  The bubbles have faded a bit to a now perfect carbonation level. Pours a golden straw color; if it weren't for the bubbles, it would look like a viogner. Compared to prior tastings, the acidity and green apple are much more balanced, with the nutty flavors becoming a bit more prominent. This particular bottle had the slightest bit of oxidation, which made it much better overall. Drank over two days (stored overnight with a champagne stopper) with no impact to the carbonation and oxidation.

  Bone dry, crisp, small bubbles, apple, vanilla.

  Not quite as dry as I was expecting, though quite refreshing. Nice straw color with good acid, finish made me think of manzanilla sherry.
  
  Paired well with tapas consisting of manchego and roasted red pepper topped crostini and assorted pickled vegetables.
