Needs about 45 minutes in decanter and then ready to go! Aromas of cassis, truffles, cedar, camphor, licorice and tar. Palate is medium to full bodied with ripe dark fruit, and flavors of mocha, licorice and dark chocolate. Finish is medium to long. Great wine!

Fully mature with aromas of autumn leaves, tobacco, dark cherry and plummy fruit. Medium to full-bodied with enough acidity to provide lift and decent length to the secondary notes of its dark fruit profile. About an hour of air seemed to be all that was needed for the wine to hit its full stride. Worked well with some aged cheese. This well-stored bottle seemed to be nearing the far end of its prime drinking window. Delicious.

Flat-out delicious. A gorgeous deep burgundy color, no faded edges, opulent nose. Half bottle with dinner, the rest for lunch with pizza. Bought as a future way back when. Only one bottle left...

Bouquet of ripe berries, prune, mint, minerals, undergrowth. Lush palate, ripe, sweet, berries, touch of acidity, mint, spices, leading to a nice finish. Upon opening, oak sticked out a bit, but got much more integrated on second night. Great with food but also indulging after dinner. Rather heavy but still great to drink.
Flat out unreal delicious. Came into its own after 45 mins or so in the decanter. This was barely in its prime, with so much freshness and intensity of fruit, but starting to show those secondary notes that we all love in Right Bank examples. Amazingly long and drinkable. Yummy Yummy. Sadly last bottle.

3 hour decant, drank over 2 days. Old shoe leather, unsmoked cigar, bittersweet black cherry, hints of blackberry. Definitely acidic first day and without discernible fruit.

Half through my case, this has been delivering for the last 5 years, but I do agree with Eric that this is not a wine for the long haul. I suspect that it is the case with a number of right bankers from 2000 with their charm lessening as the fruit fades. However, it is superb now, but be warned it needs a good 3 hours in the decanter to blossom. Flavour profile is as per previous notes. I would aim to drink my remaining half dozen over the next 3 years. A post script I saved a small glass until the next day and it was even better and really warranted another point. 96+

Dark opaque red, broody and cedary nose. Almost no fruit, yet still sort of fresh, and it is amazingly tannic, considering its age.Good peppery finish that hangs on.

Decanted four hours before service. In the glass, dark ruby red at the rim, shading quickly to an inky maroon at the core. On the nose, crushed berries, flowers, and a hint of cedar. On the palate, a lovely silky texture with blueberries, currants, graphite, and a slight herbal note that reveals itself during the finish. The tannins seemed largely resolved with this bottle.

The best part of this wine is how graceful it is on the palate. Waves of silk carry red and black fruits, cigar ash, wet stones, minty lift, flower shop aromas, and some slight hints of maturing fruits. This has become almost a touch sweet, but it doesn’t carry the weight of such. The acidity is characteristic of a traditional Bordeaux, especially with some age. Always love this wine.
From 375ml. A somewhat disappointing showing. The wine opened up somewhat muddy with stewed fruits. Tired. However with some air this did improve showing more of a roasted profile, chocolate and coffee. I would still call this a largely trouble showing even though the wine was drinkable.
I would say that it is time to drink up in 375ml, and I definitely plan to check in on my 750ml bottles soon. This does not seem like a wine that will make old bones and might be on the edge of cracking up (and Bordeaux ages pretty glacially).

Mature bouquet of ripe berries, complex liquor, vanilla, mint, undergrowth, Christmas cake. Immediately one, lush palate, with ripe berries, relatively heavy but good grip, with a bit of tannic bite, leading to a nice finish, spices, dark chocolate, rum, candied fruits, mint.

Polished, lush, round, and full-bodied, the wine is loaded with rack blackberries, plums, and cherries with smoke, licorice, and floral accents. The plush finish really works here. No decanting needed, just pop and pour. Drink from 2022-2032.

