2006 Fetish Wines Shiraz The Watcher

Famed winemaker Rolf Binder, winemaker of Fetish Wines' The Watcher, writes: "The skill of blending various Shiraz parcels from within a region is highlighted in this wine. The old adage of the total being greater than the sum of the parts is true for this wine. Rich, round and easy to drink, this is an enjoyable wine." The Watcher symbol is a being of knowledge, of understanding, of concern, of influence. At Fetish Wines, we value this level of attention to every step of the winemaking process, from the soil to the bottle. We do not want to manipulate wine, but to craft it by the subtle direction that can only be achieved through an intimate relationship with the land.
* VINIFICATION: Grapes for this Shiraz are crushed, then immediately inoculated with selected Rhone yeasts. Fermentation involves twice daily pump overs. After time on skins the lots are racked, returned and the juice pumped back over the skins thus breaking them up. The pressings juice is returned to the free run. Post fermentation, the wines are racked twice to remove the lees, then transferred to older (some shaven) oak vessels for maturation for 10 months.
* BLENDING: Seven different vineyard sources were used in the making of this wine. Their average age is 15 years and range from the cooler Barossa Hills to the fertile flats of the Northern Barossa. Generally made from lower yielding vines, their diversity has made a full flavored and rich Barossa Shiraz.
