The wine looks Yellow gold colored. The legs are Medium. It smells like fresh Apple. It tastes like Lemon and is Bready and has a freshness about it. The body is Light. The wine has Bright texture. The wine finishes Long.

No formal notes. Pulled from Vinotemp and taken to 555 restaurant in Long Beach. Soft mousse - lightly bubbly. Slight gold color. Delicate nose of yeast and bread. Very good depth on the fruit with more bread/biscuit with a hint of citrus and mushroom. Soft acid. Medium finish with good depth and complexity. Outstanding with fresh Oysters. Very elegant. Seemed mature - might age longer but I don't have enough experience with aged Champagne to give a really informed opinion.

Light straw-gold color with fine mousse. There was a collision of fruit and bread-like aromas on the nose. Had taken on some pleasant yeasty flavors as well. Finish was a bit short IMO, and the only thing keeping this out of the "Outstanding" category.

We brought this to lunch at the Slanted Door...lovely chalky/minerally nose initially, with delicious bready/yeasty/biscuity flavors. After 30 minutes or so this had gained a marked richness along with flavors and aromas of brown sugar or caramel - not at all cloying, but very appealing. My first Billecart- Salmon, but definitely not my last- this was seriously great Champers.