DWS in La Boheme, (By RVe): Beautiful mature bouquet with dark berries, cedar and autumn impressions. On the palate juicy dark berries, chocolate, graphite, beautiful acidity and mature, round tannin with still a pleasant bite. Beautiful, mouth filling and harmonious wine which is at its peak now. No hurry though.

Dark red core with a ruby rim. Dark cherries, red fruit, plums, with some nougat and woody notes. Noteworthy, the barrel is really well integrated here and better balanced compared to e.g. 2009; thus, it’s not too modern for a Bdx. Resume: I really liked it, it was so nice to drink (and not to sip). Whether to complex nor to simple. But by heart, I think it’s in a slightly dump phase and will really blossom in +6years (or decant time was way to short).

Tasted as part of 2000 Bordeaux dinner tasting at Biffs. Previously tasted as part of 2000 Bordeaux tasting in 2016. Nose of forward ripe red and black fruit and dark chocolate, edging to overripe but not crossing the line. Tannins have soften considerably, quite approachable but still not at its prime. Very long.

Beautiful St Emilion in its prime drinking window!
Although I did find the nose open soon after open and decant, I disagree with some reviewers that it was immediately approachable. I found the wine really came together after hour 2.5 of air.
Beautiful black cherry, black berry, and some licorice (very unique) was consistent across pallet and nose.
The wine was not tired at all and had great tannic structure despite 21y of age. Long finish! Nice. I love 2000 St E.
The rest of my coravin’d bottle must not have kept sealed. Lots of oxidation. Will not coravin these again so not to risk such a glorious wine falling victim to my own curiosity.
This is a powerhouse of a wine, and probably the best vintage from the estate drinking. I adore the right bank wines from 2000, most of which are ready to start drinking, and this is one of the title contenders. Rich and decadent on the nose, the palate is an explosion of ripe red cherry and plum with floral notes. The depth and balance are excellent and the finish pushes 30 + seconds with additional tobacco notes and robust tannin. At this stage it is worth giving this a few hours in the decanter.
This is drinking beautifully today. Popped and poured, it took maybe 20 minutes before all the flowers, licorice, black cherry, cocoa and plums made their presence known. Rich, full-bodied, opulent and lush, the wine finishes with sweet black and red fruits, crushed rocks and licorice. This should drink well for at least another 12-15 years with ease.

Wonderful bouquet of ripe blackberries, cassis, undergrowth. Extremely silky palate with a rush of ripe berries, a fine line of acidity that leads to a medium length finish. Rather modern but still in balance. A crowdpleaser of a wine that can also convince someone leaning towards the traditional camp and is not dogmatic about it.

Profound color here. Nose is fresh with black fruit an tar. There are intense flavors of black fruits, tobacco and coffee beans, the mouthfeel is silky and fresh, ending with a long mouth coating and quite intense but refined finish. Just beginning its drinking window and will improve with more cellar time, still young energetic black fruit profile. Less power than Pavie but also less sweetness and more minerality. Very fine St Emilion on its uphill and chalky terroir. 2000 is a vintage where even in the right bank the wines are still a bit folded over themselves. Decant this beauty in the morning to drink at night.

Mixed WTDS: AKA "Bring a Nice Bottle" (Tilia, Mpls): Very dark red/purple color. Decanted for 2 hours, drank a glass over 30 minutes plus. I hadn't had this wine for 8 years, and back then it impressed with some very long decants of 5 to 6 hours. I think tonight's bottle needed that kind of decant as well. Still tightly wound and a bit oaky. This was dense with dark chocolate, black fruits, deep and concentrated, tart black currants, firm tannins, plenty of oak, and some volatility to boot. The length is there for sure, and we've seen where this can get to. 91(+)pts.

