Last of 8 we've had over the years. Great domestic Syrah regardless of pricepoint. Blackberry, olive brine, cured meats, pepper, a little smoke/campfire on the nose that isn't there on the palate. A little gritty at this point but still a nice mouthfeel. I could smell this all night.

Brought to a friends. Opened at 4 didn't get around to this until 7:30 or 8 pm. Out of the gate this exhibited the olive brine, cured meats, smokiness and savory dark fruits but towards the end of the night it lost some of its luster on the palate. Should have gone PnP but still always a treat to pop one of these.

Really great. Olives, herbs, cool blue & black fruit. Intriguing nose especially given the herb & olive tones. Good body, though never quite gave the thrust I expected (even on day 2). That said, a lean & laid back, pepper-herby Syrah is not a bad thing, and the finish is well balanced with acid & savory tones. Great.

Notes from the last glass after 2 days open. Very dark purple, 90% opaque with very slow, lightly stained legs. Minor sediment. The nose gives and takes over time but shows all the elements you want in this OW-style of Syrah. Blackcurrant, pepper, dark chocolate, tar, bacon, sea mist. So well structured on the palate, it's an amazingly well done wine and for a pittance of a price, to boot. 4+11+17+8 = 90

Inky dark purple, ruby. Cedar, plum nose. Bone dry, what strikes initially is the strong acidic tannins and cola, some red meat. On day two, black pepper showing, chewy mouthfeel with prevalent heat. Not quite restrained yet, but moving in that direction. I would give some more bottle age for the rough edges to smooth out. Here we are on night three with grilled chicken, summer squash, zucchini and rice. Simply great food wine! My recommendation is drink while you eat, or eat while you drink! Both work equally well. 90 on it's own, 92 with food. Much more subtle and restrained than the '06 Syrahs. I love it.

I don't know if we have a more favorite sub $25 in our cellar. This just so consistently spot on with reserved Northern Rhone characteristics. Will be sad when they are gone but have a few more to enjoy.
Fresh minty, some new cedar, some vanilla, some white pepper. Very Bordeaux like. With some minty astringency. Great Syrah for sure!! Minty freshness just overpowers the senses!

Folks evaluating this wine should really consider 24 hours in the cellar to get it ready to drink. I poured off one glass and let the rest sit for a day and this is fresh as a daisy and drinking much, much better. Nice and crisp red fruits of apple and cherry followed by darker fruits and savory cured meats with just a touch of smoke(good spice in there too). Pretty darn ripe but with beautifully integrated acidity and top notch savory elements to balance it out. Exceptional as always.
I really wanted to like this, given all the great things I've heard about Cabot. But all I got was an undistinguished mass of tannin and heat, with maybe some black pepper/spice. Either this was a slightly flawed bottle or I really don't understand the palates of those I've heard praising these wines.
Deep blue fruits with hints of smoke, white pepper, and olives. Beautifully balanced, just right acidity and tannins. More like the Rhone than most bottles coming out of the Rhone these days, but with an ethereal New world edge. Wonderful wine, and tremendous QPR at $25 direct from the winery. Buy more!

First ever Cabot had and def like it. Initially PnV, than consumed over 4+ hours. Notes of blue fruits, black pepper, au jus, herb, and hint of brine, earth & smoke. Later evolved toward darker fruit tones. Likewise flavors on palate, w/silky tannins, nice mix of acidity, medium body that gained heft over time, and a nice lingering finish. Went well with food & overall nicely balanced.

Needs a little air to shed some initial strong acidity, but then this shows dark, brooding black boysenberry fruit, excellent balance of acidity and medium fine tannins, a really nice showing. Great food wine, this is going nicely with smoked pork shoulder.
This keeps getting better through the evening, showing more intensity and complexity, some high toned blueberry kicking in. Great stuff and fantastic QPR

Pop-n-pour at cellar temp (59º). Dark purple/with slight garnet lightening at the edges. Nose of blue fruits, smoky and peppery. Palate of blueberry, some tart cherry, smoked meats, and a briny green olive. Mouth-watering acidity, moderate tannins, and long finish. Excellent bottle, drinking well now. Smoking bargain, glad I have a few more of these.

Despite its inky purple-black color, this wine isn't overly extracted or monolithic. It shows its cool climate pedigree with a nice balance of minerals and peppery acidity offsetting the dark fruit. Lovely syrah nose of herbs and smoke. Finely knit tannins and an overall impression of poise - really a nice wine. Keep 'em coming, John!

