  Pairing Champagnes to Black Cats (Calistoga, CA): First time, and most likely the last time I ever get to taste the '00 EMH; A real treat from ~2 hours opened up, but it needed some time to 'stretch' after being in bottle for so many years. The taste was consistent with the 2001 EMH, but certainly was somewhat more mature. It had more of the earthy/secondary tastes and it was not loaded with oak. By the vote of the glass, I think I took 2-3 refills of the 2000 and the 2009 SS, hence my vote regarding the status of the bottle. Dark red/brick, very close to the color of the '01, long nice finish, great match to the dinner's menu. It kept an evolved nose throughout the meal, and remain quiet consistent in its secondary tastes (spices, a bit tabacco), and the floral nose good balance. Wish I could drink more of this. If you happen to have one in your cellar in good storage, it is time to drink it. It is ready, and it is rewarding.