Luis Rides Again @ Tilia!: Decanted for 2+ hours prior to serving. Nose showed a nice mix of tertiary and fruit notes, mostly earth and leather (on the tertiary side) and blackberry and plum (on the fruit side). The palate pretty much followed suit with the addition of a hint of chocolate and vanilla. The wine probably needs more of a decant as it was still showing signs of alcohol and was still quite tannic. The fruit and tertiary flavors are enough to overcome the tannins and alcohol, but the later still detract from the whole experience. 93 now, but a chance to improve with more age....I would probably wait another 3-5 years to open these, or give it a very long decant (5+ hours minimum).

Ripe blackberry, ripe plum, cassis, vanilla, notes of tobacco leaf, and yet also decayed fig amidst the ripe fruits Powerful, luxurious, voluptuous, rich, fruitful, long, smooth, enveloping; a little too hedonistic for my taste but for what it is truly excellent After 2 Hours: Decayed fig more dominant on nose, notes of fermenting cassis; more evolved, notes of chocolate, still rich, but not as luxurious or enveloping; very good though enticing character has slightly faded

This is a magnificent wine and probably my favourite right banker from 2000. It is really important to give this half a day in the decanter to enjoy it at its best, or you could be underwhelmed at this stage in its development. The nose is deeply perfumed with ripe red and black berry fruits, with violet notes. It possesses a a robust tannic backbone, but is well balanced and integrated, and showing secondary notes,. The finish is deceptive and appears initially as slightly unbalanced and on the shorter side, but suddenly it all comes perfectly together and gently nudges 60 seconds. I've scored this half a point lower this time out but slight performance variation and mood set goes with the territory of drinking great Bordeaux. 96+

Beautiful nose on open. Ran through a vinturi and a filter into decanter, probably a table spoon of sediment. Back in bottle slo-oxed in cellar for 3 hours. A fantastic bottle of wine. Thick rich, dark wine. It is huge without austere, I can not believe it's 20 years old, so rich in concentrated fruits. A well balanced wine leaning towards fruit. Had my last bottle 3 years ago. What a difference. I think this is the beginning of it's very long drinking window. This website has drinking window until 2027. I say 2047.

Decanted for 5-hours before having with dinner. This was absolutely amazing and is just entering its peak. The balance between primary and tertiary is just outstanding. Dark berries, baking spices, chocolate, and hints of vanilla. Tannins are leveling out and becoming silky smooth while still giving the wine its umph. This has another 20 years left at least.

Dark berry preserve, liquor, underwood, cigar box on the bouquet. Palate is full, dark fruit, silken, milk chocolate, spices, freshness on the finish. Incredibly hedonistic wine that still retains enough freshness and structure to remain interesting. It is in an optimal drinking window, similar on day one and two.

Double decant and serve. Heavy tobacco and cigar box. Lovely smooth and integrated tannins. Good acidity, black fruits. Very dark and dense on the palate. Nose is still vibrant and fresh. I would say this bottle is on the way down, but not far off from peak. Needs food, maybe a juicy Ribeye.

20th anniversary wine for me. This is still a big wine. If tasted blind I'd not expect that this was 20 years old. Big upfront fruit. Black cherry, cedar, hints of vanilla. Firm tannins develop after the first 2 hours then subside a bit. Can keep much longer but delicious now with a serious decant.

This is a tightly coiled monster....rich red and black berry fruits, smoldering pine needles, graphite, spice, earth, moss, juniper berries, chocolate covered espresso beans and flowers....so many flowers! Palate is so concentrated and lifted with a strong tannic backbone. Beguilingly complex. Finish is long....fantastic wine.

Entering its 20th year, this is an absolute powerhouse of a wine, and my only regret is just buying the one case at the time. As with a lot of the right bank from the year, the last two years has seen the vintage come into its own. It has evolvement ahead of it, but it is a magnificent drink now with 4 or 5 hours in the decanter. It is jammed packed with ripened berry fruits, with a wonderfully balanced big tannic backbone, and a finish with an unbelievable depth, which keeps coming back in surges over and over again. (I wouldn't be surprised if I woke tomorrow morning to still find it repeating!). At this stage the nose is still a little muted and the tannin will sweeten further. Highly recommended, and I suspect still reasonable value for money even if purchased now.

