  Fallow straw color with nearly clear edge in color. Nose of cider apples, biscuit and salinity. On the palate: fine bubbles with citrus, yeast lees and minerality. Long, saline finish of meyer lemon. Was absolute fireworks with pesto.

  An Epic Summer Wine Weekend; 7/1/2022-7/3/2022 (Muskoka, Ontario, Canada): This pours medium straw. The nose is immediately expressive, rich, autolytic, and complex. Aromas are of bread dough, preserved lemon, lightly bruised apple, old oak spice, and a touch of undergrowth. The palate is lovely, round and rich, with dosage that feels around 8 g/l. The acidity isn't crazy high here, but nicely balances the rich profile, seemingly with some degree of malo to soften the texture of the acid. The profile here feels like there has been an extended lees aging, plus some degree of post-disgorgement age. Quite nice all in all. This had me fooled for a pinot driven champagne. Super delicious stuff and a very sharp value.
