  • Domaine de Chevalier lunch (Macleay Street Bistro, Potts Point): The appearance is clear and pale lemon in colour. Tears are present.

    The nose is clean, with a medium(+) intensity. There are well-defined aromas of oak (vanilla), bottle age (toast), and vegetable (peas), with an undertone of lees (cream). There is a subtle aroma of citrus fruit (lemon). The wine is fully developed.

    On the palate, the wine is dry with medium(-) acidity, medium alcohol, and medium body. The flavours have a medium(+) intensity and show notes of vegetable (peas), oak (vanilla), bottle age (toast), and lees (creamy texture). The finish has a long length.

    This wine is of a very good quality. The flavours are distinct and concentrated, and have an amazing balance with the alcohol and the acidity. The wine has complexity, showing primary, secondary, and tertiary characteristics. The well-integrated oak treatment and use of bâtonnage complements the flavour profile. The toasty notes from the aged semillon component are coming through nicely. The finish is very enjoyable and has an amazing length.

    Drink now, not suitable for further ageing. The wine is quite vibrant for its age, but some of the primary characters (lemon) are starting to fade, as is the acidity.

  • Domaine de Chevalier Birthday lunch (McLeay Street Bistro, Potts Point): Ooh, lots of fruit! Apricots, peaches, lemons backed by honey, cream and a moderate oxidative note. On the palate, though, it's sharply acidic. So sharp that it rather dominates proceedings.

  • Big whiff of onion skin to begin then it clears to reveal a wine of extortionary freshness and vitality. There are notes of capsicum, cut grass, gooseberry and citrus. The fruit has a waxy feel and it is precise with a big lick of grapefruit acidity. There’s a wave of geological material rolling around the mouth towards the finish and it has great cut.