Rocking on the pop n pour. Delivers on all levels, big perfume and immediately approachable. Macerated blackberries, a hint of blueberry, cured meats, mesquite smoke, and sagebrush. And all this within 5 minutes of corking. Rich and flavorful but not even a hint of sweetness with a totally invisible acidity that is impeccably woven into the entire package. Moderately firm structure and slowly building grip on the finish. A great, great wine, that could potentially go ballistic. 92+.

This is one of my best purchases in a long time. Good fruit up front - blackberries and black cherries. Wonderful acidity that keeps it fresh and a pleasure to drink. The finish is impressive with some white pepper reminiscent of the northern Rhone. I am impressed and will be buying more Cabot.

Beautiful! Rich and dark fruit ... beautiful expression of Humboldt syrah without tasting like overextracted raisin juice. Complex with essence of secondary characteristics, none of them overpowering (meat juices, pepper). Dusty fruit-soaked tannin grip makes for a long finish.

Seemed quite ready after a couple hours open. Nice magenta-ruby color, about 90% opaque. Light to medium intense nose of blackberry, underbrush after a rain, lots o'pepper, walnut shell, light juniper and charcoal. Medium body, alcohol in perfect check, great acidity and stone on the palate, and I love how chewy this gets with a good swish. Finish is strong and so much more of a N Rhone style than the stuff that comes from further down the Cali coast. 5+11+17+8 = 91

Um... wow! Huge nose of mint, pepper and grilled meats... captivating! I could smell this all night. The palate is very complete with excellent balance - enough tannin to carry it for years, enough acid to make you salivate for that next sip, plenty of fruit without the sweetness so typically seen in California and Washington syrahs. This is a stellar effort! Johnny Cabot is doing great things in Humboldt County! Nah... must be the terrior... ;-)

Decanted 2+ hours, nose chock full of charcoal, cigar smoke and black cherries. Nice and juicy on the palate with lots of supporting acid sticky tannins that engulf the tongue. Finishes with pepper, spice and a mouthful of cotton. Slight bitterness on the backside. Needs to settle down a little more. May be entering a dumb phase.

Pop-n-poured a single glass then put the rest into a decanter. Dark ruby-garnet color. Nose of cherries and eucalyptus. The palate shows black cherry with smoked meat, white pepper, and followed up with cedar (Hungarian Oak?) on the finish. Nice cool-climate profile, excellent for the price.

Effusive baked cherry-berry pie aromas with cedar and eucalyptus--definitely a cool toned complexity leavening the ripe fruit. Full bodied on the palate with medium tannin and sufficient acidity. More cedary and garrigue-y on the palate, especially on the finish. Reminds me of a tasty, warm year S. Rhone Grenache/Syrah blend like CdP or Vayqueras. Drink now for popping fruity-perfumed aromas, though I think this will hold for at least a few years easily.

Pop and pour. It is difficult to describe just how good a syrah this is at such a young stage. This bottle still shows the focused and tart red and black fruit, with varietal syrah meatiness, but this bottle added a very prominent and deep layer of spice and herb which I attribute to not so much aging but a very shifty and multifaceted wine. Again the acidity is so refreshing and everything is staying in front of a generous amount of tannin on the finish. The delicious factor here is very strong. There is such a harmony of fruit, acid, and tannin that I can't help but think of how good this will be some years down the road. But man is it good right now. I really hope to drink one of these in 5-8 years. 92+. Bravo.

Pop and pour. On the nose, this displays dark berry fruit, pepper and some savory meats. On the palate this displays similar notes as the nose, pepper, dark fruit, and is a little savory. Tannins are present, but not overwhelming and support the fruit and acid components well. There is good supporting acid and nice length on the wine. The fruit is bright and well balanced. It is missing a little mid-palate stuffing for me, but is an excellent bottle of wine. Paired well with pork ribs. Very nice, restrained and food friendly syrah.

Popped and poured, consumed over 3.5 hours. First Cabot. Dark fruits, white pepper, oak and meatiness on the nose. On the palate the thing that strikes me the most is the balance between acids and tannins; nice tightrope it walks. More dark fruits, spicy and savory on the palate. Dang this is in a nice spot.
nose: lovely and dark nose of black fruits, meaty tones, black cherries, and spice tones. Good depth, but still a little tight even after being decanted for about an hour and a half
taste: silky full bodied feel with sneaky tannins and medium acidity along with rich tones of black cherries, pepper, meaty tones, spices and a touch of black fruits
overall: This got about 90 minutes of decanting and took about another hour to open up. Dark ruby with really good tones on both the nose and palate. This is really good stuff that is drinking great right now and is a great value as well

PnP. Deep garnet magenta at the rim. Crushed blackberries and garrigue on the nose with background spice/oak. Nose is shifty, turns more to red/black berries/spices. Palate repeats with red and black berries, herbaceous, garrigue, but with a succulent juicy acidity to the fruit that is refreshing bringing you back to the glass. Medium bodied. lightly textured, but very full flavored. Tannins begin to grip on the tight finish that is medium plus, promising future fun. Tightened with air. Blind this is 100% Rhone. Very, very, tasty. More? Yes, please.

