Method: opened 1 hour before consuming; Cab glass. 60ish degrees
Look: medium ruby
Nose: red bell pepper, black currant, blackberry, graphite / pencil shavings
Palate: blackberry, bell pepper; medium+ finish of graphite, light black pepper, light dried herbs, light leather; dry; medium+ body; medium+ smaller, decently grippy tannins; medium+ acidity
Overall thoughts: I love that this doesn't shy away from the bell pepper notes. Still showing pretty youthful, but there's some decent complexity from the vegetal/earthy and mineral notes. Robust but decently refined structure provides a great backbone for this wine. Great wine.
Update: I had to save about 4/5 of the bottle for day 2 and I was surprised to find it seemed slightly on the decline (but still enjoyable). Also, I was surprised it didn't pair especially well with 16-month aged Cheddar.

This is a delightful wine. Decided to drink it tonight on the advice of winemaker Matt Dees. Showing terrific balance of fruit, tannin, acidity, alcohol. Nose of cassis, cinnamon and some floral notes. Finish is long, hints of mint. Benefits from about 30 minutes of air and then sings. I wish more new world cabs were like this!

Very nice. Restrained and elegant for a Cali cab, opened up nicely after 30 minutes.
