Meaty and mature apricot notes, yellow fruits. Challky notes. Complex nose and fully mature in my view. Botrytis notes seem restrained in this particular bottle in a good way.
Very complex and superbly mineral. Amazingly enjoyable and no need to wait.

Golden yellow. Suspect slight premox but not ruined, just very advanced for its age. Nose of vax, honey-melon, ripe lemon and lemonrind, winter apples, slightly bruised. Also some very light smoke/chalk. On the palate still fair levels of acidity, even if the overall impression is quite soft. Fruit toned down and again vax, vanilla, honey but some minreals and a quite fresh saltiness. Drinking quite well, but there ought to be better bottles.
EDIT: some previous notes mention that this has a slight touch of botrytis and I guess this might add to the slightly sweet, advanced impression I am getting.

Adieu Domaine Dublère Dinner (Monnie Burke's): In 07/08/10/12 vertical. Rich and powerful with a complex sweet and savory character that proudly shows off its botrytis character. Layered and intricate throughout, this will drink well for a long time. This was an important wine in tonight's dinner because it was the first Dublère wine that excited me, tasted when I met Blair in NY in early 2010.

Dried apricot with slightly sweet spice and very impressive concentration and richness. While obviously not classically Chablis with its botrytis and near sweetness, there is so much complexity here that makes it so enjoyable today. Color is getting darker than I recall from several years back, but I am intrigued by this wine's long-term potential.

Dinner w Tom F at the Village Pub in Menlo area...great spot, corkage friendly and knowledgeable staff. A generous contribution from Tom, nicely chilled, drank over about 30 minutes
Deep gold/yellow color. Really aromotic wine, nose jumped out of the glass. Showing apple, lime, spice and minerals. Rich and creamy palate - orchard fruits, pear, baked apple, baking spice, candied pineapple, mineral, ocean/saline. Rich though the mid palate, full body and long finish
A lot going on here, would not have pegged this as a Chablis if drinking blind. Left some in the glass and drank later in the evening, was more perfumed not fading at all. Really gorgeous showing on this evening.

Not what I expected from a Chablis, but intriguing nonetheless. A fully golden yellow, with a shade of ochre. Baked granny smith apple, lemon, vanilla, and a hint of spices. If not for the vein of sappy minerality running through it, I would have thought a leaner Meursault. As one reviewer has mentioned, a somewhat semillon-like creamy texture, too. I would drink up sooner than later.

PnP. Deep yellow colour. Previous bottles had been heavily perfumed with a relatively exotic profile. This started out quite linear, with Apple/lemon and a round texture which felt like new world semillon. As the wine opened some of the typical perfume showed through (slightly Chassagne-like profile) and notes of oyster shell were obvious. Overall both enjoyable but also a little strange - no rush based on this showing but curious about other bottles. ?***1/2+?

Very tropical, with an almost Jurancon-like tang to it. I would never guess this as a Chablis, however it is an intriguing glass of wine, but not something I'd return to quickly

This was very good tonight with an expressive nose of pear, tropical fruit, melon and subtle petrol notes, all of which carried thru to the palate as rich, penetrating, almost honeyed, flavors along with the addition of nutmeg, nori, oyster shell and a mouthwatering acidic core that carried the finish on and on. Really delicious and drinking beautifully.

Quite nice tonight after a couple of hours of air. This has matured quite abit in the year since I last tasted it. Deep amber in color, it has the requisite Chablis oyster shell minerality and acidity, but the fruit has more tropical notes than I was expecting and some petrol notes that seemed abit out of place. While I find this to be very enjoyable, I also find it to be abit atypical for GC Chablis and based on how much this has evolved in the last year, I think I'll drink my last bottle sooner rather than later.

Magnifique! Nearly two years after my first bottle of Les Preuses, this Grand Cru is even more gorgeous in its 24 carat gold appearance and lithe legs, followed by its multi-layered nose of spring bouquets, plus its rich and sophisticated palate of luscious orchard fruits. On the finish, limestone minerals, touched up with a hint of honeybee nectar, linger lovingly and incredibly long. This Chablis is an exquisite triumph in all ways.

(Mostly) Grand Cru Chablis Dinner (GT Fish & Oyster - Chicago IL): Dried apricot with lots of concentration and power. This wine has always showed this lush, spicy character that might not be typically Chablis but clearly a charming Chardonnay that is easy to enjoy now and will stay like this for at least 5 more years.