Threw together some spaghetti bolognese for dinner and wanted something rich enough to cut through the meat sauce. Notes of blueberries, violets, hard salami, dried oregano, and kalamata olives. Rich and savory on the palate with a nice rustic texture and balanced acidity. More dried oregano and olives on the finish. This wine was a great accompaniment to the pasta and very nice sipper for the rest of the evening. 90-91 points.

Wonderful wine - esp considering the price. This is too young to drink. I suggest holding on for another year or two. We gave this a 1/2 hr decant and drank over a couple of hours. Initially, there was a lot of oak on the nose which came through on the taste buds. This blew off a bit with air. It should get more integrated with some age. Lovely smooth blueberry fruit and lingering taste with a hint of smokey meat. Better with food than just for sipping.

NC Cindy tasting. Sticking with the visual purple-with-a-red-rim theme, this wine suffered in the non-visual senses by comparison with what preceded it. The wine was a bit aromatically challenged with a touch of blackberry and not a whole lot else. On the palate, some blackberry and a little bit of spice, but not wildly complex and much less full and satisfying than the Aussie versions. It's more of a northern Rhone climate, so you might expect a lighter body, but in exchange for the delicate approach, I want complexity, depth, and balance. This doesn't quite deliver the way I would have hoped. It wasn't bad, but for ~$25 I would prefer a little more.

Popped and poured and consumed over several hours. Nose a little shy, but showing ripe purple fruits with a floral quality, violets, meat and pepper. Palate is lush, with ripe currants and berries, with striking acidity and chewy tannins. Quite structured and light on the palate despite its depth and good complexity. Lengthy finish with dark fruits, pepper, and just a hint of tar come out. Really nicely put together syrah, most impressive for its acidity and friendliness with food. When you factor in the price, a no brainer. Fantastic value.

Berserker Day spoils again. Pop n pour, big meaty nose but I'm getting uncooked baby back ribs. Interesting to say the least. Add some smoke and nice Cote Rotie essence. Big and juicy in the mouth. Wonderful texture, pepper, smoke, black and red fruits and killer tannins on the finish that exhibits some tangy red fruit. My first Cabot. Wow! Can't wait to try the rest of them. Yum yum.

fresh, cool dark fruits, pepper steak, earth on the nose. as Todd mentioned the bacon fat in the '06 is missing in '07, and I admit I do miss it. however there are some garrigue notes unique to this bottle that are intoxicating. the same dark fruits on the nose are present on the palate, along with persistent mineral tannins. a very solid, balanced syrah, but I prefer the '06.

I find more florals and pepper in the '07 from the bacon fat aspect of the '06 - still so very Northern Rhone in character, but different qualities. Beautiful finish on this wine, as it grows from the midpalate to the finish - always an impressive quality. 2nd day - this wine gains weight, and the fruits are much darker. Rather than the florals, the rusticness and dark fruits and berries dominate. Impressive finish, still, which grows from the midpalate.

P&P. Deep purple. Meaty nose, starts with country ham, and gets more wild boar over time. Also with a good amount of purple flowers and fruit, pinch of strawberry. A very layered wine, with dense purple fruit, and a lot of pepper that gets covered by the nice (cooler climate?) acidity. Some strawberry seeds, tar, graphite and spearmint. Gripping finish that lingers. It's freaking delicious. I would say to give this wine some air time or wait a year or two for it to round out, like thats even possible!

Drank over three nights. I actually liked this best on the first night when the fruit was still somewhat reserved letting the mineral core of acidity shine. On the second night the fruit has opened right up feeling fleshier with maybe more extract and/or richness than the 06 wines. Its still not huge with some flowery notes among the purple fruited nose. The palate also shows some savory notes beneath plentiful fruit. Seems to me that the depth here is stronger than the 06's. This is much more open than it was early in the year and will appeal to a wider audience right now. I would want to wait another five years at least so the fruit can relax and let the secondary notes shine and the mineral core to speak up. Terrific either way and a great value. Nice going Humboldt.

