Nose starts with a bit of yeast giving way to a very interesting aroma I can only describe as "peanut butter and jelly sandwiches" followed by so rich notes of tropical fruits. Quite lovely all and all. Rich flavors of berries, pears and a dash of citrus on the long finish. Bright acidity, full bodied. Drink or hold. Right now I'm leaning towards holding my next bottle until 2011 while I try to round up some more for the cellar. I remember really liking this wine when I first started collecting, around 2004. I bought and enjoyed this bottling as well as the Hudson, which is a step up. I recently bought three of these on WineBid for $15 a bottle. Are you serious? Anyway, this wine has aged nicely. The nose is of anise, olives, and blue fruits. The mouthfeel is savory, with plenty of red-blue fruit and minerality. Nice finish with soft tannins. I think this could gain even more complexity with time. Bravo! Probably on the sweet side for my personal tastes, but certainly enjoyable. My first taste of Donjon, and although I typically prefer the bolder styled CdP's like Pegau, this wine was so incredibly charming that I fell in love with it. Beautiful floral and funk on the nose, one of those wines I could just sink my nose into and smell for days. The color was a fascinating light garnet red that was almost completely translucent. Soft red fruit flavors, with a depth of earthy funk and spice and sweet flowers out of the long finish. WOTN for me. For me, it goes into the "luncheon" category - lighter in weight but plenty of flavor. After a series of bruising wines the night before, this was a welcome change of pace. A pleasant funk on both nose and palate. Leathery perfume on the nose. Palate weight is similar to a mid-level Burgundy, which this wine resembles in a lot of ways. Quite a surprise, as I opened this one with the expectation that it wouldn't be consumed, as I didn't have a lot of hope for this experiment. Picked up for $11 on auction. Not quite sure why, but glad I did. On initial opening, it was so closed there was hardly any bouquet at all. On the first day, due to time constraints, I vinturied the wine several times, and it had probably about an hour to decant. Nose was tight with notes of acidic red fruits. Tannins are definitely there and not yet integrated. Yet, it continued to develop in the glass. A bit of glycerin started coming out, also with a bit of bacon. Very nice and complex, but young. The second night, I decanted it for 3 hours and drank over the following 2. Much more open and developed than the prior night. The nose had notes of strawberries, raspberries, maybe some tart cranberries, and definitely chocolate. More of the same on the palate. The bacon was gone. As it continued to open, some allspice came through, as well as some floral notes on the nose. This is quite a young wine, and I wouldn't touch it for 3 years at least, and it will be good for at least the next 15. With patience, this will be a very, very good wine. After malolactic fermentation in barrels the wines was aged in new oak for 18 months. The eventual blend consisted of 60% Merlot, 30% Cabernet Franc and 10% Cabernet Sauvignon. Still rich purple in colour with only the slightest hint of bricky-red at the edges, this Pavie shows aromas of earth, leather, flint and just a touch of black cherry. The palate is smooth and mouth filling. Oak and fruit have integrated beautifully to leave a suggestion of spice, melt in the mouth tannins and a beautiful long finish.