Le Serbet/ Becky Wasserman's 35th Anniversary Celebration (Château de Sully - Southern Burgundy): This was the first wine that ever excited me about Blair Pethel's wine, and I was thrilled to see Blair walking around offering this wine at the party. Floral and alluring with rich, ripe fruit. Perhaps not classically "Chablis" given that slight botrytis hint, but this is an easy wine to enjoy now, and it is aging very nicely and slowly.

This is a wonderful Chablis. Deep, penetrating flavors of green fruit with tropical fruit undertones, sea weed and oyster shell, bright citrusy lemon zest and a firm, minerally core. The finish is on the longish side and there's also, perhaps, the slightest hint of petrol, that reminds me of Alsatian Riesling and adds some interesting character to this wine. Quite nice.

cork was loose even though this was stored well and always on its side. This was 4th of 6 and they have been consistently delicious. I would say the color was darker and the acidity more prominent but the fruit and minerality were not the worse the wear for the cork situation. 90+

24 Carat Gold, in color and quality. Grand Cru Chablis at its finest. Exquisite nose of spring roses, nectarines, and riverside breezes. Lovely, layered palate of golden apples, luscious lemons, ripe pears, quintessential quince, in round, soft waves that reveal themselves over a fantastically long finish. Memorable minerality and sea salt linger at the end. More than a wine, this is a journey. Bon Voyage, Les Preuses.

Whoa, yum. As others have said its pretty ripe, especially for a 2007, but its delicious nevertheless. Smooth round lemon curd and apple palate bears more than a passing resemblance to a white burgundy. Like a cool breeze it finishes soft and supplely on the palate, unbelievably smooth and balanced. Give it some air time, major improvement over a couple hours.

Wow no cork, stelvin closure, I cut my finger attempting to remove what I thought was foil!!!! My 1st Grand Cru under screw cap. Colour not as deep gold as previous cork sealed bottle. After the above shock I enjoyed a beautiful well balanced bottle of chablis which I think! was a tad better than the previous lovely offering.

I tasted this wine for the first time at a Le Sorbet tasting (in 2009?), and it was the wine that first got me excited about Blair's wines. This wine continues to excite me. Popped and poured. At first it comes across as massively ripe and even tropical with some baking spice. Flavors transition to more classic Chablis character of apple and Meyer lemon with plenty of acidity and oyster shell. Long, energetic finish. I think this is at its peak and given the ripe character, probably will drink what I own by 2016.
Day 2 was actually better than yesterday. The ripe fruit character came across as less tropical and just more dense and concentrated, with some botrytis background hints.

Second of six. This was consumed at cellar temp and had a both a deeper color and deeper taste than my first which I felt was just an inocuous summer quoif. This one lived up to the hype with fruit, depth and complexity and balance. 89-90
Day 2 and Day 3! Wow this amazed with growing depth and fruit and none of the bitter oxidation one expects after a day or so....93 with a bit of air
I am a bit cautious overall given how simple prior bottles were but this was clearly outstanding

Suprisingly dark gold colour for age but no evidence of pox! Lovely nose offering up citrus and stone. Lovely ripe fruit, rich and unctous but with great mineral acidity. Long finish.

A developing gold cast still with some green. Big nose with lime leaf, flint, slate, saline, white florals, white oak. Rich and round on the palate with serious layers of depth. Creamy and citrusy and slatey all at the same time. Great with both lobster and foie gras courses. Seems to go kaleidoscopically through lime, lemon, quince, apple, star fruit, guava, all while built into a marble edifice. The finish on this is unworldly for a dry white and literally seems to keep coming as if in recurring ocean waves, for what - maybe two minutes.
Better if not too cool. Play with temp if you need to. Loved first night. Loved second night. I suppose it's not typical classic Chablis, but it is absolutely ridiculously good.

Domaine Dublère Cellar Visit and Tasting (Savigny-lès-Beaune): Tasting at the domaine. This is the only wine I specifically asked that we taste, because it was the wine that excited me about Dublère when I met him earlier this year. Rich and probably not classically "Chablis," but there is so much to enjoy here. Wonderful to taste this just before the equally wonderful 2008, which is much more classic.

Selection Becky Wasserman Tasting (Tribeca Grill - New York, NY): Tasting. Really sensational. Big and fat fruit aromas and flavors that show some tropical fruit upfront, followed by ripe and intense apple. While there seems to be an ever-so-slightly sweet element here, everything comes across in great harmony, particularly on a long impressive finish. 93-94 point potential for me today, one of my 2 favorite white wines at the tasting.