Really great. Olives, herbs, cool blue & black fruit. Intriguing nose especially given the herb & olive tones. Good body, though never quite gave the thrust I expected (even on day 2). That said, a lean & laid back, pepper-herby Syrah is not a bad thing, and the finish is well balanced with acid & savory tones. Great.

Pleasant nose of blackberry, grilled meat, black licorice and leather. The palate also shows dark fruit up front followed by leather/meat. Medium tannins/acid/finish. Quite enjoyable, just entering its prime drinking window IMO & should last several more years.

Notes from the last glass after 2 days open. Very dark purple, 90% opaque with very slow, lightly stained legs. Minor sediment. The nose gives and takes over time but shows all the elements you want in this OW-style of Syrah. Blackcurrant, pepper, dark chocolate, tar, bacon, sea mist. So well structured on the palate, it's an amazingly well done wine and for a pittance of a price, to boot. 4+11+17+8 = 90

Inky dark purple, ruby. Cedar, plum nose. Bone dry, what strikes initially is the strong acidic tannins and cola, some red meat. On day two, black pepper showing, chewy mouthfeel with prevalent heat. Not quite restrained yet, but moving in that direction. I would give some more bottle age for the rough edges to smooth out. Here we are on night three with grilled chicken, summer squash, zucchini and rice. Simply great food wine! My recommendation is drink while you eat, or eat while you drink! Both work equally well. 90 on it's own, 92 with food. Much more subtle and restrained than the '06 Syrahs. I love it.

Folks evaluating this wine should really consider 24 hours in the cellar to get it ready to drink. I poured off one glass and let the rest sit for a day and this is fresh as a daisy and drinking much, much better. Nice and crisp red fruits of apple and cherry followed by darker fruits and savory cured meats with just a touch of smoke(good spice in there too). Pretty darn ripe but with beautifully integrated acidity and top notch savory elements to balance it out. Exceptional as always.

First ever Cabot had and def like it. Initially PnV, than consumed over 4+ hours. Notes of blue fruits, black pepper, au jus, herb, and hint of brine, earth & smoke. Later evolved toward darker fruit tones. Likewise flavors on palate, w/silky tannins, nice mix of acidity, medium body that gained heft over time, and a nice lingering finish. Went well with food & overall nicely balanced.

Secondary notes dominate the nose - black olive, savory herbs, brine, rare steak and a bit of smoke. Pleasing texture on entry with a very nice balance of acid, tannin and dark fruit. Nice finish.

This keeps getting better through the evening, showing more intensity and complexity, some high toned blueberry kicking in. Great stuff and fantastic QPR

Pop-n-pour at cellar temp (59º). Dark purple/with slight garnet lightening at the edges. Nose of blue fruits, smoky and peppery. Palate of blueberry, some tart cherry, smoked meats, and a briny green olive. Mouth-watering acidity, moderate tannins, and long finish. Excellent bottle, drinking well now. Smoking bargain, glad I have a few more of these.

Despite its inky purple-black color, this wine isn't overly extracted or monolithic. It shows its cool climate pedigree with a nice balance of minerals and peppery acidity offsetting the dark fruit. Lovely syrah nose of herbs and smoke. Finely knit tannins and an overall impression of poise - really a nice wine. Keep 'em coming, John!

Rocking on the pop n pour. Delivers on all levels, big perfume and immediately approachable. Macerated blackberries, a hint of blueberry, cured meats, mesquite smoke, and sagebrush. And all this within 5 minutes of corking. Rich and flavorful but not even a hint of sweetness with a totally invisible acidity that is impeccably woven into the entire package. Moderately firm structure and slowly building grip on the finish. A great, great wine, that could potentially go ballistic. 92+.

This is one of my best purchases in a long time. Good fruit up front - blackberries and black cherries. Wonderful acidity that keeps it fresh and a pleasure to drink. The finish is impressive with some white pepper reminiscent of the northern Rhone. I am impressed and will be buying more Cabot.

Seemed quite ready after a couple hours open. Nice magenta-ruby color, about 90% opaque. Light to medium intense nose of blackberry, underbrush after a rain, lots o'pepper, walnut shell, light juniper and charcoal. Medium body, alcohol in perfect check, great acidity and stone on the palate, and I love how chewy this gets with a good swish. Finish is strong and so much more of a N Rhone style than the stuff that comes from further down the Cali coast. 5+11+17+8 = 91

Effusive baked cherry-berry pie aromas with cedar and eucalyptus--definitely a cool toned complexity leavening the ripe fruit. Full bodied on the palate with medium tannin and sufficient acidity. More cedary and garrigue-y on the palate, especially on the finish. Reminds me of a tasty, warm year S. Rhone Grenache/Syrah blend like CdP or Vayqueras. Drink now for popping fruity-perfumed aromas, though I think this will hold for at least a few years easily.