Color still showing a dark purple color, no real signs of age. Nose was dark berries, earth, pine, graphite and violets. Palate showing blackberry, black cherry, mineral notes. Great texture, full body (by Bdx standards) and layered finish.
Wine is in a great spot at this point, should continue to drink well for some years to come. If you have more than one, worth drinking some now. The 2000 vintage is coming into is own at yr 20 (at least the bottles in my cellar...), drinking well and has a long arc ahead of it

Dark red and opaque with some sediment. There was a surprising almost left bank earthiness on the nose layered on top of the dark berry and plum notes. This is in a nice place where the fruit is still in the lead, but is nicely balanced by tertiary development in graphite, leather, and straw. Great now, and good for years to come.

Very yummy bouquet, dark berry preserve, marzipan, ripe tones. Dark aromas, lush, silky mouthfeel, something slightly new world, but still some acidity to counterbalance. The finish is long. You could argue, it is not your typical Bordeaux, but it is very hedonistic and still has many Bordeaux characteristics, incredibly well made.

There were high expectations as this was said to be better than the Trotanoy 2000, which I rate very highly. Nose of black fruits, peppers, spices, earth. Tasted black fruits, black cherries, liquorice, mint leaves, peppers, soil, earth. Very long warm finish. Expressive and rich - this is in its prime. However, the bottle regressed after a few hours, with tannins becoming apparent. We were quite perplexed. Otherwise, a great showing and could have been a 94. Open now

Drinking beautifully but do not keep. Based on my experience of the previous 10 bottles. Perhaps past it’s peak. Drinking this I cannot understand all the hype about Monsieur Perse producing over extracted wine. That said I sold my 2000 Pavie just in case. This is my favourite St Emillion but the Classe A are beyond my wallet.

Purple-ruby core with some bricking at the rim. Notes of roasted game meat, ripe black fruits; hint of spicebox. Medium bodied, balanced, good depth. From prior notes:"Dark inky/purple color, vibrant core and no separation. Earthy nose of dark fruits, currants, cassis, pine, anise. Palate was rich and fruit forward, modern in style by Bdx standards. Showing black currant, cherry, ripe plums. cassis, violets/floral, licorice...a lot going on here, really expressive through the mid palate. Texture is lush but elegant..."
Quite a contrast from the Cos D'Estournel, stylistically, vintage and Bdx region. The richness, fruit and chalkiness was "love it or not" with this group. I think this is in a great spot right now, should continue to evolve for a while. My #2 for the evening

One of the few of the top 2000's drinking well at present, the wine is absolutely outstanding. The nose is deep with cherry and plum with a background of violet. On the palate the tannin is sufficiently resolved, and the depth and complexity are exceptional. The finish is 30+ seconds, but slightly unbalanced towards the very end. This far and away the best wine I have drunk from this estate to date, and I can't commend it enough. It does need time in the decanter, and will continue to develop, but it already has nearly everything, with the only real negative its 13.5% alcohol content.
Millenium baby birthday party ! Magnum ! Very smooth and hedonstic bordeaux. Needed air. 4 h of decanting this was the red wotn !!! I liked it very much. Wait !!! 95+

Tampa Spring Break III; 2/16/2018-2/18/2018 (Tampa FL): My first time with this wine and another one of my favorites from this dinner. This bottle was just open knit and ready for business - if you have this in your cellar don't be afraid to pop one open. The nose was dark fruits and leather. On the palate, warm dark plums, some spices and silky texture with a nice persistent finish. Really nice!

Tampa Spring Break (the third); 2/16/2018-2/18/2018 (Various Tampa locations (Seasons 52, Capital Grille, Berns etc.)): Lovely wine. Darker and smokey and cracked black pepper. If you had told me this was Northern Rhone I'd have believed you (aka - totally in my wheelhouse). Very young as well and a wine that is only getting better with time. Powerful. Black fruits. Not at all what I expected. More time in the glass seems to just improve the structure of it. Another favorite of the night for me.

