Emeliana Wine Tasting at Gervais & Vine Columbia, SC: They tell me tat 60% Carmenere and 40% Cabernet Sauvignon is the preferred blend in Chile, and I have to think it has some merit. As a side note, how often is it a fact that Cabernet is "not" employed as the structure component in a serious red wine. To me typically, Carmenere's off flavors can be a little over the top, and 40% Cabernet can be a big help. This winery has clearly tamed the overwhelming rustic, black tea, and earthy part of Chilean wine.
