Noble rot, also known as 'Botrytis Cinerea', is a fungus that attacks healthy ripe grapes. It weakens the skins of the grape which, in turn, accelerates the evaporation of the water, causing the fruit to shrivel and start to look more like a raisin.

The color and the aroma of the wine suggest a sweet wine but Viognier wines are predominantly dry, although sweet late-harvest dessert wines have been made. It is a grape with low acidity; it is sometimes used to soften wines made predominantly with the red Syrah grape.

While I've tried some sweet, dessert-style wines made from Viognier grapes, most Viogniers are dry, white table wines. Certainly there are some made in a very ripe style, which—even if not in a dessert style—can take the peach and spice flavors in the direction of candied or preserve notes.