Wonderful progressive dinner organized by Eileen, thought I would check in on this. First bottle from a batch bought at auction. Many of the 2000s in my cellar are moving into a good spot. This is 90% Merlot, 10% Cab Franc. Decanted for about 2 hours, drank over an hour. Fair amount of sediment in this bottle, easily strained out during the decant.
Dark inky/purple color, vibrant core and no separation. Texture is lush but elegant, long finish (45+ secs)
This was really great this evening, wine seems to be just entering its prime drinking zone. Should continue to evolve in the bottle and drink at this level for 10+ years...really great wine from a great vintage. Decant made a big difference here, wine was significantly different 2 hours in and kept evolving...Score may go higher in time.

Imagine the dark flesh of a ripe plum. That is the essence of this wine. It has a mahogany appearance. The bouquet offers up age characters of forest floor. The palate is ripe and full bodied but disintegrating slightly. This batch should be drunk quickly.

I had high hopes for this wine given the ratings, but was disappointed by its odd combination of greenness and terroir busting port-like nose. Well structured and acidic, this simply did not have the body and thick texture like the 2003 Pavie to balance it out. Other than the port-like nose, this came off as a mediocre classical and elegant style of wine.

Well worth the wait, this has entered its drinking window but still benefiting from a couple of hours decanted. An intense nose of plum and cherry with a hint of violet, in the mouth the palate is swathed with jammy flavours of dark fruits with smooth tannin which has retained just enough muscle. A hint of tobacco on the palate reinforces this firmness. All completed with a balanced 30+ second finish. Maybe this will continue to improve but even if doesn't a great wine and drinking superbly now.

What an interesting, enjoyable wine. Opened and poured out a bit from the bottle to the shoulder so it could slow ox for an hour before dinner. Probably could have gone longer as the sweet spot now is closer to 2-3 hours after opening. The nose is mostly dark berry fruit with a bit of eucalyptus and bell pepper. No bret detected, so more of a modern style...kind of the opposite of say a Gruaud Larose. Sweet dark cherry on the palate, but not too sweet or over extracted. Also sensing some hints of mushroom and chocolate. Great mid palate with a medium to long finish. Tannins are definitely there but are silky and fine. Quite dusty, even after being open for 3 hours with a good bit of grip on the back end. Will be interesting to see how this develops. No rush to drink...other than to follow the evolution over time. NOTE: 6 hrs in and things are feeling/tasting much more integrated. Less dusty grip and more fruit showing through. Lots of life left in this.

The CT 94 Avg is spot on. Great wine and opened up nicely after about 30 minutes. Still deep and dark with no rusting/browning on the edges which leads me to believe this still have a lot of life left in it! Dark fruit, earthy, smoky notes with hints of vanilla. Loved it glad I have a few more.

Tasted as part of 2000 Bordeaux tasting. This wine was different quality level than all the rest. Forward ripe black fruit and minerals with dark chocolate. Palate is tannic, well structured. The fruit intensity almost appears to make the wine taste sweet. Very good length. Approachable but nowhere near its prime. Try in five, maybe ten years.

Another Saturday at Chevalier...Mostly Blind (Chevalier Fine Wines - Chicago IL): Double blind tasting, brief note. Sweet, large-scaled fruit, rounded textures. Very accessible now, on the basis of really great fruit. Very good length, spice on finish. I was surprised how accessible this wine was today, and I expect it will certainly be even more balanced and pleasurable in the future (and/or with more air).

this might have scored even higher. Possibly 97. Up with multiple vintages of Paloma from 1997, 2003, 2005 through 2010. They were all great, this just was a bit better. Plus almost everybody came and said that was the WOTN with the amazing champagnes before and a great run of Rieslings earlier in the day. What can I say. I slow ox-Ed this from noon and it was served around 7. I didn't start drinking it until about 10. It was my last and I had a half a glass in my bedroom suite at 11:00am the next day. It remained ever changing but amazing. Lush dark fruit with spices integrated oak caressing tannin and uplifting acids over a solid mineral backbone. If you have had the almost perfect Pavie, think of this as the twin that got a cheap swing into his head just as they were both approaching the photo finish with the Pavie just inching ahead by a nose.

