The palate is dry, medium-bodied with crisp acidity and notes of citrus and spice on the finish.

Because of the extreme yield loss, painfully delicate fermentation that can take months (compared to days or weeks for regular wines), aging process, and almost no juice squeezed from the frosted raisins, the price of ice wine is extravagantly high. Therefore, the bottle size is usually half of the regular bottle.

The majority of Icewine continues to be made from Riesling and Vidal. Riesling produces an Icewine with more acidity than Vidal. Other varieties used include Gewürztraminer, Cabernet Franc, Merlot, Pinot Gris, Chardonnay, Muscat Ottonel, and Gamay. Newer variations to look for: sparkling Icewine and other varietals.

This is a fuller bodied Icewine, that has a smooth sweetness and a rich acidity. The palate is layered with delicious flavours of pineapple, pear jam, and citrus. Food pairing: Pair this Icewine with a sweet and delicious lemon poppyseed cake.
