  • Typische Nase mit Feuerstein, am Gaumen knackige frische, grüner Apfel und Mineralität. Geschmeidigkeit im Abgang, die mit der Dauer noch zu nimmt, etwas auf Kosten der frischen Säure. Chablis, Chardonnay in seiner reinsten Form!

  • Very classy Chablis. Excellent match for smoked salmon over the past 2 nights. I love the balance of minerality, acid and fruit. Drinking perfectly now.

  • From 75cl, "DIAM 10-22" closure. The DIAM- induced deterioration since January 2015 is obvious: Flatter, flabbier, all that remains of the once-wonderful vivacity of this wine is the penetrating lemon acidity, which now frankly tastes a bit sour. Hopefully Fevre will switch to screwcap or return to natural cork sometime soon, until then I'll be buying Chablis from other producers, of whom there are, thankfully, plenty. Drink up ASAP. 86P

  • From 75cl, DIAM 10-22 closure. This was fantastic... a year ago. My DIAM "allergy" is not alleviated by tasting this fine unoaked Chardonnay, lemon and tangerine peel striking immediately after opening, and then observing it go flabby, soft and prematurely senile over the following 2 hours. If you P+P this and drink straight off, it will provide pleasure. Just don't expect it to mature further, or try to follow it over a long evening. I know that this makes good business sense for Fèvre and the restaurants to whom they deliver (only a freak like honest bob cellars Chablis these fast-moving days...) but what a crashing disappointment considering the glorious heights which 1er Cru Chablis (from Dauvissat and other traditionally-minded producers) can (and does) attain at an age which DIAM closures simply do not permit. Drink up ASAP. 87P

  • From 75cl, "DIAM" composite cork. Superb Chablis. Very pure, linear, ripe lemon/lime acidic profile, no perceptible oak, slender, structured but not overly mineral finish. Ready now, will continue to provide pleasure at this level for at least 5 years if the artificial cork/glue closure permits. 91P

  • The Wine starts to mature and on the nose we have wet warm stones, lime, mineral and som pears and exotic fruits.
On the palette we got honey, fat fruit, small citrus, a high acid. It comes together really pleasant with a long finish. Great wine!
A bit matured champagne like acculy on the palete

  • Here we have a great fevre chablis. not typical for Chablis and fevre. this one is more modern style. Maybe its the vintage, 2009?
On the nose we have citrus, wet stone mineral.
It´s quite fat and has a taste of Citrus, blood-orange, butter, barrels and some exotic fruits. High acid and minerals. A hint of White pepper.

  • Medium intensity nose which reminds me of cold chicken with citrus fruit and mineral undertones. No oak detectable. Elegant and mineral with lively acidity and a phenolic texture. Some use of oak evident in palate. Medium+ lenght. Very young but looking good for the future

  • Chablis and Champagne 19-22.09.2011; 9/19/2011-9/22/2011: 40% barrel fermentation. Extremely reticent scent with some lemon but not a hint of oak or butter. Delicate, precise, mineral, slender entry with knife-edge ripe lemon acidity. Superb purity on mid-palate, becomes even more super-model-skinny on the medium finish. Thrilling stuff. €22,40 au chai. 90P(?)