Somewhat translucent dark garnet in the glass. Mineral driven, cool-toned nose. Fairly ripe on the palate with dark berry fruit but with a strong slate and mineral edge. Pretty good. 92-93?

Pop and pour. It is difficult to describe just how good a syrah this is at such a young stage. This bottle still shows the focused and tart red and black fruit, with varietal syrah meatiness, but this bottle added a very prominent and deep layer of spice and herb which I attribute to not so much aging but a very shifty and multifaceted wine. Again the acidity is so refreshing and everything is staying in front of a generous amount of tannin on the finish. The delicious factor here is very strong. There is such a harmony of fruit, acid, and tannin that I can't help but think of how good this will be some years down the road. But man is it good right now. I really hope to drink one of these in 5-8 years. 92+. Bravo.

Pop and pour. On the nose, this displays dark berry fruit, pepper and some savory meats. On the palate this displays similar notes as the nose, pepper, dark fruit, and is a little savory. Tannins are present, but not overwhelming and support the fruit and acid components well. There is good supporting acid and nice length on the wine. The fruit is bright and well balanced. It is missing a little mid-palate stuffing for me, but is an excellent bottle of wine. Paired well with pork ribs. Very nice, restrained and food friendly syrah.

Wonderful wine - esp considering the price. This is too young to drink. I suggest holding on for another year or two. We gave this a 1/2 hr decant and drank over a couple of hours. Initially, there was a lot of oak on the nose which came through on the taste buds. This blew off a bit with air. It should get more integrated with some age. Lovely smooth blueberry fruit and lingering taste with a hint of smokey meat. Better with food than just for sipping.

NC Cindy tasting. Sticking with the visual purple-with-a-red-rim theme, this wine suffered in the non-visual senses by comparison with what preceded it. The wine was a bit aromatically challenged with a touch of blackberry and not a whole lot else. On the palate, some blackberry and a little bit of spice, but not wildly complex and much less full and satisfying than the Aussie versions. It's more of a northern Rhone climate, so you might expect a lighter body, but in exchange for the delicate approach, I want complexity, depth, and balance. This doesn't quite deliver the way I would have hoped. It wasn't bad, but for ~$25 I would prefer a little more.

Wonderful texture, pepper, smoke, black and red fruits and killer tannins on the finish that exhibits some tangy red fruit. My first Cabot. Wow! Can't wait to try the rest of them. Yum yum.

I find more florals and pepper in the '07 from the bacon fat aspect of the '06 - still so very Northern Rhone in character, but different qualities. Beautiful finish on this wine, as it grows from the midpalate to the finish - always an impressive quality. 2nd day - this wine gains weight, and the fruits are much darker. Rather than the florals, the rusticness and dark fruits and berries dominate. Impressive finish, still, which grows from the midpalate.

P&P. Deep purple. Meaty nose, starts with country ham, and gets more wild boar over time. Also with a good amount of purple flowers and fruit, pinch of strawberry. A very layered wine, with dense purple fruit, and a lot of pepper that gets covered by the nice (cooler climate?) acidity. Some strawberry seeds, tar, graphite and spearmint. Gripping finish that lingers. It's freaking delicious. I would say to give this wine some air time or wait a year or two for it to round out, like thats even possible!

Drank over three nights. I actually liked this best on the first night when the fruit was still somewhat reserved letting the mineral core of acidity shine. On the second night the fruit has opened right up feeling fleshier with maybe more extract and/or richness than the 06 wines. Its still not huge with some flowery notes among the purple fruited nose. The palate also shows some savory notes beneath plentiful fruit. Seems to me that the depth here is stronger than the 06's. This is much more open than it was early in the year and will appeal to a wider audience right now. I would want to wait another five years at least so the fruit can relax and let the secondary notes shine and the mineral core to speak up. Terrific either way and a great value. Nice going Humboldt.

STG does White Burgundy and a bonus Cabot tasting (Gig Harbor, WA): Mmm, another peppery wine. Tannic and firm, a cool menthol note washes over the palate followed by slightly sour red cherries and then a nice bit of tar. Very expressive Syrah.
