2007 Domaine Barmes-Buecher Crémant d'Alsace Millesimè "Zero Dosage"

CREMANT 2005 Vintage – Brut - No added sugar (Zéro Dosage)

Varieties: 65 % Pinot Blanc, 7 % Pinot Gris, 28 % Chardonnay

Yield : 68 hl/ha

The grapes are harvested with an alcoholic potential of 13°. Fermentation of the base wine (still wine) is stopped by cooling at 11°7 and leaves about 22g sugar.
In spring the wine is bottled with the addition of some working yeast. This procedure ensures that fermentation of fructose grape sugars and not beet sugars takes place. Bottle fermentation takes place over 6 to 9 months, and the wine rests on slats for at least 16 months.
When the wine is disgorged, no “liqueur d'expédition” (wine and sugar or other additions) is added. This ensures that the wine keeps its own vinous character, typical and racy.
