Really fresh and full of fruit when first opened. What a wonderfully interesting wine. The second day it had relaxed a little, smooth and still long but the secondaries had really presented themselves, cedar and truffles with a perfect amount of acidity. Still 2 or so years left in this exceptionnel

Monthly Tuesday group "The Dead Sparrow": Pauillac and St. Julien (By me @ the factory): Dark berries and beautiful oak in the bouquet. On the palate juicy and ripe black berries, vanilla, a slight touch of sweetness, some caramel, beautiful acidity, tannin and a good length. Keeps you longing for the next sip. Beautiful wine still in its early drinking stage. 91+

55% Cabernet Sauvignon, 40% Merlot and 5% Petit Verdot, 13.5% vol.
Starts a bit shy but gets quite intense after an hour in the decanter. Black currant, leather and a suggestion of gamey flavours, good freshness, medium to full bodied, long finish with still some edges. Classic old school Médoc, slightly rustic and unmistakable Chasse Spleen, I love it.
Will slowly reach its peak now, drink it within the next 8 to 12 years, for best result, give it 1 or 2 hours in the decanter. Enjoyed it a lot over two days together with a selection of finest French cheese without any decline on day two.
Tobacco leaf, leather, blackcurrant back in the mix. Excellent chunky yet supple structure. Very slow to open up, needed 3 hours air to start to show, didn’t ever really sing. Suspect this bottle had low level cork taint and was a bit flat. Enough glimmers of a better wine to go 90 on this bottle, and hope for better luck in the tree bark lottery when I open my remaining bottle… no rush on that.
