Day 2 review... Nice bright red fruit and good acid, enjoyable. Strangely, this lost some of the dense darker fruit from last night that really pulled this wine together and brought some complexity to the table. Still a good wine.
Not sure what to think about this last bottle. It seemed a bit unbalanced four days ago on the first glass, but not so much that I needed to pour it down the drain. I vacuum-sealed it, set it on the counter, re-opened it tonight - and the first glass was nicely balanced, integrated, a bit of raisiny fruit, but in a very pleasant way - all in all, enjoyable. But the second glass turned hot and empty - the fruit disappeared and it was nothing but alcohol. Not sure whether it's time to hold it, drink up, cook with it, or "gift it" to that cheap neighbor who always brings swill to the party ...
Drinking great at this stage. Aromas and flavors of dark cherry, black raspberry, old saddle leather, dried tobacco. A great example of a 2007 Napa Cab. Well balanced acidity all the way. A mix between dry and sweet gripping tannins.

(Vayniac Napa Cabernet Sauvignon) COLOR-dark; NOSE-gorgeous black cherries and black currants; it's a big nose coming across with very serious structure; a hint of cedar box and tobacco on the back-end, but very dark fruit; PALATE-great grip on the mid-palate; more approachable than I expected; the tannins are sweet; there's a really black tea meets black currant inkiness that I find quite exceptional; it showing great youth; quite surprised how structured this is for being so young; the fruit is quite sweet; this is for those who like Caymus and Shafer as it has fruit; it's smooth and it's big; candied raspberry; GV-No Score
