Served alongside steamed lobsters with lemon, this molded into every nook and cranny of the meal. It picked up on the lemon to show its freshness, and the inherent saltiness of the lobster gravitated to the bright acidity. Emerging mature toast notes showed more when sipping the wine in its own.

The flavours are dominated by an array of citrus fruits over a chalky mineral base, though with some air it turns more savoury and yeasty, with doughy and biscuit notes emerging around the intense, tart fruit flavours. A zero dosage wine apparently, but it's surprisingly rich on the palate with a faint sensation of sweetness on the back end that's perfectly balanced by the bright acidity.

Very precise, minerally and perhaps even a bit sharp. With food (lobster and butter) it did a fantastic job of cutting through the richness and cleaning everything up.

Terres et Vins de Champagne 'a Portland; 5/17/2013-5/18/2013 (E&R Wine Shop, Portland OR): Mute aroma. The palate is mild, but nice pleasing bubbles emerge with an interesting component of old bubble gum, like those found in a 10 year old pack of Topps baseball cards. Pretty nice and creamy, soft, as its held on the palate. Good dial up, near eruption of minerality at the end. Good soft length.