This garnet hued wine was closed when first poured from the bottle. The nose never really opened. There were blackcurrant black cherry roasted coffee and plum notes. Some oxidation present. The palate was full bodied and had a soft mouthfeel. On the whole this bottle was far worse than the last I tried some years ago. I feel it has been cellared poorly. Coravin first pour. Drunk at 16 degrees after being decantered 45 minutes to over 1 hour. Riedel Bordeaux glasses used.

Potpourri of Wines (Judith's House): Very dark red color. This had the cork removed and replaced the night before and was decanted for 5 hours. Drank 1 glass over 1.5hrs. The nose is wonderful and open, showing a perfume of florals, sandalwood, earth and briar, with some savory meat and tar notes as well. The palate displayed power and concentration with some rough edges, not fully integrated even with a healthy decant. It continued to resolve over the next hour, but was not as finessed as the last bottle. There is nice dark berry fruit, licorice, mineral, spice, oak, cassis, and dried berries. Tannins are moderately firm, finish is long. My and group WOTN (8 of 9 1st place votes). 93+ to 94 pts.

St. Emilion Tasting featuring Pavie, Pavie Decesse and Troplong Mondot (Kevin's House (Minneapolis)): My wine of the night with sweet fruits, blueberries, minerals, wood and vanilla notes. On the palate it picks up some chocolate ad raspberries. A complex wine and it needed all of the 4 plus hours decanting time to open up and show its stuff. Still firm tannins and this should drink well over the next 20 years. 94 to 98.

While decanting Intoxicating aromas of blackberry liqueur, spice cake, black plums and cherries, licorice, truffles, smoke, and coffee filled the area. Loads of complexity. Despite the obvious ripeness the wine is not heavy at all. Still quite a few drying tannins on the very long finish. It seemd to tighten rather than open after a few hours. Most of the potential is still clearly locked up. This should be great in time. Wait at least 5 years. 92+

Glorious showing. Fat and ripe with black fruit, tobacco and sweet cherry. However, unlike the more cumbersome 2001, this has glorious acidity and freshness with nothing forced, everything natural. Truly lovely!

Filled with licorice, smoke, fresh blackberry jam, black cherry liqueur, truffle, stone and coffee bean scents, this rich, lush, sexy, polished St. Emilion wine ends with layers of ripe, opulent, black cherry, plum and dark chocolate. This is starting to drink well. Enjoy it now, or let it improve for another 3-5 years.

We took this to the 2nd Mist dinner. It did not disappoint in any way. This wine has fantastic aromatics. It has one of those noses that you could just sniff, sniff, sniff all night. The fruit profile was textbook Bordeaux. Wonderfully rich fruit, with a hint of sweetness, and an underlying subtle barnyard flavor profile. This is exactly what I love in a Bordeaux wine. It is perfectly in its drinkability window right now. The wine was neither too young nor too old. It really was perfect. It paired exquisitely with the lamb and with the steak courses on an evening where 16 courses were served. I will have fond memories of the Mist dinner, and this wine. Wow.

From magnum at Gramercy Tavern (with Anne Hathaway seated at the next table). Super-intense, layered nose of pure cassis, mulling spices, cinnamon, and berry extract surrounded by a delicate floral perfume. Could have smelled this all night. Lush and round in the mouth, and almost port-like in concentration, this has a firm backbone of fine tannins which lead to a medium-length finish.

