 hours. It was ready and wide-open from the start, lots of smoke and blackberries. Medium+ body, medium finish, very well integrated and balanced. Lovely wine with low acidity and soft tannins and probably at its peak!!

Holy Delicious!! This mature Cab is singing right now. After decanting for 30 minutes, this wine had a nice nose and very complex flavor profile. Dark fruit, tobacco, leather... very long finish. Truly delicious... perfect pairing with NY Strip at Capital Grill for my birthday.

It's "Open That Bottle Night", folks. So I opened this ten year old beauty. Stellar. In a perfect window right now. Very aromatic, with notes of dark fruits & violets. Silky, velvety, with lush mouthfeel. Good fruits, primarily black cherry, currants, & some dark fruits. Tannins are medium & there is mild oakiness. Believe this is a perfect time for this wine, if you have some in your cellar.

Big, Beautiful wine. Decanted about an hour before serving with Christmas bone-in Ribeye. Paired perfectly with steak. Dusty tannins, complex, long smooth finish. Drinking really well right now and would guess it has many years left based on good structure.

Aromatic, with berry and herbal notes. Faint but present Blackberry flavors. Some spices on the finish with a dry mouth-feel which disappeared after 1 hour. It then changes with up-front flavors of bright cherries and long cigar box finish. A damn good wine better as the night went on.
Tasted against Revana Cabernet 2011 and a Schrader CCS 2012.

This is quite a wine. Just borderline on ripeness (on the high side) but age has looked favorably upon it. Massive nose of integrated fruit and oak. Sweet on the palate and again integrated and balanced despite its size. I would drink now but for those that like more mature wines, hold for 5 years.

Showing well right out of the bottle. Delicate perfumed nose. Well-balanced fruit and tannin initially. After an hour a note of chocolate appeared. Crowd-pleaser but not terribly complex or distinctive.

Lovely Darioush style. Great fruit/oak balance. Lots of finesse. Clearly will age and improve further. Excellent dark fruit but not an over ripe fruit bomb. Will be great with food, but enjoyed just sipping it through the evening with cheese. Two of us tried our best to allow it to breathe in the bottle, but 2 1/2 hours later, it was gone!

This is open for business. Impressed. A wonderful cabernet that gave us a ton of finesse. Very pure fruit. Not a candied bruiser, which we expected. Silky smooth with a plush mouthfeel. Texture wise this is a 99, overall, 94/95 feels correct. This was really in our wheelhouse and a pleasant surprise for our first taste. This paired perfectly with a rich lasagna. Will purchase again.

Wonderful spice, licorice, black cherries. Great integration of tannins which are still present but not overpowering. Big extraction of flavors and this wine could go a lot longer. Will it be better than now? Hard to say. Very enjoyable & complex and what you would expect from a wine of this price.

This is a bold, luscious, full bodied, concentrated wine (did I use enough adjectives?) with great balance and structure. Tannins just a little grippy with a nice long, lingering finish. Just a dash of oak mid palate showing more as vanilla. So enjoyed this, and compared to other "cult cabs" out there, a relative value. My last bottle. I will source more.

Forgiving a bite apparent only for first ten or so minutes this is a voluptuous napa cab drinking well now but likely 10+ years to improve. This is still just a baby and has a massive wall of dense tannins that prevent it from really shining at this stage. However, behind that lurks a nice backbone of blue and black fruit, spice cake, and menthol on the medium-long finish and I think a few (several?) more years in bottle will put this in a really good place. 91-92 points today, with potential upside to 94+.

This bottle of Napa Cab had a dark, inky, purple color with a ruby rim. It's nose was beautiful, with aromas of ripe fruit, violets, spice, and vanilla. The wine was very masculine and fruit forward. It tasted of dark cherries, blackberries, plums, cassis, mocha, cedar, and bay leaves. There was also a tiny bit of smokiness noted. The wine was full bodied, bold, palate gripping and complex. It's finish was long and enjoyable, with nice gripping tannins.
This cabernet is a very well made and predictable crowd pleaser.

The 2007 Darioush Cabernet is the wine that started it all for me. Maybe my rating is a little biased because this wine has so much sentimental value but I absolutely LOVE this wine! It's a very big wine with an old world style that really focuses on the terroir with earthy flavors backed by big tannins. As the wine opens up the tannins soften and the fruit starts to show itself. The 07 Darioush has everything that I look for in a wine. Great structure and balance with an initial subtle fruitiness, mid palate showing the earthiness, finished by soft tannins that leave a nice long finish. Great by itself or with food.

Very interesting and surprising to see how this wine evolved. Decanted and allowed to rest for an hour; at the 1-2 hour window the wine showed typically dark and rich napa fruits,blackberry, cassis, tobacco and black plums, with a faintly tannic backbone. Approaching 3 hours this has become more alcoholic with a mild burn, still very nice but more of an "in-your-face" style. Mediom+ in weight throughout the evening. My sole bottle, and an enjoyable one at that.

Currants. Has some mountain tannins that grip. Some greenness. A mint, eucalyptus quality that is quite prominent. Pencil and graphite on the back end. Full untamed tannins. Lots of concentration of fruit. Very complex, but very young. Should not be opened until at least a decade. But outstanding.

Oak really dominates this wine right now. Some aging will hopefully help integrate the wood and the fruit. Darioush is one of my favorite napa cabs, but the 2007 may not be my favorite effort from them. 89+ pts with some potential upside with cellaring.

California Night (Binny's South Loop - Chicago, IL): Quite disappointed in this wine. I wanted so much more layering and balance. It just didn't jive the way I wished.
It was really nice if it were a third of the price...but at $75? No.
Strong vegetable and savory qualities. Really big and heavily extracted. The nose is great but the palate is disjointed.
Not as ripe as other Napa Cabs in this vintage.

I first tasted this in Feb 2011 and wasn't impressed. It was linear and boring. Perhaps it just needed a touch more time in the bottle. I tasted this again at the end of May and was blown away. Then, just to make sure I wasn't crazy, tasted again last night (6/12/2011) and it was just as delicious. From the nose to the midpalate on through to the sticky long finish, this wine oozes a cassis-like liqueur streaked with cedar. The depth of flavors continue to roll and change and repeat. Truly an amazing wine that on both occasions made me sad to empty the bottle. Highly recommended.

This is a stunning, off the charts cabernet; dark and brooding black fruit, licorice and tar notes, tobacco, subtle spice; super silky and a velvety smooth entry; great concentration in the mouth, but not fruity; very good balance, not a lot of fruit, but bitter chocolate notes in a wonderfully elegant body.

WOTN at christmas...won out over other 07 Napa Cabs, Keever and O'Shaughnessy. All were well enjoyed, but this one was unanimous winner. Full, but smooth, will only get better.
