Took the winemaker's advice and laid this down for 8 years. The wait was well worth it, as the wine developed nicely. Slightly reminiscent of an aged desert wine, the sugars in this wine allowed it to hold on for much longer than a dry or off-dry riesling. Should be consumed soon.
This wine has aged beautifully. The bright fruit from the nose has faded, but the tannins are silky smooth and the finish is long and complex. Not sure how much longer this will be so enjoyable. Drink up!
This wine is still holding up very well. The nose has faded, such that it lacks many of the characteristic Cab Franc notes, but it still has good structure. I enjoyed this with a small steak and potatoes dinner and it stood its ground. This wine should be finished off soon.