This wine was bought at auction and drunk at the Melbourne restaurant Scopri. The wine was decantered and kept at around 18 degrees C. The 11 year old cork was plump and only stained on the base reflecting excellent cellaring. The nose had already developed prominent aged Bordeaux characters which though unmistakable I find hard to describe. In the background primary aromas of plum blackcurrant and cherries. The palate was elegant, well balanced and reflected the nose. Parker gives this wine 96 and suggests the drinking plateau 2010-35 which is consistent with this wine.An exceptional wine though less lush and powerful than its recently consumed brother the 2001 Pavie which scored 99.

Auction bottle, held 2 years. Decanted slowly, sediment. Perfect cork. Deep deep deep color, no indication this is 11 years old. Intoxicating nose. Complex, changing. At first lush, then velvet, then meaty, then spicy, then leather. Bottled ultra lounge. And that's the point of this blow-you-away wine. Give in on a long night where you have nothing but time to linger, and someone with whom to share. A wine of surrender. I give.

Powerful anise oak, tremedously pure creme cassis, scorched earth, bittersweet chocolate and a floral edge. Dense without heaviness, coats every part of the mouth. Lingering finish starts with cedary oak, black fruits then concludes with rock notes and licorice. There is the material to match the wood, but would be better with a lighter touch on the new oak.

Blind tasted at Beddington's in Amsterdam at our 2000 theme dinner. Very nice, full balanced wine with a dark purpley color. Typical right bank nose of mocha and coffee. Some blueberry and lots of minerals. Young, needs more time, 2-3 more years to round out a bit more. Decanting longer might have opened it up a bit more. Lovely wine.

"There's more wine in that bottle, right". Alas, no! Double descanted for 7 hours and magnificent for dinner. Aromas prior to decant were provocative. Wine was tight and benefitted from the prep. Gorgeous rich blue in the glass. Deep aromas of a lush blackberry patch, loamy soil and fine cigar leaf. Great balance and structure, length to spare. Drink one and hold the rest. Like a young Sinatra with a whole career ahead. "Wow" was her first remark. Her last? You already know.

Helmsmanship of Gerard Perse and his consulting winemaker, oenologist Michel Rolland. Pavie-Decesse has a noble terroir, producing sweet, approachable wines. Part of this is attributable to the blend. Pavie-Decesse is composed of 90% Merlot and 10% Cabernet Franc.
Yields of 30 hectoliters per hectare, enjoyed a five-week maceration and was aged in 100% new oak, with aging on its lees for the first six months. It was bottled unfined and unfiltered, as are all the Perse wines.

Supple, rich, round, ripe, opulent and if that wasn't enough, pure silk. Fresh flowers, chocolate covered berries, anise and hints of blue fruit filled the glass. The decadent mouth feel was worth the price of admission. Still young, this elegant Bordeaux wine will only get better.

Favourite wine of the night, tasted alongside 1982s (La Tour Haut Brion, Gruaud Larose), 1995s (Margaux, Grand-Puy-Lacoste) and a 2000 Pichon Comtesse. Beautiful, rich and complex, 60 second finish.

Inky black in color. After a light swirl, the nose went boom! An explosion of liqueur of blackberry, accompanied by minerals, plums, flowers, black cherry and fennel are exciting to smell. Incredible concentration, depth and body. This wine is very rich. Decadent in style is the perfect descriptor. This is a definitely bottled sex.

Dark, ruby red...like the color of a young California wine...maybe 2 or 3 years into its life. This wine opens up over several hours, at the start a bit tight. Cassis there but the fruit is not really overpowering. Still some tannins to resolve here, early days. Seems less earthy than many other bordeaux...could see mistaking this for American wine.

From 375ml. Rather closed down compared to a bottle opened in 2004, but over the course of 3.5 hours this slowly came around. Nice and smoky, showing some oak, lovely depth of fruit, soy, blackberry, pine resin, chocolate. A ripe yet wonderfully structured and poised wine. This seems to want some years to come around, but it is rather tasty already.

