2005 Estate Cabernet Sauvignon

This is a wine destined for greatness. The 2005 is a rich, juicy Cab with an expressive nose of cassis and spice and flavors of black cherry and cocoa along with an undercurrent of eucalyptus and mint. The wine is already displaying a lot of concentration and depth, indicating it should keep getting better and better.

This Cabernet reveals how greatness can often emerge from difficult beginnings. The year was a bit wetter than normal and also cooler. But that resulted in a long growing season (we didn't finish harvesting the grapes until November 11), allowing the fruit to remain on the vine longer and develop more flavors. The extended hang time also brought the sugars and acids in the fruit into almost perfect harmony. The 2005 is 90 percent Cabernet Sauvignon and 6 percent Merlot with Cabernet Franc and Petit Verdot rounding out the blend.
