David's btl tonight in the same flt with my 08 Mugnier NSG Clos Marechale. Made for a wonderful comparison of 2 great producers in the same vintage & appellation! The Chevillon was truer to classic NSG in weight, power and richness while the Mugnier could easily be mistaken for Chambolle blind. The Chevillon was concentrated, elegant, complex & long. Featured rich blk fruits, mineral, earth, spice & emerging forest floor on both the nose & palate. This was opened at the restaurant and likely would have benefited from more air prior to its arrival. Some of our table mates expressed slight reduction & oxidation concerns but I escaped noticing either. Certainly, close to peak but still very enjoyable for me. Thanks David. 92-93

Wow, so glad I got on board with Chevillon a decade or so ago! These '08s have always been both fun & promising. 15yrs out they're downright, sublime! This is concentrated, elegant, complex & long. Features red & blk raspberry, mineral, earthiness, spice galore and emerging forest floor on both the nose & palate. This is why we cellar wine! Delighted to have 1 more for its 20th on or after 2028! Not a lot of air tonight like usual. Slow -oxed in Burg glass & btl for 2hrs b4 dinner. Thankfully, this was wide open when I pulled the cork. Almost no sediment. Enjoyed in Burg glasses in the low low 60s w/ steaks tonight.

Roncieres is very steep vineyard with gravels. According to Jasper Morris, this always shows some ripe, almost cooked fruit with a Mediterranean touch (garrigue). This was a perfect example of this description! Started quite stewy. Put it in a decanter and while it got way better, it kept that extravagant southern profile. While this is not my favorite vineyard in the Chevillon lineup, this is definitely interesting and showing this particular terroir.

Showing very positive development and complexity, but the fruit is hiding. Austere today, but no longer bound up in its acid like the 2008s were on release. Overall a positive showing, but a strong hold.

Chef's Choice Dinner in the North Loop: A Night of Burgundy (David's Place, Mpls): Medium dark red color. PNP, drank 1 glass over an hour. An interesting contrast to the bottle we had about 3 weeks ago that was very reductive. This bottle showed none of that. This was showing smoky deep red fruits, wood spice, and spicy berry on the nose. Nice texture, bright, red fruits, red berry, spiced, some scorched earth, medium tannins and good length. Much more inviting and promising than the last one.

No notes taken, and this took a long time to come around. Tons of reduction on the nose when first poured. Luckily Kevin had something made of copper to swirl in the glass and that helped a ton. Red fruit and funk on the nose. Likely still a bit closed down on the palate. Expansive red fruit on the palate. Great finish. I'll plan to hold my remaining bottles for a good 3-5 years and hope this opens up a bit.

Pre-Holiday WDTS: Medium red color. PNP, drank 1 glass over an hour plus. Seriously reductive, vegetal. After some serious swirling and a multiple applications of a clef du vin, thirb jos got substantially better. Shows red fruits, and some earth. Score reserved.

Relativt lukket.

Drunk on Christmas Day - tasting note not contemporaneous. Quite an evolved colour. Slightly closed nose, but gives up some red fruit and some minerally undertones also. Not necessarily for everyone but appealing to me - quite masculine Pinot. Quite "correct" and medium-bodied on the palate. I possibly expected something more gutsy, although this is not necessarily a criticism. Perhaps lacking slightly in fruit. But good sappy tannins and a long mineral finish, combined with acidity to give it poise, make this very good with food. Overall, quite a conservative Old World style of Pinot - which is entirely unsurprising I suppose. Wait a while before trying another: this was possibly slightly closed. Good plus.

Very fine wine from a lovely vintage in Bourgogne. Dusty minerals on the nose, with roses, herbs, some smoke, raspberries and pencil lead. A weird tone of huge amount of dill showed for the first 45 minutes, almost Rioja like, something I have not previous experienced from either this producer or the vintage. This however blew off, and the wine just kept growing in the glass. Palate shows some fat surrounding the fine sweet raspberries and the darker cherries present. Some soil and herbs present on the long and pleasant finish. Very fine NSG 1:er Cru. (92 – 94)

FRIDAY NIGHT!!!! The melting together of herb, oak, earth and fruit to the nose. All that herb is asking for quite a few more years in the cellar. Plump palate, medium tannin, solid medium plus acid. Lots of rosehip to the nose. Wow. Palate shows a little incense-y. This isn't so friendly with Delice de Bourgogne. The tannin to the wine, makes the cheese seem too sour, so something along those lines. Day 4 and drinking with water weight. Still herb and spice. Almost straying into St. Joseph territory. Raspberry fruit. Grapefruit to the finish.

France: 38 Wines from Kermit Lynch (E&R Wine Shop, Portland OR): Soft, but quite a lot of red fruit on the nose. Smells a bit like an Oregon Pinot Noir, honestly. Pretty awesome elegant texture though that definitely is the hallmark of NSG for me. Really lovely and approachable texture, though tannins do quickly build. Softly fruited on the palate. The finish is tart and a little gritty, but not too much depth at present. Something to look forward to, though.

Medium garnet colour. Medium nose with ripe wild raspberries, ripe black cherry, leather, tobacco, forest floor, mushrooms, cinnamon, chestnut and wet leaves. Medium taste of ripe raspberry, ripe red cherry, leather, tobacco, forest floor, mushrooms, wet stone and wet leaves. Mediu. (+) long and dry finish. Medium acidity. Medium (-) tannins. Medium (+) body. A very good NSG 1er Cru that has aged well and is now peaking. Needed some time in the glass to open up. Drink now. Go with duck, light game or veal.

This started out a little worrisome on the nose with some wet dyper smells but after about 45 minutes it had cleaned up beautifully showing red fruit and forest floor aromas. The palate started out showing only some tart cherry but this too opened up to layers of raspberry, spice and soily tones. A perfect medium weight and open for business. I slow oxed this for about 90 minutes before drinking. I had poured my wife a glass shortly after opening and before taking to the restaurant for dinner with my daughter. That worked very well. This is classic red Burgundy that only needs to get more perfuse aromatically and more complex on the palate with time.