Nice and elegant but lacking something. I'd like more depth of fruit. Not worth the money but better than some other expensive bordeaux's I've had recently. For this price I want a better showing. being generous with the score.

After having 2001 Pavie, I was mentally prepared for the worst and was pleasantly surprised. Not a big hairy monster at all. I haven't found Eric's "wow" and "Holy Toledo", despite this wine good pairing with muskrats. I'd probably buy it again @ $110 but not a penny more.

This may be the first premium 2000 Bordeaux (of my own) that I've opened. Fantastic. Inky dark. Thick, mouth coating big body with sweet plum, cassis, molasses, and charred oak with just a hint of tobacco. Finish that keeps pleasing for a long time. Depends on how you like your wines, but I'd say you can drink now or keep an eye on it for years. 93 points.

Our dinner with Cilantro (Chez nous): Very impressive, extremely complex fruit up front with some raisins and even tar in the finish. This will develop nicely over the next 10 years, but is the most approachable 2000 Bordeaux that I have tried. May well improve with more bottle time, but for now, it is very enjoyable

A bit of an acidic taste that softened up after a day or two of being opened. This is obviously young but there clearly is good potential here. This will be a very elegant wine when it matures but it will be elegant and feminine rather than bold or big-bodied.

Holy Toledo, this is one of those wines where you take a sip and then just shake your head in disbelief. How can a wine be so complex, so nuanced, so extracted, so silky, so structured and yet so delicate all at the same time? I consumed a 375ml way ahead of its time, but I had to know what this was like. The nose was just insane, lightly spicy with hints of graphite and tobacco, cranberry, a slight note of raisin, it just keeps changing. On the palate this is explosive, coating your mouth, blasting you with waves of fruit, texture, structure, and minerality. With the exception of the 2000 Pavie I can't think of another Bordeaux that has hit me like this. However, unlike the 2000 Pavie, I get brighter, sweeter fruit, less espresso, more roundness. This shows so much structure it is insane, but the lush fruit and silkiness of the tannins makes this so enjoyable. I'm really having a hard time putting words on this one, but it is absolutely stunning. Wow, thank you Mr. Perse!

We were all surprised by the accessibility of the 2000 Pavie Decesse, which everyone enjoyed (even Eli, who loves his well-aged wines). This wine has a TON of everything. I called it "killer" and "just silly". Is it too much? Maybe...but on this night, who cares?

Delicious.

50 shades of Merlot (at home): Gabriel Gold. ~60min decant. Tasted blind.

Wonderful bouquet of ripe blackberries, cassis, undergrowth. Extremely silky palate with a rush of ripe berries, a fine line of acidity that leads to a medium length finish.

I say 2047.

Open now

Nice nose decanted for sn hour before tasting.
Opened up well but not as much as promised or hoped.
Very fine sediment probably caused a tannic hard edge tgat never cleared.
Still good thought...a subtle beery jammy undertone

Drinking beautifully but do not keep. Based on my experience of the previous 10 bottles. Perhaps past it’s peak. Drinking this I cannot understand all the hype about Monsieur Perse producing over extracted wine. That said I sold my 2000 Pavie just in case. This is my favourite St Emillion but the Classe A are beyond my wallet.

Another great dinner organized by Mark T -BYO and impromptu Opera with Patrick, Paolo, Hoksoo, Alex, Courtney (Vic's Restaurant - New York City): Decanted for about an hour prior to drinking. This was 4th wine of the evening, drank over the course

Try in five, maybe ten years.

this might have scored even higher.

Wow.

Full deep purple/red color. Nice rich nose of black fruit and a few floral notes. Still pretty wound up at first, but opened up and rounded out with some time. Still upside here. 93+ pts.

Coffee, licorice, boysenberry, smoke and mocha make up the flamboyant perfume. Thick, rich, full bodiedm, packed and stacked with luscious fruit. Ripe, opulent, fleshy boysenberry, blackberry and dark cherry flavors coat your mouth. Very intense, long, silky finish.
