  • 20년이 넘은 와인이 와인은 어떤 맛일까?
    미국 카베르네 소비뇽은 세월에 어느 정도의 내성을 보여줄까?
    미국 컬트 와인은 어느정도 투자 가치가 있을까?

    코에서는 초콜릿 향이 느껴지면서 혹시 달달하지 않을까 싶기도 하다.
    그런데 곧바로 가죽향, 삼나무향이 느껴지면서 역시나 고급와인이지 싶다.
    나파 카베르네 소비뇽 특유의 검은 과실향은 거의 느껴지지 않고 허브향이 더 나는데 이건 세월의 영향인지 와인 자체의 힘인지는 좀 헷갈린다.

    입에서는 탄닌이 꽤 부드럽게 풀려서 쉽게 마실만하다.
    산도는 많이 느껴지지 않았으며 바디는 미디엄보다는 약간 풀에 가까웠다.
    입에서 실키한 느낌이 끝나기 전에 스파이스한 피니시가 아주 인상적.

  • At home with some with Valerie, Jimmy. Splash decant, drank over 2 hours. Paired with pot roast, potatoes and salad.

    Medium purple/ruby color, some cloudiness, fading and separation. Nose expressive right out of the gate, dark and red fruits and earth notes. Palate of tart blackberry, raspberry, cocoa and earth notes. Brambly fruit consistent with prior bottles. Medium weight and finish.

    Much better showing than last bottle, this one still going strong as it does into its 24th year. I would drink up, I don't think it improves from here.

  • Definitely decant for at least 90 min - opened up like crazy. Wet forest floor nose with cassis and vanilla. Sweet tobacco, boysenberry, raspberry, brown sugar. Dusted cocoa powder. Medium- acid, tannins melted away. Kind of like if a decadent dessert from a Montana lodge was laser-focused for Parker’s palate.

  • Monday Night Festive Blinds (Hawksmoor Guildhall): Served blind. Lovely earthy nose - old new world cab? Something SA? On the palate - there's a structure there but it's kind of two dimensional - like a kind of pressed card printing or something. No tannin or acid - just the echo of what might have been. Revealed as a 20 year old Washington cab - I can totally get this - a treat to be able to drink this type of wine, but really (a bit like english sparkling wine) it's mostly of interest to locals, and doesn't age terribly well.
